TD had a work event yesterday where they provided Mexican food for lunch. At the end of lunch, there were a lot of leftovers and he managed to get a TON of sour cream. The amount is probably the equivalent of what you'd find in about 5 pint sized containers.
What the hell do you do with this much sour cream? Can you freeze it?

Make Chicken Paprikash or Beef Stroganoff or Hashbrown casserole. I don't know why you couldn't freeze it. Other dairy products freeze well.

I had no idea you can freeze it! WOW! Live, learn, die stupid... DH having it for breakfast each morning. A few spoons. I put it on stuffed cabbage. Borshch. YUMM!

That's good to know. I think I'll divvy it up into containers and shove them in the freezer. When I went to the grocery store earlier this week, I just bought a pint (normally this will last us about 2 weeks). Oh well.....
I love sour cream too, but my weight does not!

What can I say? my sis and I were talking about this over the weekend, I think I just can't handle stuff with cultures in it. not for lack of trying though... even back when Hood packaged up their cottage cheese in yogurt-sized containers, I made a face after the first spoonful. looked at the label, and go figure - it said "contains live yogurt cultures"

You can freeze it - but it won't have the same consistence when you thaw it - so it might not be so appealing on top of tacos for instance but will be fine to add to a casserole or cake or other recipe. As much as I love sour cream (like I can stand in front of the fridge and eat it with a spoon), freezing it makes is gross to *me*
You can bake with it There are tons of chicken recipes that have sour cream in it I make salads with it

There's a cheesy potato recipe I have that has sour cream. I bake up a big batch and portion it out and freeze it.

Bleu cheese dressing. Homemade tartar sauce. The salsa-mixed-with-sour-cream concoction is yummy on fish tacos. Put a spoonful of sour cream in your bowl of chili.

Cream soups taste wonderful when made with sour cream. Just be careful to add the sour cream last and don't boil the soup or the sour cream will separate.
Mashed potatoes, stir it in instead of milk and butter, it tastes great.
Chip dip and vegie dip. I buy store brand dry ranch seasoning or onion soup mix for about 65 cents a packet and stir some up.
White chili with chicken and beans is another good recipe.
As other posters have said, don't freeze all of it because the frozen product will have a grainy texture upon thawing. Frozen sour cream is fine for use in recipes, but not good as a topping or in a dip. Sour cream lasts a long time in a cold frig.
