Something with pork chops. I don't know what yet, but that's what I took out of the freezer this morning. I made these last night for tonight. It was the first time for this recipe, so I haven't a review yet for them. But, they sure smelled good. Disclaimer: I made mine w/ almond flour in lieu of the breadcrumbs and flour. I was down for 5 days with a flu virus, so I'm playing catch up. Apparently it's going around the country, according to my online friends. Believe me, you do NOT want to catch it! Stock up on your healthy white blood cells now. Last week's new-to-us Thai chicken recipe was good. I liked it because the chicken was tender, despite the fact I cooked it for longer than suggested. Paleo Slow Cooker Chicken Pad Thai with Veggie NoodlesMonday: I made a large omelet and DH and I split it. Tuesday: DH ordered pizza online since I was in no shape to cook, and he didn't feel like making dinner after working all day. Last night: I made brie stuffed burgers and fried okra. DH bought brie last week so I used it in the two recipes. What a problem to have. Tonight: As mentioned in my above post, I made pork chops last night for tonight. It's my first day back after missing three business days, and I'm still congested, so I know I'll be fried this evening. Tomorrow night and this weekend: Not sure yet. Happy Super Bowl, everyone. Happy Super Bowl, everyone. Go Falcons! Anyone have any good Superbowl snack ideas? not sure if I should help, you're rooting for the wrong team. I make something like these - allrecipes.com/recipe/233603/bacon-wrapped-jalapeno-poppers/except I use way more and varied shredded cheese than called for, half a strip of bacon per pepper half, and a ton of what's basically chili seasonings in the cheese mixture. sometimes I'll mince a breakfast sausage link and mix it in as well.

Happy Super Bowl, everyone. Go Falcons! Anyone have any good Superbowl snack ideas? I try to stick with low carb and like to make Super Chili Bowl. DH likes it so much HE started to make it a few years ago. I also make bacon wrapped little smokies, pork rind nachos (regular nacho toppings sans beans, and use the pork rinds in lieu of chips, or you could make your own tortilla chips from low carb tortillas), and spinach artichoke dip with veggies.

I made mini loaded potato skins a few weeks ago. It was a Kraft recipe. They were a hit. I should have made a double batch. They disappeared quick.

No she's not. I am so friggin' sick of the Patriots. I want to watch the news, not Tom Brady!!!!!!! Good God almighty. MAKE THEM GO AWAY!!!!!!!!!!!!!!! And that is why I will NOT be at my in-laws on Sunday.
I usually buy a couple of subs and cut them into smaller pieces. Not for football but as a snack idea anyway.

I need some new ideas too. I make the same few things over and over and over again. I've done some new stuff lately but even it is getting old. lol what's getting boring, and what's off limits for options? No seafood, I have two of us with a shellfish allergy. And no expensive meat/ingredients. I have a good benefits/crap actual pay kind of job. I can't think of anything else to do with burger, pork and chicken. I'm sure there's better ideas out there but you really get bogged down looking. At least I do.

I can't help much for burger/beef, since I don't eat that. but I can offer up a few for the other two proteins that are a bit outside the box. I think your family does okay with spicy, right? pork: Mapo Ragu - this had a decent kick without the Sichuan peppercorns. this is a nice reminder that I need to find some so I can make this again. Lazy Pork Hot Pot - I usually add noodles to this, for a little more bulk you can also buy thick cut pork chops and stuff them with a mixture of sauteed garlicky greens with a little shredded cheese. brown the outside for a few minutes each side, then bake for 20 min (I think? you can look up cooking times) to finish the cooking. chicken: Dak bulgogi - Korean bbq chicken. this one's actually pretty damn awesome, I hope you try it. hunter's chicken - this works for light and dark, just make sure it's bone-in. knockoff PF Chang's lettuce wraps

Thanks for the ideas! I looked at the Dak bulgogi real quick, it looks a lot like the Adobo chicken recipe on Budget Bytes (I use it on a pork roast), so I'm sure we'll look at it. Time to go home so I'll read the rest this weekend.

ooh, one more thing, CL - the site for the dak bulgogi is a blog by a Korean woman. there's a ton of recipes on there, I have yet to find one that I don't love. you can definitely find some new ideas for beef there.

Tonight was a bastardized honey mustard pork chop recipe. Good news is, I didn't make the stuffing with the grape ginger-ale. (Don't ask.) Pork chops and stuffing were good. Artichoke hearts from a can, not so much. At least I know what to do next time.😛

We went out for dinner to a barbeque joint, was so good. Drove to the city, was going to go shopping, but DD had an accident. She has been ill and I imagine that's what caused her problem, first time in a long time.
Still it was nice for me not to have to cook again, last night was pizza.

I had a package of flavored rice in the pantry and some frozen meat balls, so cooked that up for dinner. Still trying to empty the freezer in the garage and my fridge looks like Old Mother Hubbard. Enough of the rice stuff for lunch today and dinner tonight.
And no, I won't be watching the game...I'm with Empress! I just don't care.

dinner last night was some rotisserie chicken with a very tasty asparagus and mushroom risotto. I had picked up the chicken to have on hand for enchiladas tonight for the game.

Dinner tonight: a smorgasbord of Super Bowl snacks. I'm attempting some wings (never made them before) and bacon-wrapped cheese-stuffed jalapenos (thanks for the idea Chiver!). My parents are coming over and bringing some kind of sandwiches, veggies, and those gross little smoky thingies. (DH and the kids love those. )

hope you like 'em, megaptera! they are always a hit when I bring them anywhere dinner tonight will also be a smorgasbord of football snacks, but a smaller spread as it's just 2 of us. guacamole is chilling in the fridge, have everything chopped up for the tomatillo sauce for the enchiladas (just waiting til the roommate wakes up from a nap to turn the blender on) and I'm going to throw in a package of Uno's pizza skins to bake soon. there's also plenty of chips and salsa, and I may put on some yellow rice to go with the enchiladas. not sure yet.

given that I just got around to finally having breakfast, this is probably it for the day. I am trying to use up stuff I know that my mom won't eat while she's here next week - today specifically was some of the 3 lbs of plum tomatoes (I bought more yesterday, thinking I didn't have any, but I did). one of my favorite ways to use up tomatoes is bruschetta pasta. obviously it's better in the summer when they are in season, but you work with what you got. so I picked up some chicken thighs to grill, marinated in a black peppercorn marinade. mom likes the marinade, so whatever I don't get to before I leave won't go to waste. on my way home, I decided to stop at the fish market to grab either some salmon or swordfish to use with that same marinade. I walked in, and damn.....both looked amazing. so I left with a pound of salmon and half of swordfish. I portioned and prepped marinated fish for the freezer, saving a small portion of each fish to grill after the chicken was all done. I also took some of the bites of chicken, those little pieces of thigh meat that tend to fall off when stuff sticks to the grill. may I say, this was an excellent idea. costs (I know.....but I've been freezer diving and will be again when I get back from vacation) $11 1lb salmon, had a few bites and there are 4 more portions $9 1/2lb swordfish, had a few bites and there are 2 more portions $5 chicken thighs $3 shredded parmesan cheese, this container will last a long time $1 fresh basil pasta, garlic, tomatoes, oil, and the marinade were already here for who knows how long. I have more tomatoes to use up, and will likely do this again with some of that chicken. I leave for vacation on Thursday.

I had some leftover chicken, some green peppers that have seen better days, a couple of senior tomatoes, so I made.....something.
I sautéed onions, garlic, chopped peppers, diced tomatoes, some corn niblets. Added a packet of fajita seasoning, cayenne pepper, some shredded cheese and a lot of cilantro.
Served it in flour tortillas with some sliced avocado.
All I had to buy were the tortillas on sale @1.49 and the seasoning @$0.99
The rest of the stuff I had on hand and had to be used up.
Turned out really good!

Well I gained 5 lbs, and dinner is my downfall. I made myself oatmeal with blueberries, walnuts, and cinnamon. It was really good.
