a suggestion for something different? stuff those poblanos with a veggie/egg scramble. add some chopped breakfast sausage or bacon to the pan if you want. that's my go-to brunch WOW dish.

I put in the instant pot before I left today, stew meat, onion, celery, and water getting ready for veggie soup. I took it out to cool for fridge. Good meat for a change, it smells wonderful, should make good soup tomorrow. I do like Fresh Thymes meat, its pretty good.
I'm hungry. I was very bad today. I had 2 eggs and bacon for brunch. On the way home a piece of fish, 3 shrimp, and a crab cake from Long Johns, grease and likely cholesterol from all those. I was just craving stuff today. Now I'm hungry and eating some dried cranberries. Maybe I will heat a can of tomato soup.

I did my week's meal prep today, since tomorrow is already jam packed. both of my meals today were picked from the prep. I am done today, the dishwasher will be running for the third time when I go clean up the kitchen in a bit. prepped for the week: pasta salad - 1lb bowties, probably 2lbs veggies, Italian dressing and seasonings. if this is more than a side, I mix in a bunch of chopped lettuce to my portion. grilled chicken - Weber black peppercorn marinated chicken tenders and thighs mixed salad greens - just chopped, but I do it. shredded chicken (pups) - split chicken breast in the IP. I still need to shred this. still need to make: pesto, strawberry pico for dinner tonight, I mixed up some bruschetta. I found asparagus in the fridge that's close to pitch, so I roasted some and cut that up with some of the grilled chicken. I tossed that with a bag of cheese tortellini. there's another portion of tortellini as well as leftover bruschetta for whatever else. I am now full, and the kitchen is closed. 😎

Chiv, everything you show looks delicious. With your schedule, I don't know how you find the time and energy to cook.
I wish I had the interest to fix one meal, let alone for an entire week.

aw, thanks! honestly, most of the week I don't do more than reheat stuff that should be hot. maybe boil off pasta to add to leftovers that didn't already have some, or chop some lettuce for a salad. if I can crank out prep on the weekends, I get back so much time during the week. I didn't subscribe to the idea of meal prep until I had to, and it's gold.

We had a beef roast with potatoes and carrots. It smelled good but couldn't say a lot for taste, just ok.

DH had some of the salad before I got home. I have another sinus infection and my whole face down to my teeth is hurting. I had DH throw the leftover chunk of lasagna from the freezer in the oven for me. He made it last October so I'm calling it free.

Salad with cucumber, radishes, tomatoes, arugula, spinach , feta and avocado - along with a fresh pita & hummus.
Cost - probably 5$ with one portion left for lunch

Tonight is going to be salad and I have some cheese tortellini that I will cook up to help with filling me up. If I am still hungry I will have a sandwich. Tomorrow is going to be the 4 pack of veg spring rolls I picked up -- I am going to be home late so don't want to fuss about food. Thursday will be soup -- I have several in the cabinet I just need to pick one. I intend to roast a chicken on Friday and have that over the weekend. With the leftovers I will make chicken burritos.

last night, I picked a small carton of corn and poblano chowder to heat up. I added some roasted corn/jalapeno left over from the weekend, and some grilled black peppercorn chicken. it was tasty, and I ate all of it. oops. lol...
tonight is hockey, and I'm going to clear a junky food out of the fridge - a refrigerated pizza from the grocery store. it's branded the company where I used to buy dough balls back in my old place, but I haven't had the prepped pizzas you can buy in the grocery store before. it's a white pizza, with spinach and garlic, and I'm going to add stuff to it before cooking - the rest of the bruschetta mix, some grilled chicken, maybe some sliced mushrooms.

I can't wait to eat. I went to my favourite Middle Eastern market...their bread and produce are excellent. Fresh pita stuffed with with grilled sweet onions, peppers, shitake mushrooms, red peppers, zucchini, roast chicken, tomatoes, lettuce and lots of hummus.

that sounds outstanding. I wish I liked hummus lol.... thanks for the ideas, though. I'm hitting the grocery store when I drag myself outta this bed. I think roasted veggies are totally in order. I can find some decent pitas. ETA: I found these, they looked interesting. Joseph's is one of the better brands I can find around here, and I usually cut the pitas in half. these have the work already done! if they suck, I just won't get them again. oh, and I picked up lots to roast - eggplant, asparagus, broccoli, red onion, grape tomatoes. and tabbouleh. I know what I'm having later😋

I bought a 2 pc. chicken dinner from the grocery store yesterday afternoon. Their chicken is outstanding. I only ate 1/2 of everything so will remainder for dinner tonight.
I do need to make a run to the grocery store today before the rain sets in, veggies will be at the top of the list.

I know Target carries it around here, in addition to some grocery stores. it's a little bland on its own, so I add at least more seasoning, if not chicken (it's vegetarian) and more veggies.

But for those who do, and for those who also like hummus, there are makers of chocolate hummus out there like Boar's Head. I had some chocolate hummus with fresh strawberries last week. Rather tastey.

Thursday night we grabbed a pizza as we places to be after work.
Friday night was take out from the local Italian place by grandma's.
The rest of the weekend is probably more of the same. Grandma doesn't care to cook much anymore. I could cook but she prefers for me to take her to places that the others don't.

Tonight we're having herb chicken with mashed potatoes and some kind of veggie. I need to go to the store tomorrow. I'm working on refilling the freezer after I defrosted it. I'm surfing meat sales and buying things in bulk.
