so I ended up picking up about 1.25lbs of chicken breast tenderloin and 1.5lbs of boneless thighs. marinated all of it, and am just now working on my salad after grilling all of it. there will be some tasty eats this weekend, that's for sure!

Yes, I was thinking of Cajun seasoning too. They also make a few really good salt-less steak seasonings.

I used a seasoned flour coating for the cube steaks, they added flavor, just not the usual intense flavors we are used to. DD is not crazy about veggies served alone, she likes them in soup.
I will work on this as her blood pressure is back to normal and we worried with her weight so high before that she would become diabetic, don't want to go back there. He and I are to heavy anyway. Besides took a year to get it down, she looks so good and its so much healthier for her, was hard for her to lose it also.
So I will really try.

Hi ladies (and guys?)! I'd love to join in. I LOVE to cook, but I'm not so great at the planning thing. (Many nights, I "plan" dinner at about the time 5pm rolls around... ) So, I've got my calendar out, and have it filled out for the next several days, and hope to gain some inspiration from you all when I'm stumped. Tonight's dinner will be an experiment; DS has been wanting to make falafel. So we started soaking the chickpeas last night, and we'll see how it turns out! I may occasionally slip up (and show my mid-western roots) and call the evening meal "supper."

I had leftover rotisserie chicken, leftover rice, so I made Chicken Fried Rice for supper. I added frozen peas, onion, garlic, red bell pepper, egg, sesame oil, oyster and soy sauces, green onion, and it came out great! No clue as to the cost.

Leftover veggie soup. DD and I had a late lunch, she had a sandwich with cheese spread on it.
I baked a huge sweet potato and ate about half of it.

Tonight is breakfast for dinner: 2.50 beef sausage-loyalty savings, sale 1.03 eggs-ecoupon 0.50 cheddar-ecoupon 2.35 LC tortillas Total $6.38 for 4 servings Haven't planned the rest of this week so I'll check back in tomorrow.

dinner tonight will either be a chicken caesar salad or leftover chicken broccoli alfredo pasta. still plenty of both grilled chicken and the mixed pasta from the weekend, and there will likely be more than I can eat for lunches of the pulled pork I made yesterday in the crock pot. I likely won't have to cook all week.

do you have any left over? throw it in. this was a comfort-food thing at the end of last week. my mom used to do a steamer bag of broccoli and a package of cut-up Perdue "short cut" chicken tossed with 1lb of penne and a jar of alfredo sauce. pour into a baking dish, top with more cheese and bake til the shredded cheese melts.

I'm having some homemade soup tonight, Sausage & corn soup. There is 1 piece of garlic bread in the fridge, so I'll heat that up also. It was darn cold at the VA today and I spent most of the day wrapped up in a large shawl. Decided soup tonight was the solution to our first really cold day.

Tonight is Turkey soup that my Dad made. I can't wait! He enjoys mixing things up and augmenting recipes on the fly that turn out really good. There *should* be enough for 2 dinners.
I also need to cook some cheese tortelloni and I have a great artichoke pesto that will be added to it...I believe for lunches.

BLT's have tomatoes from my garden ripening on the screened in porch. Have about 20 left, covered them with a throw rug to keep them from freezing tonight.

Had an Atkins pizza (loyalty savings, e-coupon) w/ added cheese last night. Cost approx $3.25
I am going to purchase bachelorette food (CARBS!) tonight, so IDK the cost of items below.
Tonight: Stuffed pasta w/ pesto, French bread
Tomorrow night: Raiders vs KC football munchies. Woot! Just win baby! Totino's pizza doctored up, popcorn
Friday: Little Caesars cheesy bread w/ added pepperoni. Approx $6
Saturday: IDK yet

Haven't eaten out since the last time I posted (Dec. 2), which is one of my major goals. Woot! (Falafel turned out awesome, by the way.) Tonight is liver and onions, and baked spaghetti squash. (And mac n cheese, for the picky DH and kids. )
