I made a pan of mac 'n cheese, stirred some raw diced tomato, onion, jalapeno into it before baking. half a box of elbows, and there's leftovers for days. while that was baking, I reheated some of Sunday's leftover chili pulled pork in a fry pan to mix in my bowl tonight. not much healthy about this, but damn it's tasty!

I usually have a couple of potatoes that I zapped in microwave, in the fridge. I cut them up and quickly fried them with butter, onion powder S&P and smoked paprika.
I highly recommend keeping a few "baked" potatoes and refrigerating them. It comes in handy when you're pressed for time. When it's -40 outside, I zap a couple of potatoes and keep them in my coat pockets. They stay warm for a long time. Then they turn into fried or smashed potatoes or potato salad.

I don't own a crock pot, and I don't eat pork. But thanks. Maybe DS will enjoy it if i ever get a crock pot. I saved the recipe.

Back from 4 days off. So relaxed!
~Sunday night: Take out, DH paid. ~Monday I made a recipe I saw on Guy's Diners Drive-In's and Dives: Bread on the bottom of 2 ramekins, topped with clam chowder, shrimp, shredded cheddar and parm. Broil until golden. Nom nom nom. Cost approx $6 ~Last night: Shrimp tempura, regular fried shrimp, and fried okra. Cost approx $7 ~Tonight: Ground beef enchiladas. I have been using the oven again since the weather cooled down. Cost approx $10 for an entire pan. ~Thursday: Chicken tenders, side veggie ~Friday: Take out from? Or we may go to a local chili cook-off. ~Sat: IDK yet
~Sun: DH will smoke a rack of ribs

Just a skillet of fried zucchini with beef broth and a pat of butter. Once its soft, top with mozzarella and let it melt.
Then I steamed carrots, that's it tonight. DD had some ham salad and leftover deviled eggs, hubs and I had a couple of them too.
We each had a couple scoops of raspberry sherbert, wish I had some pecans with them.

had half a package left of turkey breast "grillers" (aka larger than turkey tips, not full tenderloin) so I sliced them into cutlets and made turkey piccata. put that over linguini and broiled some asparagus spears for a side. refilled the chianti, settled in to catch up in here and maybe answer the HR request for availability for a full in-person interview.

I think hubs is going to help with dinner tonight. We are having cheeseburgers, I want steamed cabbage, he wants fries, I do those in the oven. Will see what we come up with between us. He and DD have been helping me all day. I finally took my hydrocodone and arthrotec, lets see if that helps. Not sure why it hit me. I was fine when I went to bed and woke up with a stiff neck morning before. Had not been doing anything strenuous, of course when it gets you, its hard to get rid of it.

I think my heating pad is dying. I like it, its a big one.
Hubs is fixing dinner, that's a surprise, I didn't even ask! He is fixing cheeseburgers, a hamburger for me, and French fries. I have to tell him where everything is but that's ok. I told him he is a pain in the butt, he says but I'm your pain, LOL! This is true. I found a leftover baked sweet potato and heated up leftover zucchini and carrots. I'm trying to eat lighter. All I put on my hamburger is relish, I don't eat a bun on them and I always just eat one. I realize its just water loss but down 2 pounds, its easy to drop a few pounds from just what you eat, I don't consider that weight loss, to me has to be at least 5 pounds, hope I can continue, like I said I need 10 to 20 pounds off Hoping I can get 10 off before I see my foot doctor, not to optimistic but will try.

~Yesterday DH smoked pork ribs I bought on sale a few months ago. Nom nom. We had green beans and a French fried potato on the side. I cannot remember how much the ribs were.
~Tonight will be nachos: Ground beef, homemade taco seasoning blend, cheese, sour cream, black olives on top of leftover tortilla chips from our Halloween party. Cost approx. $5. ~Tues: Shrimp three ways. Cost approx $8.
~Wed: Pork chops bought BOGO several months ago, side veggie.
~Thurs: Leftovers
~Fri: Take out from? DH buys. ~Sat: IDK yet ~Sun: DH will BBQ or smoke something.

Tonight I will probably make a salad for myself. DH has a happy hour for a departing coworker.
We will be away Friday and Saturday night. I'm not sure what time we will get back on Sunday.
I'm thinking Budget Bytes black bean tacos one night. Pork chops another night.
Next Monday I think we will have ham. It needs cooked.

I broke down a value pack of BSCB earlier, thin slicing three of them (2 cutlets per breast) and freezing the rest whole. I sauteed three cutlets with garlic, crushed red and cracked peppers, cutting them in half - sandwich sized - when cooked. the other three cutlets are up for grabs, uncooked. I will use the cooked ones for sandwiches, salads, whatever. dinner tonight was a chicken Caesar salad. one romaine heart, half a cutlet chopped, fresh grated parm cheese off the block. lots of cracked black pepper.
I also boiled 8 eggs, after finding an unopened dozen in the basement fridge with a sell by date of the 8th. oops. made egg salad out of 4 of them, left the other 4 whole. I may slice for Cobb salads, I also picked up some black pepper crusted bacon that I like for stuff like that.

Dinner: Leftover sloppy joe for me while DH is using up the last hamburger bun with a nuked chicken patty. Maybe a small side salad each to round things out.
DH made a large pot of chili that will probably be lunch for the next couple of days.

It was in the 60s here today — in November, so we just had to grill: New York strip steaks with a dry rub on them. Sides were baked potatoes, roasted brussel sprouts, and sautéed ononins/peppers/mushrooms. Yummmm...

It's really cold outside so this morning I got out my crockpot and have stew meat bubbling away. Already added the potatoes, and will add red peppers and yellow peppers later on this afternoon. Likely will add some frozen veggies from the freezer too. This should be enough for 2 meals.

I'm not all that hungry tonight, but I should eat something. I've still got a couple pieces of sauteed chicken, and a pile of veggies that I can roast. I also made 3c (dry) of white rice for the pups, I could grab a little of that, too. I just want to go to bed. this week can eat a bag of dicks.

adding roasted veggies to a box of Kraft dinner makes it healthy.......ish. no?
I roasted some cut up Brussels sprouts and asparagus, and reheated a half chicken cutlet, mixing all of the above into a box of Kraft dinner. what's left will get pitched.

Last night was shrimp fried rice and salad. Cost about $8. There are leftovers. Tonight is Pork Tenderloin, green beans, potato and salad. Cost about $7. There will be leftovers. Monday: Chicken Pot pie. Using leftovers from Friday. Cost minimal. Tues: Thinking meat loaf. Not sure of the sides. Not sure about the rest of the week... I pack some leftovers for lunches during the week.
