When I clean carrots with a vegetable peeler, I just keep going until almost nothing of the carrot is left. Wonderfully thin ribbons.

Left overs from yesterdays calorie/fat calamity of party potatoes and beef brat.
Today I measured the party potatoes for serving size and ate only half the beef brat.
I also ignored two potato chip cravings.

I packed veggies in a pair of large plastic containers for the pups, and threw an ice pack in the cooler bag. I stopped for gas in between showings, I stopped for gas and hit the McDonald's in the rest stop for a bio break and a 20pc McNuggets. I had 6 or 7 while driving around, the rest were torn in half and tossed with the veggies. oh, and a diet coke.
$7?
ETA: I poured a large glass of pinot grigio when I got home, and grabbed a slice of cold leftover BBQ chicken pizza. clearly I'm a good role model today. lol...

I have a couple of thin steaks in the freezer, so will have one of those tonight. I'll have some Tater-Tots to go along and add some frozen green beans or peas....or maybe both.

I put some pork into the crockpot . Along with chili’s , peppers , salsa verde , etc . Will make a good chili verde for dinner .

not sure, but it will include vodka when i get to M's house. this week has kicked my ass.
ETA: M had a couple trays of sliced tomatoes and mozzarella ready for the oven when I walked in. 🤤 basil, olive oil, and all of the crushed red peppers. so good. I had stopped at Market Basket when I crossed the canal, I picked up a crusty baguette among a few other things. so I made a sandwich, the ladies had chicken sausage rollups with their roasted tomatoes. yum. oh, and orange vodka/seltzer

Hot dogs and hamburgers. Threw them on the grill and will throw the leftovers in the fridge for if, and when, I'm hungry. I'm still not feeling like eating much. Ok, I also picked up 2 quarts of my ice cream today so I'll be working on those as well.

I think Sunday we are planning on a trip to DQ, something to look forward to.
We had spaghetti, home made sauce for dinner and a roll of french bread I baked, I really like it.

Debating ordering out or just having cereal and ice cream. The leftover burgers and hot dogs from last night spent the night in the microwave. I hid them there to keep them from the cats and I forgot all about putting them into the fridge. Damn it.

ooh yum. please share your recipe if it comes out tasty. I may not eat later, brunch was huge. sorry for the food porn, but this was outstanding. and, more than I ate overall yesterday. I am currently curled up on the couch. asparagus, kale, mushroom, tomato inside the omelet, with mozzarella and avocado added to the middle when it was folded over. home fries and multigrain toast, and a blood orange mimosa to round it out. I think M and I found a new favorite brunch spot!

I tried this new casserole, it was good we will have it again, a keeper. DD has enough left for lunch tomorrow and extra, if I don't eat it! LOL!
Quesadilla Casserole
2 tsp chili power
1 tsp ground cumin
1 tsp mixed garlic
1/2 tsp oregano leaves
1/2 tp crushed red pepper optional
1 pound ground beef
1/2 cup chopped onion
2 cans 8 oz each of tomato sauce
1 can black beans 15 oz, drained and rinsed
1 can 8 3/4 oz whole kernel corn, undrained
1 can 4.5 oz chopped green chilis, undrained
6 flour tortillas 8 inch
2 cups shredded cheddar cheese
1 Brown beef and onion in large skillet on medium-high heat, drain. Add tomato sauce, beans, corn, and green chilis, mix well. Stir in all of the spices except red pepper. Bring to boil. Reduce heat to low, simmer 5 minutes. Add red pepper to taste, if desired.
2 Spread 1/2 cup of the beef mixture on bottom 13 x 9 x2 inch baking dish sprayed with no stick cooking spray. Top with 3 of the tortillas, overlapping as needed. Layer with 1/2 of the remaining beef mixture and 1/2 of the cheese. Repeat with remaining tortillas, beef mixture and cheese.
3 Bake in preheated 350F oven 15 minutes or until heated through. Let stand 5 minutes before serving.

Sunday night DH made himself mashed potatoes and salmon. I had a baked potato and buffalo chicken dip.
Monday night he had leftover mashed potatoes and ice cream. There's still a piece of salmon in the fridge that needs cooked.
I cut a couple chicken tenders off as I processed the big pack from Saturday. I threw some Adobo seasoning on them and sauteed them. Chopped up a zucchini and sauteed it for the side dish.
Meals to use up fridge contents the instant pot risotto. I'm going to add a portion of shredded chicken.
Instant pot spaghetti will use up the rest of the vegetables in the fridge.
