Back from being out with pneumonia. Last night: Crock Pot pork ribs, fried turnips. $5 for 2 3 servings Tonight: Chicken tenders, spaghetti squash. $7 for at least 4 servings Wed: Catfish, shrimp, side veggie. $9 for 2 Thurs: Leftover chicken tenders and spaghetti squash with Alfredo sauce. $2 for the sauce. Fri: Graduation party. $0.00 Sat and Sun: Not sure yet

hope you're feeling better, Iggy!
tonight, I made a Caesar salad from most of a romaine heart and some shaved deli turkey. I chopped a full romaine heart, setting aside the rest for a side salad with other leftovers for tomorrow's lunch. after the salad, while I was waiting for other stuff to cook for the pups, I had a slice of cheesecake with blueberries. I've also been nursing the same (I will admit, large) glass of wine since I started chopping lettuce. stick a fork in me, I'm done.

I made the tuna casserole with broccoli I've been talking about for 2 weeks. I love it! $3 for the broccoli, $2 for the cream cheese, $0.50 for the mayo, $0.50 for the cheddar cheese, $9 for the Tuna so $3 to serve 3.
I have to keep reminding myself to figure in the exchange when I see all of your prices. Otherwise I get depressed!

Just a shout out for the cook once eat twice process. Last night I tossed a large, cubed chicken breast in butter then crushed pork rinds and coconut flour (we're out of almond flour) and baked them which we ate as chicken tenders. While they were baking, a cubed up other chicken breast and was cooking it in a skillet. After cooking, I coated it in Alfredo sauce and extra seasonings which I'll have tomorrow. DH will have other leftovers.
During this time, a spaghetti squash I'd cut in half and seeded was microwaving for 20 minutes. Ate some with a bit of the Alfredo last night, and will have the rest tomorrow underneath the chicken Alfredo sauce.

Spaghetti squash and sauce tonight. Totally keto and delicious! ISO and GW will have the sauce with spaghetti. I think we will get 2 meals out of it. My original plan was pork roast tomorrow. Maybe I'll have ISO make that on Friday with asparagus and salad. That will be at least 2 meals as well. I usually try to cook once, eat twice. Not that I'm lazy, it's just more efficient. ETA - the sauce was $5 for the hamburger, $1 for the red pepper, $0.50 for the onion and $3 for the Marinara Sauce. $9.50. The Spaghetti Squash was $4 and the Spaghetti will be about $0.75. So $14.25 for 2 meals, I can live with that.

Oh, man! I love fresh berries! Lately I've been serving black and blueberries as a brunch side (biscuits and gravy one day, lc blueberry dark chocolate pancakes another) and tossed on top of lunch salads. I've also heard blackberries go well with pork...?
ETA: Or as a light dinner, what about putting them on top of cottage cheese with a few nuts?

They're not quite fresh anymore. I bought them over a week ago and forgot about them. I shoved some in my face before I left for the gym, but I have more to use. None of the dogs like them, so it's all me.

sis and I are both crashing at our parents' house tonight, post-wake. she and I ended up at the Brazilian place in town, it's great - pay by weight. I got out of there for $9.50, including a bottle of water.

I make fruit compote with older fruit. Cut everything up, toss in berries, add some water to cover, a bit of sugar, a squeeze of lemon, a touch of vanilla, and simmer.

no idea what I want for dinner. I know there's still some pork in the fridge, and a package of uncooked BSCB. lots of veggies, too. maybe I'll saute some chicken, roast some veggies, and toss with pasta. IIRC, there's half a can of chicken broth left over in a container in the fridge as well. guess that answers things.

Thursday night we finished off the pan of enchiladas.
Friday night I'm doing a surf and turf. There was a rib eye left in the freezer from last summer and I bought shrimp last week. I'll serve with baked sweet potatoes and salad. I think I'm going to run to a local bakery and get a small dessert. I'd say $10-15? I have no idea what that 3 pack of rib eyes originally cost last summer. My DH's birthday is Monday so I wanted to do something nice tonight.
Saturday night is dinner out for for the in laws 50th anniversary. FIL will pay. It's their party but he would never let anyone pay.
Sunday I plan to take DH somewhere for his birthday. I would say $100 is probably a good estimate here.
Monday we are having pizza and cake with DH's family. I'm going to say $60-70 for the pizza. I'll bake the cake sunday.

Tonight is the pork shoulder roast WITH THE RIND!!! Big treat for me with my keto. We are having asparagus and salad with that. $7 for the pork roast, the asparagus was free and $3 for the salad. This will be at least 2 meals for 3 of us so $1.67 per serving. That's the best I've done in a while.

My mushrooms were starting to get dated. So I made hamburger steaks with mushrooms and gravy, steamed carrots, broccoli, and cauliflower.
Also had biscuits. The biscuits come frozen and pop in the oven. I have tried and tried to make biscuits and can't so these are pretty good.
Hubs and I shared the last of the ice cream.
DD has done well not drinking sodas the last 2 days. She has had one with dinner, each evening, no gas, no belching. Going to be so hard for her. She said she felt better. I pretty much figured that was it, we shall see. Now the hard part, keeping her from drinking a bunch, but she does very good voluntarily not eating seeds, nuts, or popcorn, so maybe she will this too.
