Good News Racers! We will start having shoutouts and smiley lists EVERY WEEK! A big thanks goes out to chiver78, who has agreed to help me with the spreadsheet & postings. Please take it easy on her, she was trained last summer, but never got a chance to put her work into action. Some things have changed since then, so she has a little bit of learning to do, plus who can remember stuff from last summer?! The NE RSOTU will be done once a month, at the end of the month.

OH Man.. I just missed the update by hours... Oh well, I am happy to say that I have my second ZERO!! Although my savings went down thanks to Murphy visiting me & my Truck, but I was ready and had cash to pay!! That felt SOOOO good. Thanks rpprt for doing the list!!

Hi all. Just dropping in to say that we closed on our house yesterday and what a battle it was! We were victorious and it feels great. ;D Once we get the ball rolling with renovations and living there full time, I will probably start our second race. I have to decide if I want to do just mortgage or just student loans - or both. Either way, it will be hefty. Have a great weekend all!

Thanks! The budget talk wasn't so bad. We might be a bit short for the month but we'll work it out. DH gets 5 paychecks in June so that will help. The thing really blowing our budget to heck is gas. All the extra driving to see my Dad isn't helping but I have to go visit him. I hope the price starts to drop soon.

Most of my decrease was due to paying CC's with part of a personal loan, that I'm not racing. But, it was a good move in the long run. I am going to do the one home repair, should be around 1200, but could be more. Once that's done, any extra I have from the loan, I will throw on another CC.
Just found out this week that I may be out of work for 4-6 weeks for surgery. I have to look into it some more, but, as long as I can use sick time for it, I have plenty to cover it and will get full pay. If not, if they make you do ST disability or some wacky thing like that, it could be a problem. Have to look into it some more and make a plan.

OK. Indoors with rain day. Cleaned my kitchen THOROUGHLY. I mean, I did the refrigerator, and the cabinets. Only got online about 20 minutes ago, which is just amazing for me.
And - I did a little cooking, a little baking, did a little experimenting with recipes, cuz... when you can't go out, you may as well entertain yourself, yes?
Cuz truth to tell, I'm getting really tired of aspartame and fake stuff in my food.
So, here's the outcome, this is something I've been flirting with for awhile. And I like it!
1 can of pumpkin (15 oz) 2.5 - 3 cups of wheat flour 1 cup dry oatmeal 2 packets yeast 2 tsp to 1 tbl salt (I prefer the 2tsp, but that's me) 1/4 cup honey
I let the breadmaker do the "mix only" cycle first, that mixes it thoroughly - pumpkin is soft, after all, and I can tell if I need to add the extra half cup of flour or not, too. Then I put it on the bake cycle, and I get savory, flavorful bread: and it's completely fat free, minimal sugar, and it works for toast, tastes fine with chicken, tuna, etc. It's also a good dense, soft bread!
Wheat is a heavy flour, there's also oat flour, which I expect would also be good. Any kind of heavy flour, I think something like rice flour would probably not work.
I've also been trying tomato variations, I'd like to make a good bread for pastas, etc., but tomato paste is thicker than pumpkin, whereas if I use sauce, that means less sauce or more flour. Thus far, I haven't found juuuuuuuust the right balance - but I will!
