This is more of a side dish, a very hearty one at that.
One 28 oz can of cannelloni beans drained one can of quartered artichoke hearts one can of hearts of palm, sliced into rings dozen sun dried tomatoes sliced into strips, or left whole roasted red pepper(one), cut into strips one red onion in large dice a good sharp provolone cut into a 1/4" dice a nice favored Italian dried sausage cut into 1/4" dice nice handful of garlic cloves(12-18) pan roasted until brown, cut crosswise. Use more or less...to taste one small jar of capers couple of stems fresh rosemary minced finely. good shake of some dried oregano good handful of fresh minced parsley You can toss in some grated parmigiana or Romano cheese if you like
Make a red wine and Dijon vinaigrette with a good olive oil
Mix everything in a large bowl. Put in containers and refrig for a while.
