This was a response I got for a plea I made for a good chicken salad recipe--mine never seemed to come out right. If anyone has some more good chicken salad recipes I'm always looking for a new one!

Apple, a very easy, low fat and delicious chicken salad is diced, leftover chicken mixed with sour cream, dill, celery and (you might be shocked, but this really is good) diced apple. You can either add some fresh lemon juice to this (very little), or a teaspoon of prepared mustard... or you can leave that out. Add salt & pepper to taste

Putting in diced apple is not shocking. Apple and other fruits, such as dried cranberries go well with chicken. I made a chicken salad recently and put in some chopped walnuts and dried cranberries.

I do apple and red onion in my tuna salad, best results are with a mix of gala and granny smith apples. I'd probably give it a shot with chicken salad too.
my typical chicken salad is made from shredded rotisserie chicken, white and dark meat. I add salt, pepper, McCormick's "Italian seasoning" blend, a pinch of tarragon, and just enough mayo to hold it all together.
