I don't know what to make for dinner this week. I need something healthy and not boring. I put my Home Chef on pause because I realized the calories were pretty high on the meals. I used it because I HATE meal planning. It is like torture for me. Any recommendations for healthy, cheap, and not boring meals? Budget bytes has a lot of cheap healthy recipes and I think a lot of people here can vouch for that site.

Wings and cole slaw tonight. $7 for wings, $2 for bag of cabbage, I'll allow a $1 for mayo and buffalo sauce. I'm seeing a trend here. My average price per dinner is about $10. That's Cdn so about $7.50 USD. That feeds 3 or 4 of us depending on who's home.

football snacks for brunch, so dinner will be healthier for me at least. yesterday I prepped mixed salad greens for a few days worth of easy salads. I can cut up a grilled chicken piece and some extra veggies easy peasy. $1 each for a romaine heart and iceberg head, $1.25 for half a head of radicchio, 50 cents(?) for a handful of baby spinach. Something to consider with fresh veggies (and other foods) right now: You May Be at Higher Risk of Eating Contaminated Food During the Government Shutdownthat's fair, but my produce is mostly coming from local farms anyway. I doubt the level of federal inspection that hits wholesale and the like was ever the case before the shut down.

Thursday night was spaghetti and home made meatballs. Friday night was home made pizza. We get the dough from an Italian deli in Dallas. Last night was tortellini with peas and pancetta in an Alfredo sauce. Tonight will be penne pasta with crawfish in a vodka sauce. Lots of past this week, but I needed to use up things out of the freezer. I ❤ pasta with peas and pancetta. yum.

So my meal plan for the week;
Monday - shrimp alfredo and spaghetti squash. This is going to be an expensive meal for me because of the spaghetti squash, one was $8!!!! $5 for shrimp, $3 for cream cheese, $0.50 for whipping cream. So $17 for 3 of us.
Tuesday - Pork stirfry, Pork Shoulder Chop $5, Cabbage $2, Onion $0.50, Yellow pepper $1, Red pepper $1 = $9.50 for 3 of us
Wednesday - Tuna casserole using broccoli - Tuna - $3, Cream cheese $3, mayo $1, broccoli $3 = $10 for 2 of us
Thursday - Chicken breasts and veggies - 2 chicken breasts $4, frozen veggies - $1, mayo $1, Parmesan cheese $1 = $7 for 2 of us
Friday is ISO's problem, he will probably do pork chops again.

It lets you download recipes from websites or add your own and helps with making a grocery list and keeping track of pantry items. I’ve downloaded a lot of recipes from Budget Bytes and so far have liked them all.

so much for the salad tonight lol... pizzas went in the oven late because we were still stuffed from appetizers. the dough overproofed a bit, but not past salvageable. I'll totally do this again, just timing things better. red/yellow pepper and onion, and a cheese pie.

I bought a half dozen still-hot sesame bagels and a container of chopped liver with caramelized onions. That will be supper, although I won't eat all six.

I get a lot of recipes from these sites. I try to eat as healthy as possible and I'm always on a budget.

In true SS style, I used some French's fried onions leftover from Christmas by crushing them in the food processor. I realized I neglected to post the cost of this. I'll call it approximately $3.25 for 4 servings.

Budget bytes has a lot of cheap healthy recipes and I think a lot of people here can vouch for that site. Thanks! I am checking it out now. I already found a recipe for chicken tikka masala that I want to try. I like her adobo chicken, but I use the sauce/marinade on a pork roast in the crock pot. I do recommend turning it over halfway through cooking so both side absorb that yummy yummy juice.

Tonight will be Pioneer Woman beef and bean burritos. Leftovers freeze well. Estimated costs of $10. How many wind up in the freezer depends on how many DH eats. I've never made this for him.
And actually he's cooking since he is working from home today.

This week: ~Tonight: There is a LC lasagna in the Crock Pot for DH as I have a class tonight. Italian sausage from the half pig, frozen spinach on sale last month, 2 eggs, parmesan bought in a value Sam's Club size, mozzarella cheese and spices. Total cost $5.37 for at least 4 servings. ~Tues: Rotisserie chicken since I'm going grocery shopping. About $6
~Wed: Blue cheese burgers, side veggie. $4.83 Add a few bucks if I find portobello mushrooms at the store tomorrow to use as buns.
~Thurs: Tempura fried cod (family value size) and shrimp, side veggie. Approx $11 for 2.
~Fri: Take out from? I'll let DH buy since I bought last Friday.
~Sat: LC sushi to use up nori sheets in the pantry if they are still good. $7.5 for half a can of crab, $1 avocado, $1 cucumber = $9.5 for 2 servings
~Sun: Niece2's BD party, so IDK

Blueberry pancakes and bacon. I’ll save 2 slices of bacon for clam chowder later this week. 75 cents for the blueberries, $1 for the flour, etc. I can’t remember how much the bacon was, it’s from the freezer. Tomorrow I need to use up fresh broccoli, so broccoli cheese soup. I think. Or potato soup with broccoli and cheese. Have to see how the potatoes look.

Tonight we are having baked chicken breast coated with Italian breadcrumbs. The chicken breast were $6.18. We are having steamed green beans $1.89, and garlic rosemary potatoes. The potatoes were free when you buy the chicken breast with a coupon deal. So...8.07 for a meal that will feed 4 people. I am not sure how much the breadcrumbs were. They were in my pantry.

I was craving black beans and vegetables tonight, so I made myself a rice bowl. stole a little white rice from the pot I cooked for the pups, cooked a can of beans and nuked a black peppercorn chicken piece. diced that, tossed with a little cheese and guac leftover from yesterday's snacks. made "tacos" with a torn up flour tortilla.
cost - minimal. everything has been here awhile, can't remember what I paid for the BSCB. marinade packet was $1 for 2lbs of meat, I think the beans were $.59

I wasn’t in the mood to stand over the griddle tonight, so I improvised. I have a recipe for a puffy apple oven pancake which is really easy to make and tastes delicious. So I decided to substitute blueberries for the apple. It tasted ok, but looked kinda gross (ok, very gross. The blueberries kept it from puffing). DD ate bacon and spaghetti. DH hasn’t eaten anything yet. It tasted ok, I’ll probably eat the rest for breakfast this week.

Tonight we had a big chef salad, dressed with olive oil, garlic salt, and rice vinegar, red top. That dressing MIL used and her MIL showed her, its really good and low calorie.

French bread pizza from the freezer that I made last year with sandwich buns that were left over from one of the Lenten fish frys DH’s fire department does. Since they’re 10 or 11 months old, I’m gonna say $1. And grapes for $1. I eat like a kid on Tuesdays, since I’m the only one home.
