Didn't eat anything all day because of test. Main reason not to eat was if it causes dizziness could make you upchuck. Only one exercise made me kind of queasy. Following a set of lines from side to side and starting over again, that one bothered me.
So today we splurged, baby back ribs, green beans, and okra, I looked at the calories, bad for today about 1100, wow. Then at home a slice of pecan pie, at least 600, so a no loser day there. But it was good for a change, the rest of the evening after 7 drinking iced water only. It was worth it for today. I'm going to freeze half the pie to save hubs from himself. I may have a slice in a few days. Got my cutie oranges today, so later will have 3.
I see a recipe that sounds really good, calories not bad 406 per servings, carbs 41 grams per serving. Lots of veggies in it, sounds so good. It's ratatouille pasta, has 12 ounces of ground beef, red onion salt, pepper, zucchini, eggplant, olive oil, red bell pepper tomatoes with basil, garlic, and organo 8 oz of rigatoni pasta, feta cheese, cherry tomatoes and basil leaves. I think everyone here will really like that.
This sounds good too, double pepper pasta salad
Orange pepper, green pepper, 8 oz pasta, olive oil, mustard, lime zest, lime juice, green tabasco sauce salt, cilantro leave, fresh mint.
We like cooked colored bell peppers, the colored ones are so sweet. I bought a new bag of sweet onions today too, and one package of Lauras ground beef. Think we are headed to amish country one day this week, to stock up on meats.

Monday night was leftover steak, mashed potatoes and salad.
Tuesday night will be spaghetti, salad and garlic bread for DH. I'm in training this week and the lunch they provide is awesome so I won't be that hungry. I'll skip the bread. Cost maybe $6?
Wednesday night pineapple teriyaki chicken, rice and broccoli. Cost $7-8?
Thursday night beef black bean tacos. Cost $6.
Leftovers will feed DH this weekend while I'm away. Well partially feed him anyway.

last night I tweaked my plan for the week. couldn't make the Korean dish b/c the red pepper paste I had in the fridge had dried out. I ordered more, should be here tomorrow. that was supposed to be my "batch cook" for the week, so I had to come up with something else. I roasted 2 broccoli crowns and cut up probably 1 BSCB worth of marinated grilled chicken, then tossed it with a box of curly pasta and a jar of alfredo sauce. I have a portion for lunch today, and I'll work on the rest over the week.
costs: $2 broccoli $2 chicken $.50 pasta $1.50 sauce
tonight, I plan to roast some butternut and Brussels. not sure if I want to just reheat a piece of chicken or cook some other protein. I might check the fish market on my way home.

I'm heading to town to get ingredients for my Pasta Ratatouille. Hope they have eggplant, sometimes yes, sometimes no. If hubs doesn't like it we have leftover bean soup and cornbread for him.

Probably nothing. I have no appetite. When I'm stressed, I don't eat. I've lost quite a bit of weight. Some people Stress Eat, and some people Stress Starve.

I bought a small, personal size Digiorno pizza. It says that it serves 2, but not at if I am eating it. I put pineapple bits all over it because I love pineapple. I was pleased at how it turned out. I am not a pizza expert, but it was tasty and I felt right-sized.

Tonight is going to be hot dogs. I have regular bread instead of buns that I will use.
I believe that I will be doing a shrimp stir fry tomorrow with jasmine rice that will be done in the microwave. Than since I will have leftover rice I will cook a piece of fish and have it with salsa for dinner Saturday.
Sunday I will pull out some frozen soup for a few meals.

I need to cook rice and chicken for the pups tonight. they will definitely finish what's still in the fridge, and I may have to get creative with other random protein/veggies to throw in the bowls to fill in. I might stop at Market Basket and grab a rotisserie chicken for that, idk. I still have leftover pasta w/grilled chicken and roasted veggies, in two versions. I had a portion of one for lunch just now. I'm so sick of pasta this week...someone remind me not to cook pasta at all when the weekend batch cook is pasta. please and thank you! dinner may be a quick Caesar salad for me, with either some rotisserie chicken or the last piece of grilled BSCB. ETA: scratch that. rice and split chicken are in progress for the pups. I nuked some pasta, will clean up my act next week, if not over the weekend. I don't have the brainpower for anything else tonight after all the damn calls I made this afternoon. I won't lie, there's also a very large cocktail next to my tupperware container. ^$# everything right now. next!

I have enchilada pie in the oven, but I used pork tenderloin instead of chicken, I cooked it yesterday and wondered what I would cook it in. The dish contains, onions, black beans, corn, enchilada sauce, various cheeses, cilantro, and garlic in a tortilla nest with a tortilla and cheese on top. It may be a bit soggy, as I do not have a spring form pan so had to use a coated iron skillet. Baking now for 40 minutes. It smells good. Hubs and DD had tortilla chips and salsa, but I started to eat some and could not. The salt was more then I could handle, never had that problem before. I guess I'm getting used to less salt.

tonight I nuked a small bowl of leftover chicken broccoli alfredo. I'm tired, going to bed shortly, wasn't really hungry but definitely should have eaten *something*, and these leftovers were getting pitched tomorrow anyway.

I made ham salad, DD has been wanting it, not a lot. I may just make some sandwiches from it, its a very nice spiral ham. The rest will go for bean soup later. May have a salad and some veggies with the sandwiches.

I'm going to make a batch of minestrone for the week, lots of rain expected. again. I also have a package of 2 BSCBs in the fridge that have a date of yesterday, oops. if they smell okay when I open the package, I'll shred those and make tacos for Cinco de Mayo. how festive lol... if not, I'll grab some soup.

Didn't matter, however, as our neighbor came over with her twin 4 year olds and their dog, so we were a little sidelined for over an hour. Ended up making burritos after all, since they are quicker than enchiladas.

I'm going to make a stir fry I think. I have BSCB thawing out and plenty of veggies. Now that the freezer is defrosted, I have to refill it. May is going to be an expensive grocery month I think.

finally made the minestrone tonight. I usually use 2 cans each of dark red kidney and cannellini, and I only had 1 can of dark red kidney. oops. village market had pinto or chick peas (never) so I ended up using one each of dark red kidney and pink beans. I missed the extra beans tonight, but I only had a cup of soup once it was done. I'll appreciate the beans not soaking up the liquid the rest of the week.
dinner tonight was that cup of soup a couple hours ago, and then another small cup of "taco bowl" with some warmed.up leftovers from last night.

DH was supposed to go to a meeting tonight that included dinner, but he decided to skip, so I had to stretch leftovers—roasted broccoli and a fat slice of meatloaf— to feed 3 instead of two. It was going to be free, but I added some frozen jalapeño poppers from the freezer, so $2.50, I guess.

I don't know. I have plenty of fresh veggies, ground beef, polish sausage, all kinds of stuff, to cook. One night making spinach lasagna, one night stuffed poblano peppers, we sure like those. I have 1 piece of salmon to bake this week.
First I need to get in there and clean my fridge, all kinds of little bowls of leftovers that either need eaten or pitched. Some nights I have all the leftovers for dinner, we eat and then pitch the rest.
This morning had a cup of coffee and 2 slices of raisin bread. I will have ham salad, maybe left over bean soup for lunch.
