Tonight I will do 1/4 package smoked sausage ($1.00/package), slice up a potato and microwave it then put a slice of cheese on top to melt, and do frozen broccoli and carrots. The sausage will be $0.25, the potatoes were $3 for a 5 lb bag so not sure on that cost, the cheese was $2.50 for the whole package, and the broccoli and carrots were both $0.99 on sale. Honestly, I would guess somewhere between $1 and $1.50 for the meal.

Tomorrow night - Chicken noodle soup Tuesday - Julieann Salads Wed - Chicken casserole with cauliflower Thurs - Mushroom and Barley soup w/mini-meatballs. Friday - leftovers. Ok, 8# chicken @ .99c a pound, 3# taters @ 20c/lb , 2# brussels sprouts @ 1.49/lb and bag of cranberries .79c. Say $2 for butter, salt and pepper, seasonings and olive oil. 6 meals on the chicken @ $2.43 Chicken soup - stock from Chicken, Celery say $1, Onions say $1, Carrots say $1. Some chicken breast. Noodles @ 1.29 bag 6 meals on the soup @ .71c Julieann salads - celery, hard boiled eggs, cucumbers, diced ham, dressing - about 1.50 each Chicken casserole - red bell pepper .79, celery say $1, carrots say$1, frozen peas $1, Pasta - .89c, cream of celery soup - $1, milk .50c, cheese $1.50 Casserole = 6-7 meals at around 1.25 a meal. Tue dinner is going to be salmon patties. Can of salmon 1.99, stalk of celery, small diced onion, 1-2 eggs and 2ish T flour + oil to saute. Prob 2.50 total cost for 2 or 3 servings. Will add a veg and/or salad.

Last night I made spaghetti squash (which I roasted and shredded in the morning, and then all I had to do was prepare and heat it last night - so easy!) I put pancetta, artichoke hearts and grape tomatoes in it, and tossed it in pesto sauce. I served it with a big salad. It was good.

Tonight I'll make the ground beef DH buys today ($3?) into two recipes: One I'll make hamburger patties and serve tonight w/ bacon ($4?), etc., and the other half I'll put into Ragu sauce ($1.17) to use with the rest of last night's cooked angel hair pasta (.13). The elk mentioned in my post above is actually a deer summer sausage, oops, so I used leftover frozen meat sauce in last night's pasta dish.

tonight I'm making chicken piccata for myself and a friend before we head out to a trivia night. I have a 2lb package of B/S chicken breasts that I'd thrown in the freezer whole, I will be sauteeing the whole package as cutlets and using the extras as leftovers for salads later this week.
$6 chicken (6 cutlets) $.25 half a lemon $.50 capers $.50 cooking wine $.25 pasta for my friend $1 spaghetti squash for me, leftover from Sunday

I am supposed to be back on WW, but I am really struggling this time. I can't get motivated or think of "good" stuff to eat, besides the fact I absolutely HATE cooking for one person. I have bananas thawing out to bake some banana bread to hopefully warm up the house a bit. It's very cold here today and will be even worse tomorrow. I have a b/s chicken breast thawed out, guess I could do something with that, just not sure what... do you use my fitness pal? I find that much easier than weight watchers. and free. My sister just started using it Swamp!! Im so tempted to make the switch. I worked for Weight Watchers for a number of years, including as a leader. However it's not a program I can live on forever. And my sis was on it for 22 years and is still having difficulty maintaining weight loss despite the fact that she is a marathon runner. but she is able to lose weight on myfitnesspal.com Tonight I'm having chicken roasted with potatoes, carrots, onions. That chicken was 87c a pound at Safeway, onion 18c total, potato 47c lb, and the carrots were 59c. BARGAIN!

Blond Grannie I have nights like that; eat frozen pizza or deli meat on rye/roll or something I previously made & froze.
Salmon patties ended up being 3 servings.
Tonight will be chicken fajitas:
Chicken breast sliced Onion Yellow bell pepper (on sale) Green pepper (on sale) Tomatoes (can is already open) Probably serve over rice Cost is about 0.70/serving-making 1 for tonight & 1 for freezer.

Tonight I'm having chicken roasted with potatoes, carrots, onions. That chicken was 87c a pound at Safeway, onion 18c total, potato 47c lb, and the carrots were 59c. BARGAIN! Leftovers. Which was great as I needed to crank out some CEs today. Turns into soup Friday night with turkey broth from freezer, noodles bought on sale, mushrooms in fridge that need to be used up, & challah or biscuits. So 3 meals at once!!

Thur 1/5 Dinner tonight will be a piece of leftover, frozen steak from 3 weeks ago and cauliflower. I need to use up the cauliflower on hand since it is on sale at several places this week so cheap to replace.
cost/setrve = $1.59 I did look up what I paid for the steak and KNOW what I pay for cauiflower.

No chicken casserole last night - yesterday morning when I pulled out the leftover chicken and put it on the counter (to get my leftovers out to take in for lunch) I forgot to put it back in the fridge. It sat there until DH got home from work - over 9 hours. He missed seeing it in the morning because DD put her cereal box in front of it. What really sucks is that I'm working crazy hours, dealing with crap commutes because of the snow, and was really looking forward to some yummy comfort food. Chicken noodle casserole is one of my favs. Oh well, we still had plenty of leftovers from other meals.

DH is out of town (usually gone 2-3 nights a week), so last night DD and I had a gourmet meal of english muffin pizzas. She promptly dropped hers on the floor so I had to make another. Cost? I have no clue. BTW, I'm so jealous of all you and your Wegmans. We visited the in-laws in Syracuse over the holidays and I got my fix, but damn, I wish we had one here!

We drove 2 hours each way today so I could get my "fix" of the best baby back ribs I've ever had. I enjoyed every bite of what turned out to be 1.5 full racks, roasted corn salad (have to get that recipe) and hot baked beans.
Tonight is an apple. DH is on his own, as he enjoyed a plate full of shrimp. I don't even know what else he ordered...I didn't care about anything other than getting my ribs.

Tonight is scrounge.
DS is having ham and potato casserole.
I have water on for pasta and am finishing up some homemade sauce.
DS and DD...?
Their choices are parmesan honey pork tenderloin, homemade chicken soup, salad, cheese and crackers or cereal.
Whatever anyone else is having, I'm not participating. I already made the four main choices and I'm done cooking for now.

Lately, we've had: wild rice and sausage with green beans curry chcken with brown rice and peas Parmesan chicken, peas & potatoes Swedish meatballs (from Ikea) and mashed potatoes Lentil stew made with brown rice, carrots and celery
Don't know costs as many items were from pantry. Chicken was on sale for $1.49 /lb frozen peas are 99 cents /lb but we usually use about 1/3 bag per meal for 2 people.
The least expensive meal is the lentil stew at 85 cents per cup of lentils.

Tonite was pasta & meatballs.
Ground beef was purchased in bulk a couple weeks ago - some frozen into hamburger patties, the rest into meatballs. Cost was $8.00 but divided up, made enough portions for 4-6 meals.
Dry pasta (pkg) abut $3. - and will last for 8-10 meals.
Pasta sauce, $4. (approx) a jar - also will last for 6-8 meals.
I'd say tonite's dinner was a total cost of $3.

Fri tonight is veggie night for me. I plan to stuff a baked potato w/broccoli, fako bacon bits, cheese, chopped green onion and have margerine and non-fat yogurt on/in it too. Cost comes in at about 5.55/serving so its my cheapest meal for the week.

I've been a Lifetime WW member since 1979 and currently work as receptionist at 2 Sat. meetings. Compared to the 1979 program, this one (Points Plus) is a godsend! I would have lost the weight much faster if it had been the program back then. What's not to like about lean protein, fruit, veggies and nonfat dairy! And no liver! Must admit that I never ate the liver--just the thought made me gag. However, it is definitely difficult to maintain a weight loss. Our natural instinct is to go back to our old eating patterns and we start sliding down that slippery slope. Also, age and menopause are a big factor. I walk/hike 5-8 miles, 5-6 days week and know that I would be gaining if not for the eating diligence and that exercise. I say do whatever works for you but as someone who had tried every fad diet known to man (and some I made up myself), the WW plan is the most sustainable for me. Helps that I like fruit and veggies a lot! Good luck to whoever is fighting this battle--its a tough one, I know.
