I put a couple of veggie side recipes up elsewhere and figured I should put them here too.....warning: I do tend to eyeball amounts and it's a trial and error type thing.... tweak recipes to your liking....
Easy glazed carrots
1 bag baby carrots (I cut them in half) butter handful or so of brown sugar grated ginger (as much as you like... more give it more 'bite') salt & pepper a little bit of water
melt butter...throw in carrots, brown sugar, ginger, salt & pepper.... add just enough water to melt sugar good & give a little 'steam' action....cover and cook on med until done to your liking...stir often.... too thick, add a little more water...too thin, take off lid and let cook down a bit

Squash Bake
5-6 yellow squash sliced 1 yellow onion sliced some butter (melted or little chunks sprinkled on top before baking...either way works) couple handfuls of brown sugar a dash or so of cinnamon (more if you like it...less if you don't...can be left out completely) 1/2 a serano or 1 whole jalapeno (again, ditch it if you don't like sweet & spicy) salt & pepper
toss everything together with the squash... put into a casserole dish & bake at 350 until bubbly (30-40 minutes)....
squash baked can produce a LOT of juice.... I tend to bake it, drain some of the liquid off and top with bread crumbs and bake another 10 minutes or so until browned....

The squash dish sounds yummy. I get so bored with my own cooking; it's nice to have something different to try. Question from someone who has barely passable cooking skills: Do you cover it in the oven? Or leave it uncovered.

I leave it uncovered.... but could be done either way.....
The recipe also worked really well on the grill.... just make a foil "package" and mix everything up and then seal the foil tight.... put it on the top rack of the grill for 20-30 minutes....

if you like peas (which i dont but dh does) buy a bag of frozen sweet baby peas...take out of freezer. while they start to defrost, add some OO to a pan. throw in some crshd fresh garlic, diced proscuitto and sautee shortly. add peas. add some black pepper and serve. even though i am not a fan of peas, this is a good easy side for a pea lover

Grilled potatoes
Boil baby red potatos in salted water about 10-12 minutes until they are just soft. Drain, cut in half and toss with olive oil, garlic powder, onion powder, black pepper and salt. Heat the grill to 400. Put potatoes on a grill rack or grill basket (so they don't fall through the grate) and cook for about 3 minutes on each side until they are browned and crispy.
I did these tonight to go with a Cornish hen I did on the grill on my beer can cooker. The taters cooked on the grill while the hen was resting and some frozen peas were being nuked. If you like rosemary you can also add that to the potato seasoning and it goes really well with any chicken dish.

microwave some potatoes. cut them up. cut up onions. add salt and pepper. saute in vegetable oil.

to make homefries: dice red potatoes to 1/2 inch. dice up an onion (yellow or white whatever you have on hand) heat oil (i like good quality olive oil) add onions cook a bit then add the potatoes....add lots of salt and pepper...continue cooking til softened. add a diced green onion, and some parsley....perfecto! there is a recipe from ina garten that is fab and you can most likely google it....

anohjter good mixture is to do this: dice a few potatoes, spray pan w/ pam...add potatoes. then add some carrots. then some sliced onions. then some squash and tomaotes to top it all off. mix together some salt pepper and olive oil. pour over veggies. top that w/ a mixture of shredded romano and bread crumb mixture....bake at 400 til bubbly...then top w/ more cheese...

Thanks all. I will be experimenting this weekend. Silly question: Is it necessary to microwave the potatoes first, then dice, then fry?
