I'm stressed and depressed and don't feel like cooking. I just had a tuna sandwich for supper.

Saturday night we went out and DH paid. $52 pre tip. Mine was merely meh.
Sunday night pork chops, sweet potatoes and salad. Estimated costs $4? My family bought a pig late last summer and I don't even remember how many ways we split it. Further I think my dad refused to let me pay for what he gave me.
Monday night instant pot spaghetti and salad. I'll say $9 and we will have leftovers.
Tuesday night teriyaki pineapple chicken, rice and steamed broccoli. $7 and we'll have leftover chicken.
Wednesday and Thursday will be leftovers. If we are running short of leftovers, we will bake a couple of the homemade hot pockets I made and froze.
Friday and Saturday night are out because we are out of town.

last night, I was going to roast a bunch of (older) veggies and toss in some pasta, but the first ones I grabbed were beyond help. so I went to the dive bar and ordered a pizza to go. had a drink while I waited, as well. $20, including tip. I have leftovers for a couple breakfasts, if I get to them. if not, whatever.
tonight, I'll either do chicken tacos or something with some thin sliced pork chops I picked up for $1.50 when I stopped to grab stuff for tacos.
batch cook for the week will be Cobb salads. well, as long as the boiled eggs turn out okay...last batch didn't. I have some 100cal packs of guacamole that can stand in for diced avocado.
ETA: eggs turned out perfect. I'll be frying some bacon for those Cobbs a little later. and since I'm going to have a pan of bacon grease, I may as well cook up a few more strips and make pasta carbonara tonight. there's always eggs and parmesan in this house

I went to the store today and bought lots of nutritious foods. Then proceeded to eat fried chicken for dinner. Oops.

We were out an about to another city today so we ate out, Mexican. DD and I were not hungry so tonight just snacking. Hubs is roaming in there, ate a can of cherry pie filling, now peanut butter. He doesn't diet well. DD ate nothing, I have had a few small slices of summer sausage and now eating cottage cheese.

I drove my wife crazy on this. She swore she always had a couple of cans on hand. Then she went to make a pie........ Just something so....fulfilling on all those cherries and sugar.

Tonight spaghetti and I may bake a cake. This is my birthday and I was going to order one but didn't. It's a gray ugly day out. Very depressing.

Was cleaning off the back panel of the stove. Somehow the oven door is now locked. Thank goodness its not cleaning as all my skillets are in the oven. I need to double check. But I cannot get it to unlock, its a touch panel.
I pulled the stove out and the plug is down almost to the floor so have to pull it out all the way. That will likely reset it. But it takes hubs and I to put it back to keep from crimping the gas line. So I can't bake my cake, sigh.
Then I just spent 20 minutes or more trying to find my kippered herrings to eat for lunch. It's one and done very little. I did get 2 of my heart healthy cookbooks, so going to go through those.

I am still attempting to try and find things that I can eat comfortably right now. I had 3 root canals done last week and my mouth still is sore and bruised on the left side. I have a banana and think I will be pulling something out of the freezer. I am tired of soup.

I nuked the rest of last night's carbonara and ate more than I needed to. oops. I had a chicken Caesar wrap for lunch. I really need to figure out the timing to eat 2x/day, I feel so much better when I do that.
i also prepped salad stuff for the next two days, so that's a win. pups got the BSCB I bought this weekend, boiled. will shred tomorrow when I get home. tomorrow am for them will be the end of the ground beef and kale, and a small can of chicken, to split.

I’m trying to figure out something with more protein to have for lunch. The salads aren’t keeping me full, even with hard boiled eggs, tuna, shrimp. I’m dragging in the afternoon and stuffing myself with candy, cookies, etc late afternoon and before dinner.

I found the last chicken I had in the freezer, I think it must be 1 1/2 to 2 years old. I thawed it and wondered about cooking it being so old. But that farmer that raises these and has them wrapped sure has them use some heavy duty wrapping. I thawed the bird and it looked and smelled good, so I popped it in the instant pot and cooked it. The meat is falling off the bone and it tastes good. I gave BJ some skin and bones. Tomorrow will pick the meat off. I'm going to make chicken, shrimp, and rice from half the broth and chicken and noodles from the rest. I was totally surprised it was still good. I'm working my way through the freezer. Cooking what's good, pitching the rest of it. I have a piece of salmon I need to cook also or freeze it.

All meals have been cooked according to the plan. I think we have plenty of leftovers. We have a bag of salad, 2 pork chops, at least 1 serving of the teriyaki pineapple chicken, and a big container of instant pot spaghetti. I should have enough for lunches on Wednesday and Thursday.

I had glazed pork chops on Monday. I had a bag of veggies last night. Tonight I'll probably have the pork chops again. I've been on my own for dinners lately, so I haven't really been cooking much.

I think I might make a salad tonight. I don't want it to go bad while we are gone. And the frozen chicken strips need used according to their date.

I'm craving fish again. might stop in at the fish market to see what came in today. I can bake that off, put it over a big Caesar salad and call it good. lately, they have had amazing local cod and Atlantic salmon.

Thanks everyone for the suggestions. I went and ended up doing pancakes. I will probably do scrambled eggs with toast for dinner tonight. I haven't done any grocery shopping for about 2 weeks and am still not inclined to go to the store though I am adding some things to my list for later.
