I have a vacuum sealer but never use it. The bags are spendy. That's why I never got one. They are one-time-use-only, right? Seemed kind of wasteful to me. Plus, more plastic to be thrown out or disposed of some way.

Yes, they are spendy that's why we only use them for freezing those two cooked meats. There is no way I'm ruining meat from our smoker!

Usually there is at least one day where we have omelettes or grilled cheese and tomato soup. Fajitas are quick.
Some days I find it relaxing to cook in the evening, but other days we are just starving and want something now.
If I was more organized I'd either crockpot a couple of times a week or make something on the weekend and eat that through the week. But we have a limit to how many times we are willing to eat something. The limit seems to be one night for supper, one day for lunch - eating it again for supper is pushing it.
One problem I have is that sometimes I think I have made enough to last a couple of days, but then my husband eats it all. If I was smart I'd save some first before letting him get at it.
One thing I started doing after we went to Italy is just making pasta with olive oil, pepperoncini and some pecorino cheese. The concept of pasta with "no sauce" was completely foreign but if you have a good olive oil it is delicious and it doesn't get much easier.

He's more than happy to make his own food... But it is usually crap like pizza or 2 PB&J sandwiches and a huge glass of skim milk or something along those lines, which certainly isn't good for him and has way more sugar and carbs than a diabetic should be eating in one meal. If he didn't have health issues, I wouldn't care. But sometimes he is like a child and left to his own, he makes shitty choices- I'm trying to keep that to a minimum. Why doesn't your husband want to take care of himself? I mean, I understand it because I don't always take very good care of myself. But, my husband is not trying to control my behavior to "make" me do something.. And actually, my husband doesn't always take good care of himself, either. But, that's on him to own. One of my grandparents had diabetes. She never took care of herself, because she didn't HAVE to. It was much easier to let others (my parents, her sibs) take care of her than to assume responsibility for herself. She was also very good at emotionally manipulating people to comply to her wishes. usually we go together once I've made the list. Sometimes I go with a friend if we're already out and about having brunch or something. I'm not sure what his deal is with not taking care of himself. sometimes people just don't... they don't want to put forth the effort or they are in denial. Look around at the amount of people overweight in this country... no one is taking care of themselves the way they really should (myself included... but i am working on it!)

I like prosciutto and some blanched asparagus, with a little fresh grated parmesan cheese. steam the veggies before boiling the pasta, and it's a one-pot dinner!

Plus, more plastic to be thrown out or disposed of some way. I love mine... we buy meat in bulk at costco and I usually cut it into smaller portions and then seal it up so it lasts a few months. I can't just throw it in a freezer bag because it always gets freezer burnt in just a couple of weeks.

I prefer my pasta this way and have ever since I spent several summers in italy in my 20s. We have a lovely collection of olive oils that are fantastic on pasta. I need to work that in as a "side" since pasta as a meal isn't great for either of us. I always forget about it. I'm adding it to my list of ideas from this thread!

My go to for quick cooking is chicken quesadillas. I use the Purdue short cut chicken so I don't really have to do anything but assemble & cook. I can make one in less than 10 minutes. All food groups are accounted for. Picante sauce counts as a veggie

Italian sausage with slice potatoes and zucchini. baked for 30 min in the oven throw some olive oil, balsamic vinegar and tsp of Dijon mustard when it comes out of the oven. I've been looking for some Italian sausage recipes - care to share? Cook some penne or farfalle while you're prepping the other ingredients.
Saute Italian sausage (out of casings and crumbled up) in a large sauté pan until browned. Remove from pan and drain on paper toweling. Pour off all but one TBSP of the fat in the pan (leave the fond [the brown bits] on the bottom) and toss in and sauté some finely chopped onion or shallots, a minced garlic clove or two and a generous pinch of salt and of red pepper flakes. When it all starts to soften and begins to get golden, add 1 large or 2 small bunches of broccoli rabe, washed and chopped up. When the rabe begins to soften and cook, add about 1/2 cup of pasta cooking water OR white wine, stirring and scraping up the bits on the pan. Cover the pan and let everything cook for 3-5 minutes. Uncover the pan, stir in the drained pasta and sausage and toss to coat. Turn off the flame and toss again with a generous amount of freshly grated parmisan cheese.
The amounts are very "forgiving." It is really hard to mess up this recipe. If you like pasta, make it the largest ingredient. If you like rabe, put the most amount of it in the dish; same with sausage. Adjust the seasonings to taste.

I've been looking for some Italian sausage recipes - care to share? 1lbs of precooked Italian chicken sausage sliced up 2 zucchini's thinly sliced 2 Potatoes thinly sliced 2 tablespoons of olive oil 1 tablespoon of balsamic vinegar 1 teaspoon of Dijon mustard pinch of salt and pepper In a bowl mixed sliced veggies add a tablespoon of olive oil salt and pepper bake in 9X 13 pan for 15 mins at 400 degrees. add sausage and cook another 10 to 15 mins. While that's cooking in a bowl mix your Tablespoon of olive oil, Tablespoon of balsamic vinegar and teaspoon of Dijon mustard together. pour on your sausage and veggies when you take it out of the oven. toss and serve.
