Leftovers here, too. Well, at least leftover roast chicken. Not sure about sides: a veggie or two and either quinoa or brown rice.

roommate is doing up a batch of chicken parmigiana, and asked em to pick up some fun pasta to go with. so I went to the Italian market over lunch and was very un-YM in spending $5 for 1lb of homemade pappardelle pasta. the irony was not lost on me that I'm taking it home to be covered with Ragu. oh well, I don't have to cook. after today? that's a win.

Spaghetti and meat balls. I had Shirataki spaghetti noodles at 10 calories a serving rather than pasta.

Turns out we had enough stew and mashed potatoes for two last night, so DH gets the leftover chicken and rice tonight. I will make a chicken patty or two (bought on sale) on a bun with lettuce and tomato and some veggies on the side for myself. I will be pulling out the holiday recipes tonight - the Christmas day pie is decided and I just need the candy recipes. I need to make a list of specialty items to buy; shouldn't need too much.

More soup. I didn't finish the leftovers last night so will finish them off tonight.
But I am thinking about making spaghetti for this weekend. I just need to pick up a few things to add to the sauce.

Neighbors brought us a fresh-out-of-the-oven loaf of bread last night. It complimented the pork chops and zucchini quite well. What carbs?

there was a ton of leftover pappardelle last night, so my roommate left some un-sauced for me to do something else with tonight since I'm on my own. I've got a bunch of accounting and file cleanup to do tonight, so dinner's going to be something really easy. if I have any broccoli and cheese sauce in the freezer, I'll nuke that and a portion of turkey to toss with the pappardelle. if I don't, I'll run across to the little market and see what they have for sauced frozen veggies.

ditto ladies. I'm just out of pesto right now. that said, I may not be hungry by the time I get home. I just went out to run some errands and found myself craving Five Guys fries. so lunch is a grilled veggie w/cheese and a small Cajun fries. roll.me.home.

Clueless. We leave on vacation on Friday and the pickings in the fridge are really, REALLY slim. I'm thinking of going out for Mexican, I need a margarita!

I ended up pouring some crushed red pepper on the bowl and tossing the lot of it. I had most of it tonight, will finish the leftovers tomorrow for lunch (since I already know I'll have barely half an hour between meetings) and I've got a bunch of fruit to pack with it to fill in the blanks. tomorrow night's dinner was just discussed. we're going to thaw out some chicken breast tenders to saute w/S&P and pair with Emeril's recipe for fettucine with peas, prosciutto and a cream sauce. we'll cook tomorrow night and I'll be okay through to the weekend since my roommate has to work Th/F/Sat nights this week. I'll need to figure out Saturday night, but whatever.

This I picked up a wedge of American Grana, some fresh parsley and a pint of half and half. everything else I have on hand, except I'm subbing pancetta for the prosciutto as I have pancetta already.

I left the juices from cooking the chicken in the pan, just removed the tenders and all the stuck solids once I deglazed the pan. I think it added a nice other layer of flavor. we are absolutely doing this again, likely with a fun pappardelle like from the other night. ooh, wait. I lied - I didn't use the same amount of peas. I could have sworn I had a bag of frozen sweet peas in the chest freezer, but no. there was a sweet peas/corn blend in there, so I picked out probably half of what the recipe calls for. what a pain in the ass that was hahaha.

To me the BIG disadvantage of our VERY warm (so far) winter is that I am NOT interested in making or eating soup. I had a whole list of ones to make but only made 1 so far. I have everything I need for lentil, black bean and Manhattan clam chowder but no desire to make or eat.

It's supposed to be upper 60s here today, and tomorrow the forecast is for 70....it then goes down hill from there.
I'm making chicken taco soup today. The last time the recipe made 8 servings, so I will have one tonight and put the rest in individual containers for later this winter.

LOL, I guess it's Soup Day because I am making chicken stock as I type this. Join us, Holly!!! :-)it's going to be 60 here today, too, and over the weekend. But, we'll wNt soup because we are all sick at different intensities.
Going to make chicken soup with tons of onions, garlic, red and black pepper, veggies, and either rice/pasta/quinoa.
Cost? The stock is negligible because it's made from a roast chicken we've been eating off of for days. The veggies will probably be $5 and the spices are already on hand.
The finished soup will be $10-15 for veggies and the rice/pasta/quinoa. I'll easily get 6-8 servings from it.

I believe that tonight is going to be Spaghetti and chunky sauce. I am so tired of soup right now. I have had soup for the last 2 weeks just about straight through.

last night was pork-turkey meatballs with garlicy cheesy bread and green beans. Tonight will be chicken nuggets, fries, and zucchini. Yeah yeah yeah, I know I make that like every week but it's one thing I know DS will eat and it's pretty easy.
