Made fresh ricotta and marinara sauce for stuffed shells (pasta was boxed). Got it put together and will put in oven after workout.

I got home after 6 tonight, public transportation was jacked up in both directions due to a subway car detailing at 6 this morning. my commuter train runs parallel to the red line T for the last 3 or 4 stops.
I needed to make rice for the pups, so I made 1 can of black beans and swiped some of the rice for a plate tonight. paired that with a tequila lime chicken slider with a huge smear of guacamole. only major complaint is that I didn't have a tomato to dice for the beans and rice.

Tonight will be grilled burgers, sweet potato fries and maybe a salad if the romaine isn't too limp.
DH will happily eat last night's leftovers while I'm gone. And there wasn't enough for two. Burgers are easy. He can grill them. I've had a rough couple days health wise so he wanted easy or leftovers. I get home first so I usually cook.
I bought a bag of shredded Gouda at Aldi so we are going to stuff them with cheese.

I've hardly touched the pasta salad I made on Sunday, so tonight will be that as a base. I have a package of turkey breast tenderloins to cook off tonight. I will likely roast one and freeze the other.

I am so confused. DIL was going to eat all this other stuff so I cooked hamburgers for all of us but her. Then she decided she was eating one, left hubs short, of course he said nothing. But he got a key lime pie when he went to the store so we will flush it out. We had French fries, antipasto, some carrots and dip, so it was ok. But she was going to cook some Korean items for her she told me then didn't. I feel like I'm in limbo all the time while here. Oh well we will punt and make it.
Little guy didn't eat anything but he ate some today, he will be ok, DIL is keeping him drinking fluids.

Finally had enough from my garden to make a salad. Grew everything except the dressing and cucumber and it was only $.59 and only used about a fourth of it. So, dinner was almost free.

I only buy two at a time - like Bananas That would never work for me because every time I buy bananas I eat 2 of them on the way home. I buy my bananas so green I couldn't peel them while driving. But one will be just ripe by the time I get home Kinda like avocados getting too ripe while driving home Those two are downright impossible to judge sometimes!

We had Chinese for lunch. I could always eat the half I didn't eat earlier for dinner. Otherwise I may have a turkey burger and some veggies. I haven't decided yet.

Monday night I made taco salads.
Tuesday night is pineapple teriyaki chicken, rice and broccoli. I made the sauce last night so I just have to pour it over the chicken and bake tonight.
Wednesday something with green beans. I have fresh ones that need used.
Thursday I don't know. Chicken enchiladas maybe?
Friday probably burgers. Maybe swap Thursday and Friday depending on DH's arrival home and the weather.
I might do pork chops Wednesday. I need to restock on chicken soon.

Sunday: DH grilled pork sausage and ground beef burgers and cheddar brats (sale). Served on top of baby spinach, it all cost approx $6 for 4 servings. Monday: Taco salads. $4.50 Tonight: Grazing before an appointment. $0 Wed: Dinner w/ Dad $0 Thurs: Grocery shopping night so ? Fri: Take out from? Sat: DH's BD party. He's going to smoke a ham from the half pig we bought late last year. Sun: Leftovers

Sunday I made a batch of black bean pulled chicken. Sunday night, I poured some over pasta. last night, I made quesadillas with a little more. I may freeze the rest tonight, have a few other things to clear out of the fridge.
if I'm not so queasy later, I'll probably make some toast and call it good. for how I feel right now, that's a big if.

I rallied somehow last night, wasn't queasy anymore. I ended up adding canned chicken to a can of tortilla soup that I didn't realize didn't have chicken in it when I bought it. turned out pretty tasty.
I just ate a big bowl of Thai noodle soup for brunch, not sure how hungry I'll be later. I have a bunch of vegetables in the fridge that should probably get used up. I may end up roasting a mix and baking off some fish. if I'm still not hungry by the time the fish market closes, I'll just leave that off the menu.

I made pork chops tonight. I cooked the green beans and made mashed potatoes. I'm calling it free to me. My uncle picked the green beans at a friend's farm and then he wouldn't take money for them. The potatoes needed to be used or tossed soon. I don't think my dad let me pay anything towards the pig cost or the processing cost.
Thursday night will probably be leftovers.
Friday night I might make the enchiladas. Or burgers.
Saturday night DH is out so I'm on my own.

one of the things I found in the freezer last night that I didnt pitch was 3c of fried Turkey stock from last Thanksgiving. I put it in the fridge and will use at least half of it tonight in some risotto. I probably shouldn't make a whole dry cup of risotto if I'm not going to be around much this weekend for leftovers.
risotto will use up both the stock and a bunch of veggies I need to use or pitch soon. I'm thinking mushroom and asparagus. maybe I'll grab a small piece of fish to go with it.

I've been out of town since Tuesday, but since I-29 interstate is once again open from all the flooding I will be heading home today...... but first is a stop in Omaha at the attorneys office.
My new will and trust papers are ready for signature. When I left home Tuesday I put leftover pulled pork ,potato salad and baked beans in the fridge. it's from my favorite bbq place, and can't wait to get home and finish it off.

I keep some in the house for the days when I run out of cooked meats to include with my dogs' dinner bowls. or, like this when I'm being lazy/am sick

I am sad to say the trip was to say the last goodbye. She passed away a week ago tomorrow.
She was 99.5 and the graveside service was yesterday.

Supper was a stir-fry. Leftover shrimp and chicken, corn, red bell pepper, onion, radicchio, mushrooms in a home-made Chinese sauce, served on rice vermicelli noodles.
