I just ate the last piece of fresh salmon I had, it needed to be cooked or frozen, so baked it.
Tonight, mac, ground beef, stewed tomatoes, maybe corn, green beans, or maybe fried green tomatoes with it. I like them, but the oil. I mix about a tablespoon or two of bacon grease now with them to give flavor. I used to use just bacon grease period.

I finally found a frozen turkey breast that isn't too bad sodium-wise, and that is in the oven.
Trying to find no sodium added turkey is difficult, especially this time of year. If nothing else can be done with something, they add more salt.

If nothing else can be done with something, they add more salt. do you mind sharing the brand? I try to buy the lowest salt options I can find. thank you!

well, after spending almost 2.5h in the car to get home, I'm working on a solid pour of whiskey while I cook rice and kale/ground beef for the dogs. I may heat up a can of soup before I just call it a night, I might not.

ground turkey was on sale yesterday, so I made myself a meatloaf. Italian seasoned, with chopped onion, garlic, parsley and sun dried tomatoes mixed in and bacon on top. garlic mashed and broiled asparagus. between this and yesterday's pot of minestrone, I shouldn't need to cook much this week. 👍

I was cleaning out the fridge.....had some soft yellow Bell peppers, carrots which have seen better days, an onion which had sprouted, a chicken leg, a soft tomato, a potato, some leftover Swiss chard and dill, etc. I threw it all in a pot and made soup. Came out pretty good. DS had two bowls.

Heating up some calzones/hot pocket things I made about a month ago and froze. We were going to get take out then I suggested these. I eating the last of the salad while they bake.
Monday night will be Budget Bytes unstuffed peppers. That should make leftovers for another night.
I need 2 more meals preferably without lots of leftovers as we are away again next weekend. Maybe taco salads one night.

Thurs: Pork chops with homemade BBQ sauce $5 for 4 servings
Fri: Take out from? DH pays
Sat: Leftovers $0

I'll get at least two dinners out of the pan. Maybe more.
There's a DH sized serving of the unstuffed peppers left. If we are scrounging Thursday night it'll be fine. DH has to pop into a farewell happy hour anyway so he may snack there.

last night I met a coworker from the train wreck job for an early dinner. there were some cool people there, in roles that wouldn't have been as affected by what made me have to GTFO. this woman was one. we're going to try to meet up every few weeks, which is cool. I said I would miss *some* of the people there, and I do. anyway, "early bird specials" at the place we went last night. $18 gets you a salad, smaller portion entree from a limited menu, and a small dessert. that works. I picked chicken broccoli alfredo, it wasn't bad. probably wouldn't get it again, though. I had salad, bread and dessert, and a few bites of the pasta. the rest is for lunch today. we split a bottle of a nice pinot noir as well. dinner tonight will either be a Caesar salad or some turkey meatloaf w/mashed, depending how hungry I am by that point. still working off the meal prep from the weekend. I like it.

We had the planned tacos last night. It was my first time using cooked and seasoned ground beef made ahead of time and put into the freezer. So convenient for a work night!

Hubs ordered a mushroom pizza on the way home. DD was thrilled, I didn't have to cook, so no complaints, I only ate 2 pieces. Pizza doesn't set will with me.

I just took out some chicken ka-bobs from the freezer that I bought at The Fresh Market. Will bake all 5 of them and have enough for dinner tomorrow night too. Have some white rice that only needs to be heated so that will be dinner. tonight.

It was so pretty out, I had the heat off and the screen room door open. So I decided to grill the pork kabobs I bought, fixed wild rice, and grilled seasoned cauliflower steaks It was pretty good.

yesterday I batch cooked for options for the week. this week is going to be a little crazy with a mid-week concert, but if I can keep the eating out to a minimum, I'll call it a win. breakfast fixins are scrambled eggs w/black beans and pico, with cheese for rollups. -can of black beans, 50 cents? -pico - made with veggies that were use-or-pitch. serrano pepper was .25? -tortillas - $2/8pk -American cheese slices, $3/lb lunch/dinner was a batch of chicken piccata with pasta. I had promised a friend I would write out my routine the next time I made that, and had been craving it since she asked me about it. -chicken cutlets were the same price as BSCB, so I just bought those to save myself work. $2.49/lb -shallot, lemon, parsley maybe $1? -butter, chicken broth, pasta, capers were all here already, no clue on $

For hubs and DD, other half of spinach lasagna, I will add a salad and maybe a couple slices of garlic bread.
For me balance of wild rice and cauliflower, not much left. I don't really want salmon again tonight I have 2 more pieces. If I have a burger will cook it on the GF grill. Also will be half beef, half turkey. Not sure on the meat or if I will have meat. I intend to lose weight.
I have found I need at least one diet coke or pepsi a day or I'm starving, thought it was supposed to be the opposite.

I have chicken out to thaw. When I get home I'll make my marinade before I go to the gym. 2 tablespoons of honey, 2 cloves of garlic, slat and pepper (heavier on the salt), cilantro and a beer. I'll cook it while I shower. Hopefully I'll have dinner before 10.

I made pico and guac yesterday. I had a taco salad and tomorrow I'm having tilapia with pico. Tonight's chicken as well as taco leftovers will be lunch for the week. I need to stop buying lunch and bring it with me.

I ended up making the pork chops yesterday. They simmered in the Crock with homemade low carb BBQ sauce. The house smelled divine! Tonight: Leftover venison roast from the freezer. $0 Tues: Venison spaghetti $4-ish for 4 servings
Wed: Not sure yet? Probably more roast
Thurs: Leftovers $0 Fri: Takeout from? Sat: Burgers w/ sides $5

I ended up making a burrito bowl with a bunch of shredded romaine, and I'm having one taco made from the filling. I really don't need the extra calories. saffron rice. romaine, black beans, pico de gallo, guacamole. and baked cod seasoned with cumin, hatch chili powder, garlic powder and Mexican oregano. this is outstanding.
