I ended up making a burrito bowl with a bunch of shredded romaine, and I'm having one taco made from the filling. I really don't need the extra calories. saffron rice. romaine, black beans, pico de gallo, guacamole. and baked cod seasoned with cumin, hatch chili powder, garlic powder and Mexican oregano. this is outstanding. That looks delicious. Must make tacos this week! Or if I’m good, maybe a taco salad and one taco, or something like that. Dinner tonight is beef cubes over random leftover noodles (definitely have penne and rotini. I think there’s something else in the fridge, too.) and frozen corn. If there’s anything left I’ll take it for lunch tomorrow. If not

leftover noodles is a funny thing. I keep a box of mixed dry pasta cuts with the same cook time, basically just the ends of whatever else that gets opened. makes for some fun pasta bowls now and then

Monday night hamburger helper from scratch. Not making this again anytime soon. I didn't feel the greatest after dinner but that might be something else. Anyway it used up 2 cups of milk that's expiring soon. DH thought it was great and wolfed down two bowls. I'll say $5 max maybe less.
Tuesday chicken wraps made with shredded chicken, black beans and a cheesy broccoli rice combo. $6? Guess it depends on how many wraps we use.
Wednesday night chicken fajitas in the crockpot. I'll say $9. We should have leftovers for Thursday.
Friday afternoon I'm leaving town for the weekend and DH is on his own.

after going out last night for new music (and dinner) tonight was all about using up leftovers. I made chicken and black bean quesadillas, swiping a little bit of shredded BCSB from the pup stash. they won't miss it. side of saffron rice with pico.
I still have more than a portion of ch8cken piccata and pasta, even though I've taken random forkfuls of the separately stored pasta when I just needed a bite of *something* over the week. I think I should probably just cut up extra chicken for storage when I make piccata. I thought maybe I'd use it for a salad topper? idk.
anyway, cost - minimal. repurposing of last weekend's leftovers. I also used shredded cheese that is near expiry, a 100cal guac tub, and a couple small tortillas. so that may have been $3?

I am thawing pork for stir fry, but may have it with rice and black beans. Also a garden salad and perhaps fried potatoes. When I don't know what else to cook hubs always likes potatoes. Last night was fajitas, they were sooooo good.

meeting my cousin and her family for dinner tonight, they are down for the weekend. I'm taking them to a local landmark seafood pub, so my options are definitely limited. I'll probably end up with a Caesar salad.

Last night was lasagna, salad and garlic bread. $12.40. No leftovers.
Tonight, will probably pick up chicken from a venue near where I'm meeting family. Cost unknown. Monday: Italian beef sandwiches and salad. Cost: $8.30. There will be leftovers. Tuesday: Have some pizza that we got on Fri. (leftover)
Weds: Pork chops, potatoes, salad and carrots. Est: $7.80. Good chance of leftovers. Thurs: Not sure, possibly some fish. Fri: Liver and Onions for hubby. ( ), Me, probably grilled cheese or Mac and cheese. His Cost, about $7.50.

DH topped his with salmon. I don't remember how much the bag of salmon filets cost. A lot more than mine though!

Chicken and broccoli stir fried and served over rice. There’s enough for dinner on Tuesday and my lunch tomorrow. Might serve Tuesday’s with pasta instead. DD asked for (shocker) spaghetti and meatballs tomorrow. Pretty sure she might actually turn into spaghetti and meatballs one of these days. Not sure about the rest of the week yet. Might depend on the weather. Maybe I can get DH to grill Wednesday or Thursday.

dinner last night was a calzone (chicken, broccoli, spinach) at the sports bar. cost was free, bc M insisted on picking up the tab. 🤷♀️
dinner tonight is going to be arroz con pollo, chicken thighs were on sale this week. I bought a package of 6 for about $3. this will be my batch meal for the week.

Busy season has hit hard! Last night I ended up making wraps (tortillas, lunch meat, etc.) and served them with soup for DH and leftover Thai for me. $8 (Made 6 wraps, enough for our dinner and 2 lunches.)
In the Crock Pot for tonight is the corned beef DH forgot to put into the smoker early enough yesterday. $14 on sale. Fried turnips on the side. Tues: In the big city. Planning to use the remainder of the Applebee's gift card from Christmas. Wed: Either shrimp stuffed eggplant or bacon wrapped shrimp. Meh, I'll do both. Why not? Approx. $15 Thurs: Out with friends. Fri: Grazing while out Sat: Ribeye with trimmings Sun: IDK yet Have a fantabulous week, everyone!

Tonight is the remainder of the Turkey tacos that I have been eating since Sunday. Tomorrow I am thinking of Moroccan Veggie Lentil Soup to get some things out of the freezer. Either that or I will do spaghetti with veggies.
I am kinda thinking that I will do the spaghetti for now and make the soup for the weekend.

I fixed DD and I some frozen chow mein, wow, that stuff has SALT! I read 38% of the daily requirement. I couldn't eat it all, that was in the soy sauce, not sure what was in the noodles, it was salty too. I couldn't eat it about half, I don't want anymore of that. I'm trying to clean out the freezer, I think that might go in the trash, bad. Maybe I could load it with a can of oriental or fresh veggies, but not worth it I don't think.
I had some meals in the freezer to make quickly but they are being eaten and no more are being added, yuck. I don't know how people eat that stuff. I get tired of cooking from scratch but its so much better for us.

I just sliced thin strips of a 2 oz filet. Plan is to saute the beef and then toss in a handful of frozen peppers & onions. Likely will add a fresh baked croissant.
I added some salsa and sour cream and turned it into a shell-less fajita.

I still haven't made the arroz con pollo, and it's not looking good for tonight, either. last night, I just didn't want rice. I picked up some salmon from the market, baked that off. paired it with roasted asparagus and baby bella mushrooms, and a package of Buitoni wild mushroom ravioli. there's enough for another meal.
this afternoon, I picked up a rotisserie turkey thigh when I stopped at the store for other stuff. I shredded that when I got home, and will toss that with roasted "Thanksgiving" veggies and probably a little pasta. that will carry a few meals. I've got butternut and Brussels to roast, and then baby spinach, Craisins and slivered almonds to mix in.
turkey was $3.99. not sure on the rest of hte costs.

I had leftover spaghetti. DH was grabbing something on the way home.
Chicken quesadillas tomorrow or something else with chicken. I thawed a cup portion of shredded chicken this morning because he wanted quesadillas.

still no arroz con pollo, likely won't end up happening now. I made so much white rice for the pups, I'm going to need to make fried rice for me with some of it. oops. will likely make cacciatore with half the package of thighs, hopefully tomorrow night, and will freeze the rest.
dinner tonight was a bowl of Panera chicken tortilla soup ($3 at the grocery store prepared food case) that I garnished with shredded cheese and crushed tortilla chips. not sure why I bought this, it was really bland. I need to not do that again.

I made chili tonight and a cherry pie. Used up cherries from the freezer. Both were just so so. DD had the last of her sushi.
I only had 2 slices of toast this morning and kippered herring a crackers for lunch so I ate 2 small bowls of chili and a very small piece of pie. I was hungry. Ate less then 1/4 cup of cranraisons. Water and tea with sweetener till I go to bed. Likely won't lose today was 182.5 this morning.

I used up some aging veggies and the small container of white rice from yesterday, made fried rice. I didn't have any leftover proteins, so I opened two cans of chicken (I made THAT much rice yesterday, oops!). I could have made way more tonight, and may likely make more once I eat today's leftovers.
today's mix was onion, garlic, white mushroom, scallion, and chopped roasted broccoli crown (it was quicker to roast than wait for it to saute).

I'm roasting about a dozen chicken drumsticks. Tossed in some yellow Yukon potatoes and sweet potatoes. Will serve with corn or cherry tomatoes. Around $7.00.

Chicken breasts were BOGO this week, so I baked three tonight with a crunchy coating, served with mashed potatoes (I had three left from a package of four) and the last of the fresh corn off the cob. I combined the corn and potatoes and will add eggs and flour tomorrow to make potato corn cakes as a side dish for dinner.
