breakfast was heavy, so I should go lighter for dinner. maybe a big green salad with leftover tequila lime chicken for protein.
ETA: lettuce was unsalvageable. boo. i ended up melting some pepper jack cheese on one of the smaller pieces of chicken and making a slider with spinach and red onion. tater tots on the side. if anyone needs me, I'll be in a food coma over in the corner.

Chicken/feta sausages, tabbouleh, and baby potatoes. I found these incredible tiny, blueberry-sized tomatoes, perfect for tabbouleh without making it soggy.

I've got 2lbs of strawberries and 4oz of blueberries, looking for some ideas. I don't trust the oven here for elaborate baking, it is so far off calibration and frustrating. kind of at a loss for what to do with them. I can't stand yogurt. maybe I'll pick up some cottage cheese.
ideas welcome!

Sunday night is changed to mushroom swiss burgers, a few onion rings and salad. The chicken is now chicken legs and will be Tuesday's dinner.
With strawberries lately they have gone in yogurt, mini pancake bites, strawberry lemon bars and strawberry margaritas.

I don't trust the oven here for elaborate baking, it is so far off calibration and frustrating. kind of at a loss for what to do with them. I can't stand yogurt. maybe I'll pick up some cottage cheese. ideas welcome! Margarita’s , I freeze blueberries to use in my alcoholic blueberry lemonade . Pancakes , over ice cream , in a salad .

Tortilla soup. Left over black beans, corn off the cob, other veggies that needed used. And some left over rotisserie chicken from last night (wing and carcass meat). Topped with sour cream and tortilla chips. Delicious and I have enough for tomorrow night too.

We had cold cuts for brunch. And dinner was a chef salad tonight. I bought sweet slice ham and didn't realize till I was looking at the package. Goodness right at $10 a pound, holy smokes!

Have you tried recalibrating the oven? Mine have always been very easy to adjust. not my house, I'm trying to touch as little as possible. I've disturbed things enough (by the passive aggressive reactions) just by cleaning things more than they had been. 🙄 You can buy an oven thermometer and get a more accurate read on temp . I do this and my oven seems to be off about 25 degrees here and there .

Pork chops in air fryer, squash and salad as sides. Maybe $6-7?
Tuesday night chicken legs in air fryer, mashed potatoes and green beans. Minimal costs, my SIL is unloading her freezer to move and gave me the chicken. My dad canned the green beans.

I just wanted a basic bowl of linguine and sauce tonight. I opened the jar of Classico I had bought for some reason. that flavor that BG likes, that I would use in a pinch. I might have picked it up after she mentioned it, idk. omg, it is so sweet to me now, too sweet! I'll use some of the leftovers on a pizza in a few days, but I might not finish the jar. 😳

I think I'm making a pizza tonight with one of these pizza crusts I bought over the weekend. I can chop up a piece of tequila lime chicken, red onion, jalapeno and some cilantro. easy enough, today's been a day. should I use that jarred sauce, that I find too sweet? or do I dice tomato instead and go without a sauce?

I cut up 2 jimmy dean sausage, fried both in pan, then put an english muffin in the toaster, sausage on top with a slice of cheese....it was really good!!!!

hot and humid AF today, I'm not cooking. dinner might be deli tuna salad* on Triscuits.
*I found a little shop near the rental that reminds me of my village market on the Cape. Boar's Head deli, butcher shop, small grocery selection AND they buy the same tuna salad, etc, that my old market carries. definitely over the moon about finding that!

I don't know. I got some fresh cukes and a squash from the garden and some onions so want to use those in something.
May thaw a pound of hamburger out and go from there. I like to mix it with onions, crushed crackers, stewed tomatoes and fry. It's kind of like a skillet meat loaf and the fresh onions will give it real good flavor.
Then I will add some veggies.
Little daughter is having gut issues, will likely fix her broth and things to rest her gut. We had a scrip of flagyl so started her on that. Somehow last time they gave her two, saved us a trip to the doc. Will watch her, if by Monday not better will take her in. But this is her standard treatment.

Going to grill chicken that’s been marinated in El Pato . Serve it with rice , beans , guacamole, tortillas . We are loving the new Traeger grill DH got for his BDay , Anniversary, and Fathers Day .

takeout was from a Chinese place I used to frequent when I was still in my condo. this rental is the next town over, even though I am on the far side of it. I saw someone review it in a local FB review group, and they said it was still the same family as it has been for years, contrary to recent rumors. score! I *know* I can eat there!
large veggie lo mein, small chicken fingers, and a large white rice for the pups. $15.41, I left $20.
I have three chicken fingers and what looks like an untouched lo mein left over. I'll be fine for a few days.

I ended up with what I call skillet meat patties. Hamburger, green onions from the garden, home canned stewed tomatoes, an egg, and crushed oyster crackers, add salt and pepper. Pretty good. Then leftover mac and cheese, plus leftover cauliflower and carrots with cheese sauce, peas, some salad. And some sliced fresh cukes from the garden.
I'm thinking tomorrow chicken and mashed potatoes, the rest of the peas, some squash maybe, I will find veggies to go with it. We all love carrots, just steamed, and have some I need to use. Or maybe sauteed bell peppers with onion, zucchini, and mushrooms. Things I need to use up.

Cravin Ultra thin crust pizza with chicken sausage added. Another food that is 250 calories per serving before baking turning into 740 after baking.
I am way far over my calorie limit today.
