Rounding out the week: Wednesday I'm trying a new recipe. It's meatless and DH will survive, he just doesn't know it yet : 1.67 spinach 0.80 shredded mozz 4.10 lc tortillas 0.05 spices 0.00 Budget Bytes not refried beans for DH Total $6.62 for 7 enchiladas. Wow. Much cheaper without meat! Thursday is fish night: 1.50 fish-sale, ecoupon 4.50 shrimp-loyalty savings 1.00 fried okra-sale 0.40 spices and oil Total $7.40 Still don't know what we're having Saturday.

I have been working on clearing out the freezer. So it has been leftovers and I believe that tonight will will be the rest of the pork and veggie egg rolls.

those enchiladas sound tasty, Iggy!
dinner tonight will be another leftovers meal. I have a bowl of chicken corn chowder at the office that I had brought yesterday and didn't end up eating, and I'll be bringing some leftover pizza from a couple days ago. whichever I don't eat tonight, I'll have tomorrow night. last night I ended up buying a calzone bc I didn't have another option besides the chowder and I knew I was hungrier than that.

OMG! The clam sauce turned out fantastic! I added a couple of chopped anchovies and some finely chopped preserved lemon peel.

dinner tonight turned into 5-day old, cold sports bar pizza, inhaled on my drive home at 11pm. I hadn't eaten since a kale Caesar salad around noon. wait, and a snack bag of Cheetos in the afternoon some time.
love it when shit breaks late on a Friday afternoon that could impact processing tomorrow. I think tonight's issue might be enough to remove the Teflon coating from the single source of my annoyance at work most days.

DH has requested roast chicken for dinner tonight. I'll round it out with roasted butternut squash, steamed broccoli, salads with tons of veggies, and, for him, his beloved jasmine rice (I'll have brown rice).
Cost? $20? But, we'll get several meals out of the chicken and there will be leftovers of everything but the broccoli and salad.

I'm going to bring the leftovers from brunch yesterday, but idk if I'll have those or something else. it's some cheesy tater tots, a couple strips of bacon, and a veggie egg scramble all piled into one container. I know I have a couple cans of soup in my desk drawer, but I'm having a can of that same soup right now for lunch. so we'll see.

For hubby fried potatoes with bell pepper, and a couple of small pork cutlets. DD and I had broccoli cheese soup.
Last night chili, it was really good added corn and black beans instead of red, also good.
Then baked a yellow cake with buttercream icing. Didn't last long.

My old small pressure cooker died, wasn't worth trying to get the new pieces I bought an electric one and I really like it so far.

I finally got around to having baked asparagus and fish with brown rice and salsa as dinner last night.
I have enough rice for another meal and think I am going to do a stir fry of some kind to help empty out the freezer and fridge tonight.

I have a small bag of chips that was my extra from last night's bread bowl of soup (who needs chips or more bread with a bread bowl....?) and I picked up some cranberry walnut chicken salad from the local market this morning. will make a sandwich with a ciabatta roll and some greens that I already had. I think I still have an apple at my desk, too.

I roasted a bell pepper and made quesadillas with roasted pepper and black beans. Total cost of $2 maybe. Pepper was $1, beans are $0.69/can and the tortilla was left from making burritos.

Tonight hubby had left over veggie soup. I put a whole chicken with 1 3/4's cups of water, salt, and pepper in the new pressure cooker, 35 minutes later chicken done and enough broth for rice. So I had sort of baked chicken. Then I made paella, put broth back in pan with chicken I picked off the bones and rice, cooked for about 12 minutes. Exhausted then added cooked shrimp with more pepper for paella. Will have it for tomorrow night, though hubby will likely have a steak and sautéed vegetables.
DD had a molar pulled so first thing she had was tomato soup, needs to be soft foods for a couple of days. She went to the oral surgeon today, is doing well so far.
I found Krogers has started selling some less then perfect fruits and veggies. They are prepacked. I got 5 pears and a kiwi for $.99, a package with 3 bell peppers, all these are $.99. Then one with 2 poblanos, a red pepper and 2 zucchinis. There were packages of potatoes with quite a few in them and also onions, ladies were hitting that table pretty hard. Looks like a new add at the store.
Some company must have started selling blemished fruits and veggies I could care, they are still good. Hope they keep it up.

It's amazing what we forget when no longer desperately broke. We didn't have any tarter sauce for last night's fish fillets, then I remembered I used to make my own! Mayo, lemon juice, chopped pickle, onion and a bit of parsley is my version. DH said he liked it even better than the bottled stuff. There are chicken breasts, enchilada sauce, broth from the freezer, and spices in the Crock Pot right now for tonight. I'll shred them and serve on low carb tortillas w/ Budget Bytes not refried beans for DH. I've been working on using up freezer leftovers. Next week I'll use the tomatoes from last year's garden harvest to make ground turkey Cincinnati-style chili. Next up I want to concentrate on using up condiments. The more we use up, the less there will be to move when we sell our house.
