--apple (Me Message #9 03/19/10 10:14 AM London Broil goes on sale quite often, but never learned how you're "supposed" to cook it, and after buying some and having the meat dry out when cooking, I decided to use the slow cooker Slow cooker london broil stuff:Put london broil in slow cooker Add a can or two of cream of mushroom soup add desired seasonings (I always use garlic powder and onion powder, but fresh would be good too.) I can't remember if it seemed too thick or not, if so, just add a small amount of milk during cooking, or after Cook on low around 8 hours, serve as the main course alone, or "separate" or "shred" with fork and put over mashed potatoes or noodles. Comes out tender and falls apart.

--apple (Me Message #10 03/19/10 10:19 AM I'm a big fan of few ingredients, short prep-time since I'm usually running like the headless chicken, so here's another one... The ribs often go on sale and you can use any BBQ sauce you like. BBQ ribs:Country style ribs (when done, the meat falls off the bone) 1 jar BBQ sauce (or more or less) optional--sliced onion and lemon Cut the extra fat off ribs and then put them in the oven on a broiler pan for about 15 mins to melt some fat off. two ways to cook: Dutch oven: cook in oven for 325 (?) for 4+ hours (the longer you cook it the better the meat falls apart) Crock pot: low heat for 8+ hours Good with mashed potatoes as a side At first it may seem like there is not enough BBQ sauce, but once the meat starts cooking down and juices come out it should be good. Once I added a little water because I was a little worried about it, and ended up making the sauce really thin in the end. Check it about half way or so--hope you like them!

Beef Barbeque for Crock Pot (Can be used with Pork roast also)
Get a beef brisket, put it in the crock pot with your favorite BBQ sauce. (I like Sweet Baby Rays for this dish.) And add about a cup and a half to two cups of water. Make sure the brisket is completely covered by the sauce and water. Let it cook on low for about 10 to 12 hours, and then use two forks to shred the brisket. Get some good buns, and you've got the best sandwiches ever! I like to make a big brisket and freeze some of it for later. This is a great recipe if you have a long work day like I do because it cooks so long. Though my crockpot is digital and automatically switches to a "warm" setting for up to 4 hours after the timer goes off.

Beef Pot Roast for Crock Pot
1 (12-ounce) bag frozen onions 1 (8-ounce) bag frozen baby carrots 1 (8-ounce) package sliced mushrooms 1/2 pound small new potatoes, halved 4 pounds beef chuck roast, rinsed and patted dry Salt and pepper 2 tablespoons canola oil 1 (10.75-ounce) can condensed cream of celery soup 1 packet onion soup mix 1 cup low-sodium beef broth 1/4 cup steak sauce
Into a slow cooker, put the onions, carrots, mushrooms, and potatoes. Season the roast with salt and pepper. In a large skillet over medium-high heat, brown the meat on all sides in oil. When it is browned, put it in the slow cooker on top of the vegetables. In a small bowl, stir together the cream of celery soup, onion soup mix, beef broth, and steak sauce. Pour over top of roast. Cover and cook on high setting for 3 to 4 hours or low for 8 to 9 hours. The recipe calls for frozen carrots and onions. I always use fresh stuff. For convenience I buy the baby carrots and just the bag in, and I get two sweet onions and cut them into thick wedges. The second thing I do differently is that I put the vegetables on top of the roast and then pour the liquid over everything. The recipe calls for putting the veggies and potatoes on the bottom of the crock pot, but I think they get kind of smushed and mushy that way.

Here's another favorite, BBQ beef brisket. Trim the fat from the brisket and put it in the crock pot. Cover with your favorite BBQ sauce. I like Sweet Baby Ray's. I also add a little splash of beef broth. Cook on low for 8 to 12 hours, depending on the size of the brisket. Shred and serve on sandwich rolls.

My kiddo (16 yr old son) is making crockpot meatballs for dinner tomorrow. Dad works nights and eats "dinner" around 9 am, so the meatballs are in the crockpot and will be turned on low around midnight or so. Meatballs:
1 1/2 lbs hamburger meat & 1/2 lb ground pork 1 egg couple tblspoons milk couple small handfuls of italian bread crumbs (we made our own using stale italian loaf) tblspoon fresh chopped garlic 1/2 onion finely chopped (used a food processor, until almost a mushy paste) 1 tblspoon tomato paste couple big spoons of italian seasoning couple of big handfuls of parmasaen cheese salt & pepper tblspoon red pepper flakes (more if you like) shot or two of worchestershire sauce
mix everything together in a big bowl by hand, don't over mix.... if too wet add more breadcrumbs, if too dry couple of shots of milk.
Sauce:
1 onion thin sliced 1 bell pepper thin sliced 1 package fresh mushrooms sliced 1 tblspoon fresh chopped garlic 1 big jar or 2 regular sized jar of prepared sauce (Bertolli was on sale this week)
pour a little sauce into bottom of crockpot, layer golf ball sized meatballs ontop, layer onion, peppers, garlic & mushrooms on top. Add sauce to cover. Continue layers until all meatballs are made and top with sauce last. Cook on low for a couple of hours and begin skimming any fat that rises to the top. Cook on low 6-8 hours until meatballs are done. Cooking on high seems to make the meatballs fall apart. Try not to stir, that also makes the meatballs fall apart.
Serve on hogie rolls for meatball subs with fresh mozarella cheese or over noodles for spaghetti & meatballs.
