Out to dinner, DH and DD had shrimp, I had prime rib, it was sooooo good, can't remember last time I had it, a good med rare, mhhhh. Dinner was something like $58 and this is a local tavern that serves great food.
We enjoyed it.

Was up early for a Sunday morning (7:30 a.m.), so there's a yummy pot roast cooking low and slow in the crockpot already. Cost? $18? Enough for at least 4 dinners and a couple of lunches.

Had an Atkins pizza (loyalty savings, e-coupon) w/ added cheese last night. Cost approx $3.25 I am going to purchase bachelorette food (CARBS!) tonight, so IDK the cost of items below. Tonight: Stuffed pasta w/ pesto, French bread Tomorrow night: Raiders vs KC football munchies. Woot! Just win baby! Totino's pizza doctored up, popcorn Friday: Little Caesars cheesy bread w/ added pepperoni. Approx $6 Saturday: IDK yet I gained 6 pounds eating this way. That is all.

A new chicken pasta dish probably. I printed the recipe sometime back and never made it.
Last night was mark down steaks from the freezer, roasted brussel sprouts and sauteed mushrooms, green peppers and onion. Cost probably close to $28. Cheaper than going out for steak and we have 2 leftover steaks for later.

Spinach feta quiche with sweet potato crust. Yay for fresh food! Ooh, I'm intrigued by the sweet potato crust. I'm so going to try this. Still haven't eaten out this month. Tonight will be leftovers; chili tomorrow. I could try to track the cost, but I'm usually stocked up on most items (dry beans, rice, spices, beef (half cow), grains, etc.). I don't remember the cost of any of it, but buy mostly in bulk, so that helps keep the costs down. Hope everyone has a great week!

Shrimp sautéed with garlic and lemon. The shrimp was $6.99 a pound. Udon noodles with oyster sauce, sesame oil and sesame seeds.

The sweet potato crust was actually really good in the dish, basically just thinly sliced sweet potatoes covering the bottom of the pan and prebaked. I love sweet potatoes but typically only ever have them baked with butter on them as a side dish. Crust is usually my least favorite part of any dish, so I'll have to keep this in mind for other potential substitutions.

I do quiche often enough, and I am not a fan of the packaged pie crusts either. I almost always do a hash brown crust for mine. thaw out some frozen hash browns and crumble them. press the shreds into an ungreased pie plate and bake for I think 30 minutes. I will check and edit or confirm. once the crust is pre-baked, you can just continue as normal. the grease from the hash browns is enough to prevent sticking. ETA: pre-bake at 425 for 25 minutes.

Chiver,
Sometimes, I make a quiche without the crust. It takes a bit longer to set after baking.

I've got two russets baking in the oven right now. I'll top mine with extra spinach and artichoke dip from Saturday's party. I think my roommate is just going to go with cheese. whatever, at least he's eating something and not just drinking his dinner. that wouldn't end well for him bc I'm sure he would end up saying something to set me off.

We had lunch at Starbucks yesterday, had a gift card of DD's for $25. She had a Panini hot cocoa, and a slice of lemon cake. I had a protein box and a latte, took most of the $25. Her brother wanted to know what to get her I told him gift cards like that is the best, she likes to go there and other places.
Tonight I made hamburger pie or casserole, was really good, then a peach pie I made. Everyone was happy. The casserole was so good we ate everybite, yummy! Pie wasn't bad either.

had the house to myself tonight, and managed to not waste a few things that should probably get pitched in the next day or so. I made a half batch of an almost loaded risotto with the following use-or-pitch things - half a box of thawed out frozen spinach, half a container of creminis mushrooms, boxed chicken stock that was open 11/30, the last few cloves of garlic in the bowl on my windowsill. I had to add half an onion, some pancetta, and 1/2c arborio. oh wait, and cheese.

I kind of doubt it, I have a nutrimill, its for grinding wheat and corn, not for oily grains. You could try a little and see but its awfully hard. If you do grind some when making it add a bit more liquid as it soaks up more. I LOVE the taste of it.
Tonight canned veggie soup with toasted cheese and made a pan of brownies. I ate leftover chicken and rice, will likely finish it tomorrow. One of my favorites.

Yesterday was choir practice so it was dinner at Chik-fil-A. I ordered small chicken noodle soup and a chicken sandwich. I brought the soup home and will have it for lunch this afternoon. Have to leave at 1 PM for our choir performance this afternoon @ 2PM that will be at an independent living to nursing home facility located in Rogers, Ar.
Have no idea whats' on the menu for tonight, will likely take something frozen out of the freezer and nuke it.

Instead of regular stir fry, I made this: Gobi Palak and added chicken. It wasn't too bad at all. Oh, and I was mistaken on my egg calculation above. The eggs were on sale for .99 for an 18 pack, not a dozen.

I really should make some garlicky chicken soup tonight, since I feel like some bug is trying to settle in. not sure how I feel about a complicated meal tonight, though. I still have some Cobb salad fixins to repurpose - spicy chicken, black beans, garlic corn. I could easily just throw together a half-assed Cobb and call it good. over lunch today, I hit up Whole Foods for both my lunch and to shop for ingredients I don't already have to make this Mapo Ragu recipe from the NY Times cooking blog. it sounds amazing. all I needed was scallions, kale and the pork. I'll probably do that up on Sunday and take leftovers for lunches next week.

Potato soup, left over egg salad, ramen noodle oriental salad and/or left over spaghetti and meatballs.
I cooked every evening this week and we didn't get the left overs taken care of.
Don't blame me, it's Thursday. My only excuse.

I have a Stouffers chicken pot pie that I'm going to put in the oven. I may have some asparagus that needs some attention too. I know I have 1 more piece of garlic bread...voila: I have dinner.

We had scrambled eggs and fruit salad because I ran out of waffles and I was too tired to make them from scratch.

A big batch of American Chop Suey using DFIL's famous recipe. ;-)
Sides are spinach sautéed in EVOO, minced garlic, and grated Parmesan cheese, and homemade garlic bread.
Cost? $50? Good for at least 12 dinners (including several college-age boys with hollow legs).
