Not for nothing, but if you're going to tell someone they're wrong about something then Internet Law dictates that you should verify your sources (or picture in this case) before using it as an example.

I will try almost anything but organ meat, and I DO enjoy lamb tongue.
I can't handle truly spicy traditional foods.
I won't eat sea cucumber or jellyfish.
I'm from Hawaii, so I miss the local style of cooking.

Looney's picture is an accurate representation of a legit cheesesteak. Cheese is logically on the bottom of the roll based on how they're made.

What is wrong with using lard in pie crusts? It's how you get the flaky texture. Pie crust made without it tastes like crap. I know that lard makes the best pie crusts; that's how DH's mother made them, although she died before DH and I started dating so I never met her. And someone mentioned pecan pie. OK, I will definitely eat THAT Southern food- and chess pie, when I can find it! There are really only two desserts that motivate me to save room/calories for them if we're eating out: cheesecake (but it has to be thick, heavy cheesecake) and pecan pie.
The "fattest" state in the US is Alabama (measured by % of obese people) and I'm sure it's a function of the traditional cooking. It was fine for farmhands, but you can't eat like that every day if you have an office job.
It depends on your source. According to Gallop, we aren't even in the Top Ten: it is Mississippi, West Virginia, Delaware, Louisiana, Arkansas, South Carolina, Tennessee, Ohio, Kentucky, and Oklahoma. www.gallup.com/poll/167642/mississippians-obese-montanans-least-obese.aspxBut I've always heard that it was Alabama and then Indiana. Delaware surprises me. but I saw a color map with red being the fattest states and the entire south was all red. The only northern state that was red was Michigan. I didn't notice Delaware because honestly it's really small on the map.
Obvious if you grew up with southern cooking, you're going to love it because it makes you think of home. There are going to be some good southern dishes, but the cuisine as a whole is bland and heavy. It's very rural, farm cooking.
This is why I don't like French-Canadian cooking. Heavy, little variety, no spices, simple food.
My litmus test for good cuisine is its universal appeal. Mexican, American, French, Italian Chinese restaurants can be found all over the world.
Southern cooking, French-Canadian or Canadian, German or British restaurants, not so much...

This is why I don't like French-Canadian cooking. Heavy, little variety, no spices, simple food. you work with what you have......which when they settled, wasn't much. there's definitely seasonings to the food, but it's just not as spicy as you're used to. that's cool, more for us

I consider American cooking to be mainstream dishes like hamburgers and Americanized versions of ethnic foods like deep dish pizza or what have you. Southern cooking for me is a subset of American cuisine with little appeal outside of the USA. Except for fried chicken!! KFC is very popular in Asia. But yes, I understand that southern cuisine is American.

It should be noted that I don't love southern cooking BECAUSE it makes me think of home. Correlation does not imply causation.
I have cooked "southern dishes" for dozens of friends from all over the US and a few in Europe as well as for my office. My food has been extremely well received, and often specifically requested... repeatedly. My husband loves it... his entire extended family requests specific dishes at cookouts. Our friends have started cooking my recipes in their home (in the midwest, England and Italy) as well as a handful of co-workers
If you've been eating bland southern food, then you've been eating food made badly. Any proper cook will season well. I detest bland food. I won't eat it or serve it.

I'd actually say the thing I like best about Southern food is the seasoning. And, no, it's not all fat, etc.
I don't make pies so I've never used lard in my life. I really don't fry chickens, either, but you do that with Crisco.
Lard really isn't the Southern staple that you guys think.

You do recognize that the South is the poorest region of the US? Poor people tend to buy what is cheap, and fresh veggies, etc. aren't cheap.

My ggma used lard in her crusts.
I might go back to that. I don't want a pie but once a year anyway. And butter and coco oil are out now, sigh. I mean, once a year, no biggie, but maybe lard would be better.
Oh, and pie has to be pecan.

I won't eat sea cucumber or jellyfish. Nearly 35 years ago I attended a 13- course Chinese wedding banquet at a restaurant in NYC. It was spectacular- well- paced so you left comfortably full but not stuffed. We even had shark fin soup which, of course, I'd never eat now. The sea cucumber was the only thing we didn't like, although a Chinese person at our table said they'd prepared it well.
