Friday night we went out for hibachi with my sister in law's family. I had my leftovers for lunch today.
Saturday night I made pulled pork. The instant pot makes such awesome pulled pork. I will not buy the Boston butt at Aldi again. It was one of the few places I could find a boneless one. I hate paying for a bone and having to cut around it. I had to cut so much fat off the roast that I will not buy again. It still yielded a good amount. Roast was $10.50.
A nephew stopped by after work and had 3 sandwiches. Feeding teenage boys can be an expensive task. DH and I had a sandwich each and there's plenty left.
I'm thinking spaghetti and meatballs for Sunday. If we do that we will have stuck to our goal of one meal out per week.
Next weekend there will be more as we'll be away for the weekend.

Rigatoni casserole -- I have one box left from Thanksgiving, so I will mix some red pasta sauce with pesto and a little cream and bake it with cheese. DH will have that with chicken. I have a mix of leftovers from the last few days -- shrimp, chicken and mac and cheese. I'll eat the rigatoni for lunch during the week.

I came home from unloading yard sale items and planned to fry off the BSCB as sandwich sized cutlets. I asked roommate if he wanted me to set some aside (he does baked chicken parm) and he said he thought we could do marsala tonight. uh, sure, yes please! you do everything for that. I'm in. I still fried up some cutlets for me to cut up with salads this week.
so dinner tonight will be chicken marsala, most likely with roasted red potatoes. I'll have a salad, I only saved 3 half chicken cutlets from frying.

I made a sweet and sour meatball dish from Home Chef. It was eh'. Not something I would make again without some major tweaking. It was a meal for 2 that I stretched to feed 3 of us. I didn't change the ingredients, just made everyone's portions smaller. We all could use smaller portions right now.

Leftovers tonight and tomorrow apparently. Not sure I want to eat pulled pork 3 nights in a row. I might get something on the way home Monday night. I have an appointment after work so I'll be getting home late.

After Andi brought it up, I really wanted tacos but don’t have the ingredients. It’s close to -20 degrees right now and there’s no way I’m going to the store tonight. So I’ll have sweet & sour chicken as planned. Taco fixings are going on the grocery list though.

I didn't cook tonight, we had a very good lunch at Olive Garden. Hubs ate leftover veggy soup for dinner. DD and I haven't really eaten anything. I'm thinking mango, bought 2 and heating her some soup.

I will make one of the Home Chef meals again tonight. My DIL and grandson came late last night, so I will have to add some food to the meal to make it enough for all of us. It is a chicken meal. My daughter prefers fish, so I will probably cook some fish and then just add more broccoli to the side dish.

I got my new cookbooks, some wonderful recipes in them.
But cooking for hubs is a problem.
He doesn't like oriental, will eat some of it.
Doesn't like
rice, ate to much when working overseas chicken lamb fish, will eat it if it doesn't taste fish, what is that? good fresh fish don't taste fishy asparagus lima beans broccoli squash egg dishes, says they upset his stomach couscous tofu grits chickpeas clams doesn't like dishes that contain wine there's more, just can't think of all them right now DD doesn't like cauliflower but she will eat more then him, so that's good

Tonight is wings and salad. $12 for 3 of us. I especially like comparing to restaurant prices, the wings and salad would easily be $12 each at a restaurant.

So I'll break that down a little more. $7 for the wings, and I allowed $5 for the salad. The salad was leftover from yesterday. It was $12 for the lettuce, tomato, cucumber, 4 eggs, cheese, leftover chicken breast and 1/4lb of bacon to make the original salad and we had less than half of it left.

Mine is a little harder to price out since it is a food kit. I figured it out that the average cost for this week is $5.52 per serving. A little high for some, but so much cheaper than our normal eating out. I got 3 meals that were supposed to feed 2 people. I have been serving smaller portions to feed 3 to 4 people. Tonights meal would actually be about $7.19 per person since I added some flounder filets to the meal.

I have problems costing out things when it involves beef. I didn't count how many pounds of ground beef my dad brought me nor do I remember how much money I gave him. I think $200? He wouldn't take any money for the pork. I know we paid $65 for the pig but I'm clueless on processing costs or how much total meat we got.
Tonight I'm having the rest of the bag of onion rings and pulled pork. I guessing $4? DH ate before I got home.
I paid $10.50 for the pork roast. I'll say a $1 worth of seasoning in the cooking process. Buns are $3 for an 8 pack for what we like. We've gotten at least 3 meals out of it.

I try to include pricing where I can. I bulk shop when things are on sale, and don't always know later what I might have spent on X. if something has been frozen for 6+ months, I call it clear bc it's use or pitch territory.
tonight I used up leftovers and old produce. I fried chicken cutlets yesterday, from a package I found in the back of the fridge with a sell by date of Saturday. I also came home from the grocery store in the morning with romaine hearts, only to find another package of the same in the fridge. guess I didn't eat as much salad around NYE. 😇
dinner tonight was a chicken parm sandwich on ciabatta, with baby spinach. the rest of the plate was what was still okay of the last romaine heart from the old package, fully dressed as a Caesar salad.

Maple glazed pork tenderloin, steamed green beans, red cabbage, green cabbage and kale sautéed in bacon grease, and homemade mashed potatoes.
Yup, the college kiddos are still home and eating well. 😏
Cost? The pork had been on sale when I bought and froze it about a month ago. The mashed potatoes were leftover from Christmas (frozen since then), so I am guesstimating $35? I foolishly thought 3 pounds of pork tenderloin would give me leftovers. So, that $36 is for 4 servings in MY house but would serve 6-8 in any other house. 😖
I made a full pan of homemade lasagna on New Year’s Day. They devoured the entire pan by lunch the next day. School can’t start soon enough.
