Last night we had grilled salmon....so no leftovers tonight. I planned on leftover pork tenderloin, but TD has eaten pretty much off of those leftovers for lunch. So I pulled a package of chicken thighs from the freezer, and they are still frozen.
We have leftover Chinese take out, so think I’ll make some fresh rice, and heat up the leftovers for tonight. Grilled chicken tomorrow instead.
I invited a couple over for dinner next Friday. TD’s going to need to dig to the bottom and find the DR table. I’m still trying to figure out what to make. Right now, chicken and steak shish kebabs, rice pilaf, Greek salad and I’ll make some Toom.

OMG! I think it was milee who once told me to throw some chicken breasts in the crockpot with some chicken broth. I was trying to figure out how to cook two huge boneless skinless chicken breasts today to make chicken tetrazzini tomorrow. In the past, I have dried them out by baking them in the oven. They are so huge that it takes forever. But today I used the crockpot, and they were SO good. I know this because I cut off a bite or two for Penny and then tasted it to make sure it wasn't too hot. I am never baking them for recipes again! SS: I have 3 packages of chicken in the freezer....besides thawing them out and then the crock pot and chicken, was their anything else you used??

Caesar salad with blackened shrimp for lunch.
Steamed broccoli and sauteed yellow squash for dinner. The single squash plant in the garden is way too productive.
The remainder of the shrimp are going into a gumbo along with some leftover chicken breast and a lone andouille sausage. I'll make the gumbo today and have it for dinner tomorrow.

Dinner tonight is the chicken thighs that finally thawed, they'll get thrown on the grill. Side will probably be caesar's salad.

I snacked late today, and still am not really hungry. but, I have leftovers to use up and other things I don't want to move. I think I'll make myself a quesadilla with some black bean pulled chicken. will add cool guacamole (from a 100-cal tub) and some shredded iceberg after cooking.
tomorrow I'll boil off some curly pasta for a heartier use of some of those pulled chicken leftovers. today was a day of small meals and picking at things.

I need to make a batch of the black bean pulled chicken. I haven't made it since we've been working at home. We work in the kitchen/dining area and I don't want to suffer smelling it all day.
Tonight's recipe would be better with smaller zucchini. I had a huge free one and it was kind of tough. Good taste though and a quick dish.

I took a package of chicken breasts from the freezer yesterday morning. I discovered that it weighed 1.12# and it cost me $12......I could hardly believe that. Anyway, I'm going to put it in the slow cooker this morning and later on I will use the Ninja and grind up some frozen strawberries and peaches and toss all that in. I have no other ideas on what to do.
Oh......I know what to do.......I'm going shopping at Chicos with my neighbor later on this morning. 50% off a whole lot of clothes.

I've never heard of chicken cooked with strawberries and peaches. Is it tasty? Almost $11 per lb for chicken? I've never seen that, either.

I'm debating ordering a takeout deep dish pizza from Uno's. I looked up the menu when I got home earlier, because for whatever reason I noticed the sign just off the highway exit. 🤷♀️
my go-to from back in college isn't on the menu anymore (spinoccoli sp?) but I can build my own spinach, broccoli, maybe chicken idk. $15 for an individual, includes 3 toppings. that would cover dinner tonight and another meal before I pack up the car tomorrow.

Did take out . Ramen , sushi , teriyaki chicken. So a little pricey $60 , but so so good . And we have leftovers, so bonus .

the last two nights, we've made a chicken stir fry with veggies that I brought with me and others from M's mom's garden. Sunday night, mom and I had brown rice with ours, last night we all had rice noodles that I brought back from the rental yesterday. we cooked a fresh batch of chicken and veggies, then added Sunday's leftovers to warm up the last few minutes. zucchini, summer squash, jalapeno, bok choy, mushroom, green and red bell peppers cost - $6 in BSCB between the two days, maybe 2lb for three of us? rice noodles were from an open bag I know I brought from the old house. brown rice was in M's cabinet, so not sure what the plan is for tonight. we have all been talking about Chinese takeout for a couple days, so maybe that.

Sunday I ended up making egg rolls with the wonton wrappers and "baking" them on the Traeger. They turned out SO good! Nice and crispy. Southwest Egg Rolls ETA: I used fresh, chopped baby spinach and cheddar cheese. For meatless Monday, I "baked" a doctored up Caulipower pizza with extra mozzarella, diced zucchini and sliced cherry tomatoes. Served with sauteed asparagus and sliced portobello mushrooms. Delish. Approx. $13 with leftover veggies.
Tonight is leftover frybread with seasoned ground beef, beans, etc. $0
Tomorrow is the jambalaya I bought for a fundraiser earlier this year, with shrimp and okra. Cost $16 for at least 4 servings.
Thursday? Friday: Take out from? Sat and Sun: Not sure yet.

Well my trip to the basement freezer did not turn up chicken breasts. I have shredded chicken, grilled chicken strips, a whole chicken and chicken thighs.
So I'm going to cook the package of frozen tortellini from this spring. I'll open some sauce and toast garlic bread. It'll be easy.

I just pulled out some frozen spaghetti sauce. Trying to decide if I just want to make some spaghetti, or cook some penne and toss it with leftover sausage and mozzarella balls.

A little rearranging this week: Wed: Went out with friends and had the shrimp Caesar salad and a few cocktails. I bought a round for everyone. $80 incl tip
Thurs: DH bought take out. Tonight: I'll pick up take out on the way home. $20 Sat: Slow cooker zucchini "noodle" lasagna featuring ground turkey. $13-ish Sun: BBQ something. Not sure what. Happy weekend, everyone!
