Hello, I'm looking for a corn bread recipe as the title of this thread indicates.

I don't really have a recipe, but here's how I make it.
~3/4 c. self-rising cornmeal 1 egg ~1/2 c. buttermilk ~2 Tbsp veg. oil
Put oil into 7-8" iron skillet and place into oven while preheating to 350. Mix cornmeal, egg and buttermilk together - should be about the consistency of pancake batter. Once the oven has reached 350 remove iron skillet and pour oil into cornmeal mixture and stir (this will probably sizzle, so stir it in quickly to keep it from cooking the mix). Pour everything into iron skillet and cook for 20-30 minutes or until golden brown.

We make "Spoon Corn Bread" here... Use a little box of the cheapest Corn Muffin Mix; stir together as indicated on box. ADD: Pepper and Garlic (I use the dried minced variety for this) to taste, a can of creamed corn (the cheapest brand works just as well as the most expensive); a cup of shredded cheese (we like cheddar) and bake at 350 degrees until a toothpick comes out nearly clean (usually about 45 minutes to an hour for a triple potluck batch--the only time I make it--this "recipe" is for a single batch). Sprinkle a bit more cheese on top and let melt either in the cooling oven or for just a few minutes if you keep an eye on it. Yes, I know I really should measure these things sometime, but in perpetuating the lack of measurements, I taught my kids how to make this using the "track a rabbit method". For a bit of zing to regular muffins/bread, rather than just making corn muffins as indicated on the box for chilli, I will add garlic, crushed red pepper, sauted onion to the batter for a little extra flavor. I can usually find the boxes of the muffin mix for 35 cents or less each.
