Those cupcakes look yummy . I love making snickerdoodle cookies . Did you use the vanilla sugar in your recipe ? No, I used regular sugar and vanilla extract. Still delightful. The brown butter frosting is really the highlight I think.

last night, between the shitty weather and my failing faith in humanity, I decided comfort food was in order. I also opted to put up a dinner plate picture on FB for the first time in awhile, to ask how those in my circle that don't enjoy cooking are holding up, and spark a conversation. got some lovely comments, and a warped fat shaming one from my aunt about how there was the "freshman 15" and now we are all looking at a "COVID 19" really? anyway, dinner was tortellini with peas and pancetta. I also tossed in the last of some rotisserie chicken I had, that wasn't enough to freeze as a single serving like I'd done with the rest of the meat. I've got one more portion as leftovers, even though this doesn't reheat nearly as well as fresh cooked.

I discovered that DH had bought some packets of mix for egg drop soup. I made one. It was actually pretty tasty . . . but not filling. So I finished off a carton of ice cream. That makes it sound like I ate the whole carton, doesn't it? It was actually a smallish portion. Getting rid of the carton, though, makes some room in the freezer so double bonus.

I didn't have the hotdog and potato salad last night. Dogs were frozen...So, instead I had leftover beans and ham soup and a toasted hot dog bun sprinkled with part cheese and garlic powder.
Tonight will be hotdog and potato salad.

I had a "happy hour" via zoom with some music friends tonight, so salty frozen crap seemed like a good idea. 😉 I found a box of chicken egg rolls in the back of the freezer earlier this week, just past its "best by" date. tonight, it is dinner. I'll call that one free, I have no idea how long it has been in the freezer or even where it came from. lol...

Changes to the Wednesday plan. I ordered a family take out pack from Texas Roadhouse. $50 with tip. We have 2 steaks, some sides and rolls left.
I'm still battling this sinus infection. I worked until 6 and I was just tired. My DH suggested it. Pork roast will be Thursday's meal.

Cooked up jambalaya for our big meal today and have enough left over for lunch tomorrow.
Made coleslaw with leftover cabbage; I'll probably pair it some frozen fish filets for dinner tomorrow.

I sauteed Argentinian wild shrimp in olive oil, garlic, cream, white wine, dill, parsley and a sweet and hot mustard from Egypt. Served it over saffron Basmati rice with steamed asparagus. Just because the plague is upon us, darlings, is no reason to eat like Russian peasants.

I found out a seafood restaurant is selling their stuff. My grocery budget is about to be blown to pieces with scallops and sea bass.
I did the pork roast tonight.
Change for Friday, DH will have salmon and I'll have the leftover piece of steak. We have sides left from takeout Wednesday.

tonight is going to be arroz con pollo with roasted broccoli as a side. there are 3 chicken thighs in the package, so that will be 2 more meals. I'll roast something else later for the leftovers, what's left of the broccoli is enough for one portion.
I'm planning out my next week, based on what proteins I've found in the basement freezer. I do need to go to the store at some point in the next day or so for produce. going to try and figure out when the lightest traffic will be.

Last night was mini-meet loaf (from the freezer) and baked potato with butter and sour cream. I think tonight will be spaghetti with marinara sauce and Parm cheese. Will add 3 mini-meat balls....still trying to get rid of those frozen things.....
Chiv, I should plan like you do. I need to keep eating what is in the freezer.....actually, I need to plan out breakfast and lunch and also dinner. Would certainly would make my life a little easier.

I am having just a baked potato for supper. I made a copycat version of Olive Garden pasta fagioli last night, and it made a ton of servings. That is what I had for lunch; the rest is in the freezer. I also need to keep eating what is in the freezer, Blonde Granny. I made a grocery list for Tuesday, and the only food products on it are bread and sausage. There are a couple of spices that I needed to make something. The rest are non-grocery items so I will go to WM at 6 am on Tuesday for their senior hours. "I don't wanna get up at 5 am," she whined.

I have been feeling anemic lately and grabbed frozen shaved steak on a grocery run. it needed to be cooked today, but the thought of making a cheesesteak made my stomach turn. so I poked around online and found something similar that wasn't just a pile of beef and cheese. I made a half batch, had a big bowl, and there's still three portions leftover. I didn't use the listed dairy, bc 🤢 for sour cream and I wanted to use up what I had. I will totally do this again with chicken. my only major complaint was that I wouldn't have left the mushrooms in the pot while the pasta cooked. the peppers and onions were okay, but the mushrooms would have been better without swimming. www.thechunkychef.com/one-pot-philly-cheesesteak-pasta/

SS, a friend of mine went to Walmart last Mon@ 6AM with 6 other ladies...all said NEVER again. I
I went to the Neighborhood Market last Monday @ 9AM to pick up 2 RX, hardly any one was in the store, it was mostly restocked with a few exceptions. Spent $123, got what I wanted and needed. Something to think about.

There is plenty to eat in the freezers but at least two meals next week will be takeout from the Olive Garden's current BOGO entrée offer. I have a couple of small gift cards to use up.
DH and I did sit down and plan out meals for the next 7 days to use some of the food in the freezers. Our grocery list is made but the actual run won't be until Tuesday when Safeway has their senior hours (7-9 am); mostly fresh produce, dairy and a couple of canned items.

I didn't get the cobbler made. But that French bread I made from a roll in the dairy counter made the house smell so good. We ate all of it.
We didn't eat all the steak, hubs said slice it thin and use it in fajitas tomorrow night. I just may.

Chicken burritos for dinner tonight, made from 3 chicken tenderloins. I am doing pretty good at guessing how much we actually eat, so we don't waste any food. Made potato soup last night and froze half. No idea what I am having tomorrow.
