I ended up baking a small batch of red velvet cupcakes for dessert. We had leftover cream cheese from making the enchiladas. So they got frosted and that was used up. It made 4 cupcakes. I used the recipe from Dessert for Two.
Steaks and shrimp were topped with a parmesan cream basil sauce. Supposedly a copy of Applebees. Anyway it used up the hunk of Parmesan Reggiano in the fridge.
More expensive than some dinners but it was a celebration one. And certainly cheaper than going out.

trying to rally a little tonight so I'm not up at 4am tomorrow, but not awake enough to go out to catch some friends playing one of the bars a few miles away. didn't want to cook, didn't want leftovers from last night's chicken veggie pasta. I roasted a few cut up tiny potatoes and poured the contents of a Willow Tree chicken pot pie over them. top crust only, that was for dipping. WT is a local, pretty basic frozen pot pie. there's usually one somewhere in a freezer here. cost: $2 WT pot pie ? potatoes. 3lb bag was $2.50, I used four potatoes.

trying to clean out the fridge before I leave mid-week. tonight I'm using up a package of bone-in chicken thighs with hunters chicken (cacciatore). I'll boil some pasta to go with it.
costs $1.94 - four chicken thighs $1 green bell pepper $1 cremini mushrooms onion, garlic, pasta, canned diced tomatoes and seasonings were all already here.

I made pancakes. DH is at a fire department fund raiser, so there will probably be enough left for breakfast, too. $2? I had all the ingredients in the pantry.

Best pie ever! If you like chopped fresh clams on a white pizza and you find yourself in New Haven, Ct., check out Frank Pepe Pizzeria. Most restaurant guides list Frank Pepe Pizzeria and their pizzas as the best pizza in the country. I used to eat there and it is tops. I miss New Haven pizza restaurants. The best.

Last night was meat loaf, tater tots, salad and veggies (frozen cauliflower, carrots, broccoli)
All out of the freezer. Guess about $6.00. Leftovers for lunch on Monday. Tonight: Pork Tenderloin, salad, mashed potatoes, corn. Est cost, $8.00. Yes, will be leftovers. (lunch Tues and possibly Weds)
Monday: Chili and Cornbread. Est $8.00. Will freeze leftovers. Tuesday: Chicken with Pasta. Salad. Est: $6.00 ETA, since I'm working on freezer stuff: Weds: Corned Beef, ($5.98) Potatoes and carrots. Thurs: Fish and chips. (DH) $5.80 for the fish. Me, sandwich. Fri: Either burgers or pizza.

My plans for this week. Today- Chicken Tikka Masala in crockpot Monday-Fend for yourself day because I am going to see my grand baby. Tuesday-Garlic Steak and cheesy potato packets. Goose will get a salmon filet because he doesn't eat red meat. Wednesday-Pork chops with mushroom gravy, mashed potatoes, and a steamed veggie (not sure what yet). Thursday-Pressure cooker red beans and rice Friday- Spicy Sausage broccoli pasta

I picked up a lot of chicken on sale last week, so tonight it's oven-baked BBQ chicken breasts with leftover sides - we have one baked potato, a little mac and cheese, salad and mixed steamed veggies.

Last night I made parmesan chicken fingers and salad, we had leftovers for supper tonight. 2 Chicken breast $4, bag of lettuce $2, tomato $1.50, cucumber $2, condiments about $1.50, so $11 for 2 meals.

I don't remember why I bought heavy cream recently, but there was some in the fridge. grated some parm off a wedge, a handful each of diced pancetta and frozen peas, the end of a bag of cheese tortellini, and a little fresh parsley chopped over the top. comfort food for sure.

I always have heavy cream in the fridge. I use it in a lot of cooking. Me too, and I also use it a lot in my coffee. cream is too sweet for me in hot coffee. well, unless there's a shot of Jameson in it on a Sunday morning with the newspaper. in that case, I want almond milk whipped cream. otherwise, just a little milk is fine for me. but anyway lol... and ha, I went back through recent foodie posts to see what I may have bought the cream for - it was your mushroom cream sauce recipe. definitely need to do that again soon.

In the midwest it's all brought in frozen. Living near the ocean would be heavenly. I was with my dad one time around the Narragansett/Galilee beach area of Rhode Island. In the shallow beach waters, my dad and I felt around the wet sand with our toes feeling for clams which then went into a delicious pot of fresh clam chowder.
