I had another 2 oz beef filet sautéed with onion, red & green peppers. Don't know about tonight as I have a meeting to attend and have to leave no later than 6 PM.

~Last night: Easter at a neighbor's house. I brought pasta salad. $5 with a ton of leftovers ~Tonight: Breakfast for supper consisting of pancakes, sausage, eggs. Approx $6 for 3 servings ~Tues and Wed: Out on business. The company pays, so just the fuel and partial hotel charge because, you know, there's no such thing as a free lunch. $120-ish plus incidentals, aka cocktails. ~Thurs: Something easy as I'll be traveling home that day. ~Fri: Take out from? ~Sat: DH's aunt and uncle will be here, and he wants to treat them to an authentic Colorado mountain dinner. I think he's going to smoke a brisket or something. Cost? Have a fantastic week, everyone!

chicken thighs were still fine. roommate said he'd be more likely to help with cacciatore leftovers than arroz con pollo. I haven't had either in awhile, so I didn't really have a preference. so, cacciatore is in progress. my.only complaint is I can't put mushrooms in it since he's allergic. oh well, I'll live. there's 6 pieces of chicken , so this should cover a few meals this week.

Asian soup bowl with shrimp broth ( I save the shells, as they're loaded with flavour), noodles, chicken, corn, green bell pepper, spring onions, peas, sesame, gochujang, and anything else I can find. I'm trying to use up as much food as I can before the Big Move on Saturday.

Hubs is having hot dogs, with mac and cheese. DD had sushi earlier but decided she wanted a couple hot dogs. I had baked chicken I bought and yes CARBS, a small bowl of mac and cheese. Earlier had to have a drug test, so ate lunch at the hospital. I had baked chicken, green beans, and carrots steamed and a small serving of walnut salad. They have good healthy food there. Need to run in there and eat more often when I'm in town.

Need to run in there and eat more often when I'm in town. When I was hospitalized at the Montreal General Hospital, the food was insanely good...and I'm a foodie! The salmon in a creamy dill sauce sauce was to die for, and the Thai food was incredible. Naturally, the kitchen has a list of what you're not supposed to have, so when I ordered cabbage rolls, they said "No cabbage for you! You can't digest cabbage!"

I might fire up a burner once or twice a week now. Like what? A little bit of something goes a long way since it's just me. When I do cook it's usually enough for 2 or 3 meals. I don't want to eat the same thing for a week.

I usually do one thing that can be repurposed as leftovers, so I'm not eating exactly the same thing all week. I'd get bored with that, too. obv a batch of soup is the same thing, but for example - Sunday, I shredded a BSCB with chili seasonings. M and I made tacos during hockey, and I'm having the rest of the chicken on a salad for lunch today. that big pan of chicken cacciatore last night can be reheated as-is, or I can pull the meat and make sandwiches/salads. I stored most of the veggies with the rest of the pasta (I cooked about 2/3 of a box) and can either have just pasta and veggies again, or pair with a different protein - maybe a portion of baked swordfish if that's available at the market this week. in the summer, I'll make a big batch of veggie loaded pasta salad and leave it in the fridge to pick from all week. I can easily grill off a protein and toss it in. I also like to mix in shredded lettuce to a portion of pasta salad to lighten it up a bit. had I made the cacciatore Sunday like was my original plan, last night would not have been a cooking night. I try to do up something every Sunday, to make the week easier. after sitting in the car for 2h to get home yesterday, a no-cook night would have been ideal. oh well. anyway, just my two cents. YMMV

I can't say I'm all that organized, either. but there are certain things like romaine hearts and some salad veggies that the pups will eat that are always in my fridge. just a new habit to create, buying and having them on hand.

That would require me going grocery shopping. I'll have to look at the grocery thread, but I've only been to the store once in April and only spent $43. I was supposed to go again this weekend, but I drank beer instead. 🤐

DD had sushi for lunch, me leftover baked deli chicken. Had our class planning meeting for 2 1/2 hours. So nothing prepared for dinner, DH took DD and I out for dinner. They had tortellinis, I had a chef salad and a small piece of garlic bread. It was good food, but about $30.
Home hubs finished off the cake I baked yesterday. I'm thinking a piece of the chicken but have already brushed my teeth.

My mother used to lungs for the cats for free from the butcher....nobody else wanted them. --------------- Heart, liver, kidneys, pancreas, gizzards and brains are probably the most common or more easily obtainable organ meats. My in laws didn't want to deal with cleaning their grill and getting propane and so on. They brought filets up for dinner.
I provided sauteed peppers, mushrooms and onions to top the filets with, mashed potatoes, salad, grilled asparagus and chocolate cake and ice cream for dessert. Maybe $12? I made the cake from scratch so I have a hard time costing that out. All made from stuff I always have on hand and replace as needed.
There are 2 filets left along with salad and potatoes for our dinner Monday night. And there's half a cake left.

I'm craving veggies. I think tonight I will roast some butternut and Brussels. not sure what else yet. maybe marinate and grill (pan) some chicken, make extra for the week.
I also have ground pork and kale to make a Korean dish for the week. that didn't get cooked yesterday, so I'll knock that out some time today.
ETA: chicken went in the marinade before I started spreading crushed stone in the driveway.
