The beef and broccoli worked out. I was worried making it in the instant pot for the first time. I looked at a couple different recipes to guide me. And I am a total recipe girl so this is progress.
I made the broccoli in the vegetable steamer and the rice in the rice cooker. I put all of the gadgets to work tonight.

Filet of sole, sauteed in butter with tiny cherry tomatoes, lemon zest and dill. Basmati rice. Sliced cucumbers.

The chicken enchiladas were a hit. I used the creamy chicken enchiladas recipe from Budget Bytes. DH really liked it and requested to add it to the regular rotation. There's enough leftover for another meal.

We roasted sweet potatoes, broccoli and grilled steaks in the air fryer. And I threw together a salad with romaine, orange peppers, tomatoes and avocado with a vinaigrette.

I browned some diced onions, yellow peppers, garlic, diced tomatoes, added the diced chicken, corn niblets, a lot of cilantro and a pkg of Chicken taco seasoning. Served rolled up in tortillas. It was delicious.

I couldn't decide what to cook. I have canned pork I have a few cans of it, beef, and even bacon I get from Lehman's, its very good. I even have butter, the stuff will keep for years. I made barbecue out of it, pulled out home canned green tomatoes and added home made French fries. Probably not the healthiest but it was good. I was really hungry tonight.
I didn't thaw anything today, so had to pull out something, the canned meats are not cheap but they are very good.

Hubs has been begging me for a pineapple upside down cake, he loves those. I said you don't need it, just to fattening. I have trouble denying him though so I'm baking one. He has got to quit eating so much again. I gain and I cut way back for a few days and drop it.
He hauled donuts home day before yesterday, I didn't eat any, he ate the half dozen. Right now he is working hard physically outside so burning them up but he won't be soon. Just too much sugar.
I will get fresh fish this weekend possibly, but he likes them fried. I like salmon baked but not catfish. It's hard to cook the way I need to.

I'm sitting at the airport now, waiting to fly home. I have never been so excited for vegetables, I ordered an appetizer of roasted Brussels sprouts at the restaurant in the terminal. cannot wait to go home and actually cook for myself, without the 9lbs of salt in everything.

We are making lasagna tonight with garlic bread and salad. I'm undecided on dessert. My dad and grandma will be arriving this evening. DH's parents will be joining us I think. Costs I quit adding up last night at the grocery store.

We had spaghetti, sauce was home canned the sausage from the good meat market, it was Italian. It was good but not exceptional. I have leftovers for tomorrow. Tomorrow I have to drink clear liquids all day for my endoscope on Monday so I won't be cooking. Can't cook and not eat especially in the evening, I have chicken broth, ginger ale, can't have red, blue, or purple jello, couldn't find any without dye. No milk products, can have tea. The bad part is since taking the Lizness the pain in under my left rib had quit. It came back last night, woke me up, not real bad today but I know its there. Have on loose pj bottoms, no bra, and a loose sweatshirt. I was hoping it was gone for good. I hope this scope and checking the pancreas shows what is wrong but I'm not real optimistic.

I came home and decided I didn't want any of the boxes or canned foods at the house, and there wasn't much else. so I came to the dive bar to 1) pay the weekday dog walker I had this week (she works here too) and 2) order a salad and small pizza to go. I can barely keep my eyes open.

Monday night Budget Bytes unstuffed bell peppers. Costs $7-8?
Tuesday night we are grilling filets. Can't remember the cost, they were a mark down package at Sam's Club. Maybe $20? Undecided on sides.
Wednesday and Thursday I'm on the road so DH is on his own.
Friday I have no idea. I think we have a house guest over the weekend.

I've got a pork roast in the crock pot, chili seasoned dry rub. roommate will fry up some ground beef for himself, we're going to do tacos for the game. Will likely make a packet of yellow rice as well. I'll make some jalapeno mac and cheese in a couple days for some of the leftovers. tomorrow night is chicken soup (at least for me) with a whole leg quarter I grabbed this morning at MB for all of $1.12, managers special with a sell by date of tomorrow. I'm still actually full from breakfast, we did a big brunch around 11. my stomach actually hurt after eating, and I probably ate half of a normal big brunch. that ship fucks me up badly, but if I want to play with the musicians.... <shrug>

I had 2 new York strips. $10 plus
3 baked potatoes with choice of sour cream or butter
Leftover chili, not much so hubs ate that. He worked hard helping with the memorial today, placing bricks, he and a neighbor. He was really hungry. DD ate the last of the spaghetti, I cooked bow tie pasta and added to it so she would have something to eat while we were gone.

I have not stopped moving since I got home from work. IP chicken is cooling to shred for the pups. while that was holding after pressure cooking.....next up was sort of a favor for the roommate, but I'll reap the benefits later for sure. one of us mentioned enchiladas last night while cooking, and I've got a pretty decent quick sauce. haven't made it since living here, I think. but I didn't have basic canned tomato sauce so I couldn't do it last night. well, the local market only had 15oz cans of that, so I ended up with a double batch. it's probably the best enchilada sauce I've ever made. I'll freeze what we don't use in the next couple days.
finally, I made myself a small pot of chicken veggie orzo soup. was surprised to find TWO whole chicken legs in the package, the sticker was over the stumps and I didn't really pay close attention to the rest of the package. so tomorrow I will boil the other one off for the pups.
I'm still not eating much since the boat, so this soup is probably another 2 meals. frozen veggies, $1/bag, orzo, and $.60 for the chicken. #winning.

Made myself grilled cheese and ham sandwich and heated up a pint of beef vegetable soup my dad canned for me.
DH is making a chicken wrap. It will use up the last burrito sized tortilla and the lettuce in the fridge.
