I baked a hawaiian pizza for dinner last night and I have the rest of the pizza for dinner tonight. I also pulled a burger from the freezer for later tomorrow.

snapdragon, like minds! I decided to bake up a doctored up Caulipower pizza in the Traeger tonight in order to use up the rest of the holiday entertaining salami, and some of the mini mozzarella balls. I'll serve it with side salads.

I did so many dishes this morning, ugh. my new dishwasher cannot come soon enough!
tonight I made a big quesadilla with some of the grilled chicken and other stuff kicking around in the fridge. I'm using the fine china, too. 🤣

Tonight is a burger with mashed potatoes and veggies.
Tomorrow will be baked rice and than a stir fry with shrimp will be added on top. Leftover rice will become Fried Rice.

I'm going to try out this chicken broccoli recipe tonight. I'll swipe some of the white rice I need to cook for the pups anyway. I'm looking forward to it, I've never had a bad meal from that blog before.

Thursday night is leftovers.
Friday night I will make instant pot risotto. I have one portion of shredded chicken left to toss in this.
Saturday eating out.
Sunday beef roast and sides.
Fingers crossed that Sam's Club has chicken.

curious, what do you mix in (if anything) to the risotto when you make it? I almost always do mushroom and spinach, this time I also added diced pancetta.

I usually do mushrooms and peas every time. I toss frozen peas in after it finishes cooking.
If I have shredded chicken I add that after it finishes cooking along with the peas. I have made it with raw chicken. I cut it up in chunks and sauted at the beginning.
I think I added zucchini one time too.

We had planned to be out of town tonight but the weather was iffy. I made broccoli cheese soup for dinner. Bought fresh broccoli florets today and plan on having broccoli soup tomorrow.

What a weekend.... Anyway, one of my latest food focuses is the abundance of homegrown sundried tomatoes a friend from CA sent me.
Tonight: Sun-dried tomato chicken with air fried salmon and two cheese stuffed mushrooms on the side Tues: Creamy sun-dried tomato cod with riced cauliflower and air fried eggplant fries Wed: Patty melts which will use up leftover onions from Saturday's air fryer onion rings, with a side of Budget Bytes one pot creamy sun-dried tomato pasta Thurs: (Another focus-leftovers from the freezer.) Enchiladas, leftover riced cauliflower Fri-Sun: Out of town

Monday night pizza, wings, buffalo chicken dip, mozzarella sticks and carrots/broccoli/dip.
We are doing snacks for the championship game tonight. There will be leftovers for lunch later in the week.
DH picked up the pizza and wings. I'll say $30? He did mention the wings costing an arm and leg.

oh yah, I forgot there was a football game tonight. I might tune in if I'm still awake. go <not Alabama!> tonight, I'm doing winter comfort food. there's a russet potato in the oven, chopped broccoli is ready to join it in another 15min, and I'll make a basic pepper jack cheese sauce once I drop the broccoli. it's the first super freezing day here today, and tomorrow's only going to be colder. ugh. bring on Spring!

being all Fancy Like....tonight. lol... I have a family size Bertolli meal, the one with bowties, chicken and spinach. it's almost twice the size of a regular one. I added two snack portion bags of frozen shredded rotisserie chicken and will add a bunch of fresh spinach when it's almost cooked. that will make the ratio of pasta to everything else way more appropriate. this will easily last me the rest of the week after dinner tonight. my kitchen is mostly closed this week.

Last night I chopped some ham and added some frozen veggies to scalloped potatoes. It was yummy and I have a bowl for leftovers tomorrow. For dinner tonight I am finishing off the baked rice and making stir fry with shrimp.
I also am pulling a container of soup from the freezer for lunches over the weekend.

I had leftover chicken dip. I wasn't very hungry. I had a yogurt/granola before my pedicure/massage and cheese and crackers with a glass of wine at the spa.
DH had a can of soup.

Yesterday we had steak, baked potato & salad. Tonight we had boneless pork chops, boiled cabbage & hash browns w/onion....and my cake. I made a Texas sheet cake today...it's the chocolate sheet cake that you pour the icing onto as soon as it come out of the oven...and the icing has pecans in it. Cake is fantastic....haven't had any for nearly a year.

I'm pretty sure that cake is fabulous due to the quantity of butter involved in making it. It's a favorite for DH's family. It makes a good quantity and there can be dozens of them at parties. I do it without pecans. Too many nut allergies.
Thursday night chicken thighs in the air fryer and oven roasted broccoli. Estimated costs $5.
