We batch cook two huge meals on the weekend and that's what we have during the week. If we're short one day then we'll have scrambled eggs or something like that to fill the gap. I don't know what we'll do when the kids get a little older and don't want to eat the same thing 3 days in a row (or they eat so much it isn't feasible anyway). I suppose at that point it will at least be a little easier for me to cook after work because they won't be whining and crying for me to hold them right? My 12 year old often does not want whatever I'm serving, but he'll just make something else on his own. Since he'll usually make a chicken wrap or an egg and cheese, I figure that's healthy enough. Yes, I'd be fine with that too. Right now my 1.5 year old is Captain Destructo, it's really a full time job just keeping track of her. If she's like my son, we've still got another year of this BS

so he refuses to eat leftovers, won't cook, and will just eat crap if you aren't cooking? ugh. I'm sorry you have an adult child to raise. my life is a little up in the air these days, so I'm not cooking much at all. dinners are either something out wherever I am, leftovers of something my sister's made a batch of, or nuking a can of soup like I did the other night. prior to spending months living in a listing/showroom, I would batch cook things and freeze - chilis, sauce, pulled chicken. on nights that I didn't have a lot of time to cook, I could thaw/reheat any of those options and have dinner in 20 minutes. would your DH be able/willing to pull healthy options from the freezer and reheat on nights that you are too busy to cook? that would let you do whatever easy thing you feel like, that he wouldn't touch. To be fair- we grill nearly half the nights in the summer- and he does the grilling and meat prep. He still grills during the colder months, just not as often. I'm currently crashing w/my sis/BIL in between selling my place and buying another one, and it's been interesting to see how my sis/BIL handle dinners with her crazy hours as a boarding school teacher. my BIL does not cook, and my sis eats at school on the nights she has dorm duty. to BIL's credit, he will reheat leftovers of the same thing all week - so she makes a big batch of whatever will last the week on Sundays while they are being lazy.

I call it my Italian cooking. I bring some veggies from the store and I always buy pork loin, chicken tenderloins, chicken sausages (healthier kind less fat), turkey tenderloins etc. meat that cooks quickly.
So I will put olive oil on a skillet, throw meat with garlic powder, can add some cream, chopped tomatoes, some canned beans (rinsed of course).
I have a new dinner every day and I can not repeat it to save my life because who ta heck remembers what I had thrown together.
And once per week seafood gumbo. Everything on a skillet stewed in its own juices. low fat and awesome.

honestly, I would make what I want and he can either eat it, make his own food, or go hungry. I always find it amusing that people who won't make a special meal or a separate meal for a child will be more than happy to do it for a husband. He's more than happy to make his own food... But it is usually crap like pizza or 2 PB&J sandwiches and a huge glass of skim milk or something along those lines, which certainly isn't good for him and has way more sugar and carbs than a diabetic should be eating in one meal. If he didn't have health issues, I wouldn't care. But sometimes he is like a child and left to his own, he makes shitty choices- I'm trying to keep that to a minimum. And you shouldn't have to be. As someone who has health issues, he needs to be accountable for managing them - he's not disabled, he's lazy with food. Which I get, I truly do. But he needs to understand that he will die, or lose a foot, if he doesn't make better choices. And that you're not responsible for making them, he is. As part of that, if he refuses to eat leftovers, he needs to be responsible for cooking at least 2x a week. and cooking means meal planning, shopping (or helping to shop, whatever), prepping, and cooking. He may need baby steps like "Here's what I do to come up with meals" or "here are easy recipe sites." You aren't his mom, you're his wife. And hopefully he cares enough about you, if not himself, to stop playing russian roulette with his health.

I am single, work 10 hr days, and go workout so my typical day with commute is about 12 - 13 hrs. I typically end up eating things like cheese and crackers, eggs or an Amy's frozen organic meal (actually really good for frozen food). I hate cooking and too tired at the end of the day anyway.

I never said he wouldn't cook. He'll cook if i tell him "cook this and this" for us. He generally doesn't cook for just him. but he sucks at multitasking- he can only focus on one thing at a time, so usually, 1 item will be cooled down while the other is piping hot lol unless it is frozen veg. I do the cooking because I am better at it and i actually love cooking. But right now I'm working late more nights than not, so i usually have dinner at work (paid for by my company) or I'm logged on at home and can't cook. This is why I'm looking for nutritious stuff that is mostly prepped before hand - and easy to make quickly. something that doesn't require remembering to take it out the night before to thaw (our biggest downfall at the moment- forgetting to take out protein from the freezer) Rest assured, DH isn't sitting on his ass while I'm working. He's been great about helping to pick up my slack around the house. He's taken over my portion of several of the duties around the house.

BTW, I've heard the South Beach Diet cookbook is actually a really good resource for diabetics. Recipes tend to be on the simpler side and are balanced with more slow carbs. From a friend who used to it cook for her diabetic father, not for diet purposes. There's got to be 1 billion used copies on amazon - that might be a good place for him to start to come up with recipes that are not frozen pizza.
(Again, we're married to the same dude. I know how this works.)

At this point, I'm so stressed, i just don't care anymore if I hurt his feelings or upset him. It isn't fair to me. We're gonna work on a plan to get this cooking thing more balanced and give him a couple nights a week where he is responsible.

What is up with the aversion to leftovers anyhow? My step-brother and his wife are like that. Anything not eaten after the meal is done is tossed. I was over one night and almost died when they were going to throw a half of a Papa Murphys pizza in the trash. WTH? I had to intercept and offer to take it home. Cold pizza is like the best breakfast ever (IMO anyhow).

I cook almost every night from scratch, also.
I get a lot of ideas from pinterest. If you're on there we can friend each other and I have lots of quick and easy recipes on there.
In the summer, it's lots of salads with a complex grain like wheat berries or cous cous.
Winter is about stews and soups and chilis.
Sometimes I cheat and used jarred sauces if I'm doing a curry or something.
We also eat >50% vegetarian so I don't have to worry about a frozen protein usually.
Tonight is chicken on rice with mushroom wine sauce. Last night was veggie burgers and sweet potato fries. I made enchiladas over the weekend with spanish rice, and also a veggie soup/chili.

He'll eat reheated veggie lasagnas and soup/stew reheated sometimes. but if we have grilled pork tenderloin and veggies for dinner, forgetaboutit. I take the leftovers for lunch. I am going to sit down with him and have him list out all the things he'll have as leftover and try and focus on those. I think getting back to making a very specific meal plan for the week might be a good idea. we're great at teamwork everywhere besides cooking. And I know I am partially to blame because it is my kitchen and I take over and run things. but i just don't have time anymore so DH has to step up.

I cook pretty much every night. We need leftovers for DH and I to take for lunch. Sometimes cooking might be grilled cheese and soup for dinner, or a pizza with veggies. We eat in 13 out of 14 nights. We can't afford to go out to dinner much, so we try to limit it to once every 2 weeks.

I get a lot of recipes from Cuisine-at-Home. I dropped my subscriptions to Gourmet and Bon Appetit after my first child was born!
Monday - 'skinny' chicken parmesan and green beans (myfitnesspal recipe) Tuesday - blackened ham steak and melon salad Wednesday - Greek-style chicken in pitas with tomatoes, feta and tzatziki sauce - homemade hummus on the side. Thursday - omelets - tomato-feta salad on the side Friday - can't remember!

Sorry, didn't mention what I make.... Pasta w/ meatballs, garlic bread, veggies or salad Fish one night Chicken with roasted potatoes, veggie Grilled cheese & soup Roasted chicken in the crock pot Beef roast in crock pot Some kind of fish once a week - tilapia, salmon
Summer time, I grill out almost every night. chicken kabobs are our absolute favorite
