This might not count, because it's a crock cooker meal, but it's fast, cheap and easy. If I could remember where I got the recipe, I would give credit for it... sorry:
(all measurements are rough estimates) 16 oz frozen corn 1 lbs boneless chicken (straight out of the freezer is fine) 1 packet taco seasoning 2 cans beans (pinto/black) 1 jar of salsa Layer everything into the crock cooker: corn, chicken, sprinkle on the taco seasoning, in the beans, and top with the salsa. Cook about six hours on high, or 8 on low, and enjoy! Serve with tortillas, or rice, or tortilla chips, and any cheese, sour cream, or fresh taco toppings you like. Hope you like it as much as my family does!

Chicken in the Crock Pot
I experimented tonight with the crock pot & some random things I had in the cupboard, and they came out perfect! Not quite sure what to call it....
1 chicken breast (was already cooked) 1 can of corn (who knows how long that was in the cabinet....) 1 can of Rotel 1 can of diced tomatoes 1 package of instant spanish rice
Put chicken in the crock pot, shredded a bit (it will shred more as it cooks). Add the canned items without draining them. At this point it will be spicy from the Rotel, but you can take it up a notch with some more taco seasoning (which I did). Cook on low for 5 hours.
Mix up package of spanish rice. Serve with chicken mix on top of spanish rice (would also be good served in tortillas!). I topped with a bit of cheese & sour cream. So yummy, and so insanely easy! This made about 6 servings total, I plan on eating some tomorrow for lunch with some tortillas. I'll post some more crock pot recipes in a little while.

search on "A Year of Slow Cooking" they have an absolutely fabulous CP rotissiere chix recipe that i have made many times and altered but it is always a hit and so good and tender and much cheaper than buying the rotissierre chix at the grocery!

Super Easy Chicken & Dumplings
2 cups cooked chicken (can be canned) 1 10 oz can cream of chicken soup 1 10 oz can cream of mushroom soup 2 soup cans of water 1 package uncooked buttermilk biscuits 1/2 tsp pepper
Mix all ingredients except for biscuits in crockpot. Cut biscuits into 4-6 pieces, depending on size. Gently stir bisuit pieces into crockpot. Cook on low 4 hours.
I used fresh chicken, and it was delish!

Twenty Garlic Chicken
1 teaspoon salt 1 teaspoon paprika 1/2 teaspoon pepper 1 teaspoon olive oil 3 to 3 1/2 lb cut-up frying chicken 1 large onion, sliced 1 medium bulb garlic (about 20 cloves)
In small bowl, mix salt, paprika, pepper and oil to form paste; spread evenly over each piece of chicken.
In 5- to 6-quart slow cooker, place onion slices. Arrange chicken over onion. Separate garlic into cloves; do not peel cloves. Place garlic cloves around chicken.
Cover; cook on Low setting 7 to 8 hours.
With slotted spoon, remove chicken, onion and garlic from slow cooker; place on serving platter. Squeeze garlic cloves to use cooked garlic on mashed potatoes, vegetables or bread.
This was really good, it's from Betty Crocker. If I make it again I might take the extra effort to brown the chicken first and add another layer of flavor. I also should have used more salt.
