An acquaintance had a booya soup party. The recipe makes a vat of soup to share with friends. It's a NE Wisconsin thing. Artemis Windsong , I had to look up booya soup and boy does it sound comforting! I love this forum; I learn so many new things! Me too! I just looked up a recipe for booya soup and printed it out - sounds delicious

(I'll substitute the thighs for drumsticks and the broccolini for something different) with air fryer radishes. ~Tues: Corned beef hash using leftovers ~Wed: EW's coconut curry cod stew with sweet potato ~Thurs: EW's sheet pan teriyaki salmon with green beans ~Fri: Takeout ~Sat: Out using a gift certificate from Christmas ~Smoked/grilled something I added cheddar, tomato and baby spinach stuffed portobellos as a side to last night's supper. Bacon wrapped asparagus will be a side tonight and spaghetti squash on Thursday. I'm getting those veggies in!

I broiled asparagus wrapped in prosciutto last night, it was delish. enjoy yours! there's 2 bunches of asparagus still in the fridge, and I want to go pick up more before tomorrow night. I forget if I posted in this thread, but it's on deep sale this week (F-Th) for $2/lb. all three of us love it broiled, and that's half the price it usually is. tonight I'm thinking something mindless again. maybe roasted potatoes and a steamer bag of cheesy broccoli.

It was DH's night to cook so he thawed some of the 15-bean soup he made a few weeks ago and some of great sourdough bread we get at the farmers market

I made Budget Bytes beef cabbage stir fry. I was not in the mood to chop all the vegetables but I did it anyway.
I'm trying to figure out Friday. I am beyond ready for Lent to end for this reason.
Tuesday DH asked his parents if they'd want pizza on Friday. Their place of choice is 5 minutes from us so we often deliver it and eat with them. They said no so we got pizza instead of other take out. Today when he visited both parents asked when he was bringing pizza tomorrow!

I had a late lunch today, a huge Cobb salad that I couldn't finish. if I eat anything later, it might be a can of soup lol...
the next few weeks, I'm going to make an effort to clear out frozen meats (cooked and not) since I've noticed some older dates while diving recently. this week's targets are a pair of huge individually wrapped BSCB. I'll crockpot those as black bean pulled chicken. I have a couple containers of that in the freezer as well, but these whole BSCB are older. I also just checked in with my mother, and she likes this. so I'm going to send half of the finished product home with her tomorrow afternoon. #winning
with what I keep, I'll make tacos, quesadillas, and an omelet or two.

I wanted to thank you for mentioning that website many moons ago as I’ve gotten some really good recipes there, just like this stir fry (with modifications) which made it to our monthly rotation and is liked by everyone in the family.

alright, well the freezer-clearing goals didn't quite map out as planned. but I still managed to clear some stuff. the salsa in my pantry had an expiry date of April 2023. it was unopened and was going to get cooked, but that still seemed like a risk. so I did the grocery run before starting the crockpot with some brand new salsa. my parents were ready to leave around 230 or so, and the chicken wasn't fully cooked. I ended up sending Mom home with the pair of containers of frozen BB pulled chicken and I'll replace with half of the batch from today. I also offloaded a container of meatballs for Dad. I'd made them over the holidays when I wanted the sauce.
tomorrow when I take out the trash, I think I'm dumping the last of the turkey breast tenderloin, stuffing and gravy. I never did make mashed potatoes for that. oh well.
tonight, I think I'm going to make tacos with the fresh BB pulled chicken. I've got an open container of fresh pico de gallo in the fridge that's close to its recommended date. I'll figure out freezer portions tomorrow and just it all in a huge one when I clean up tonight.

The stir fry is a good base recipe for me. I use a bag of coleslaw mix but I add extra raw vegetables first to up the vegetable content. Usually green beans, zucchini, carrots, broccoli and bell pepper but it varies depending on what we have in the fridge.
Saturday we had a late lunch at a local Mexican place. We both got fajita bowls and I've got half mine left for another meal. I'll have a small snack later.

Tonight cheeseburger for hubs and DD. Hamburger for me no bread just pickle. Fried potatoes and corn. One of our favorite meals. I think the radiation is starting to effect hubs, he only ate about half his dinner. I asked him what was wrong, he just said I'm not hungry, that is a first for him.

DH and I made an early Easter dinner yesterday featuring a small, spiraled ham, au gratin potatoes, sauteed fresh green beans in olive oil and crumbled leftover bacon from brunch, Hawaiian sweet rolls and a quartered Roma tomato for freshness. Normally I would've made deviled eggs, but I spent time with the tax filing process.
~Tonight: Eating Well's (EW's) rice shrimp bowl with tomatoes and avocados. I'll used riced cauliflower, frozen diced avocado and a can of Rotel since we ate the last fresh tomato yesterday. Leftover roasted sweet potatoes will be a side. ~Tues: EW's one pot spinach, sausage and pasta. I'll use Birdseye veggie pasta in lieu of wheat. ~Wed: EW's avocado tuna spinach salad, spaghetti squash on the side ~Thurs: Something on the road ~Fri: Beef sausage, veggies ~Sat: Steak, veggies ~Sun: Leftovers

Sunday we ordered take out.
Monday DH grilled steaks and sides were baked potatoes and sautéed zucchini. The zucchini was excellent.
While digging the steaks out of the freezer, I found a package of chicken sausage. That will be used next week.

I'm fried already this week and my GAF is busted. cheese and crackers also sounds good.

Tuesday night pineapple teriyaki chicken served with steamed broccoli and a quinoa brown rice mix.
Wednesday I'm making black bean pulled chicken. It is supposed to be rainy and gross.
Thursday will be dinner out or leftovers.
Friday I'm making a shrimp pasta dish. Fortunately this is the last Friday of Lent.

Last night I went to a friend's house for a HOA board meeting (insert middle finger emoji) via Zoom and a drinking game ensued, so I drank my supper. When I got home, I let DH have my leftover personal size pizza from lunch. I'll make the one pot pasta with spaghetti squash tonight.

I cooked a roast last night, so tonight I fixed potatoes and carrots with it. We also had another side of corn. It was so good, some of our amish meat. That stuff is to die for, yum.
I will use the rest of the meat to make vegetable soup on Saturday. We are going out for steak tomorrow night for my Bday and our Anniversary dinner. Since they are in the same week we kill 2 birds with one stone.
Now we are having a bowl of ice cream each, me with Strawberry topping, hubs and DD butterscotch topping.

I checked out on work today around 2. my site that's on fire, and all of my European tech peers all had today off for Good Friday. I threw the pups in the car for a scenic drive, and texted friends to see if their Fridays were light. mooch ended up meeting me at the sports bar, I ordered a beverage while I waited on a to-go pizza. one cocktail turned into two when he got there, and I added on some chicken tenders to treat the pups at dinner since they were in the car about an hour and a half.
today's tab was ~$55, woof... I'm pretty sure the last time I went there was the day I picked up a small cheese pizza after dropping Punk at the vet for blockage surgery a year ago this week. a 3-topping large pizza is now $23. 😳 and $10 for five dried out chicken tenders. noted...
I've got two more meals out of the leftovers, and the important thing was that I wasn't cooking tonight.

I'm on a "clear out" kick. Friday I pulled a repackaged pack of cubed pork chips that was larger than I thought. I fried up 3 "chicken fried" style and OMG they were so good and tender.
There are 3 more sitting in apple cider in the fridge. Thinking about just throwing some BBQ sauce on them and tossing them in the oven. That would help use up some of the bazillion packs of noodles from the cabinet. Not sure if that will be tonight or tomorrow though.
The pack of chops was a markdown. 6 good sized chops for @$6. Also had a bag of frozen Mexican corn @$2 and a pack of knorr rice @$1. Most bought quite a while ago.

I picked up a package of 2 boneless pork chops this morning. my intent is to pair with colcannon and maybe some extra roasted veggies. there's Brussels in the fridge that probably need to be used up soon. I bought cabbage right before St Patrick's Day and haven't used it yet either.
that may or may not happen tonight. if it doesn't, dinner will be a couple slices of the pizza I brought home Friday night. I'll figure out the rest of the week later.

Had a late lunch with my manager yesterday, so skipped dinner. Need to finish up those cubed pork chops tonight. Still leaning toward just coating with a BBQ sauce and throwing them in the oven, add some noodles and a veg and be done.
We have way too much food in this house for 2 people, so I am going to focus on getting out the old. Just opening the freezer and grabbing blindly has led to some interesting meals.

daisylu the grabbing blindly sounds intriguing. I like that type of challenge. chiver78 I looked up colcannon. I love learning new-to-me things on this forum. I returned from camping Sunday late afternoon. For some reason food always tastes better to me when camping. Meals consisted of Sam's Club beef franks, steak, veggies, eggs for two breakfasts, leftover ham, and snack plates consisting of pepperoni and salami slices, nuts, cheese, crackers and olives. Sunday, I made a few pancakes using Spend with Pennies' pancake mix. ~Sunday: Snack plate because we had a late lunch. ~Last night: Leftover one pot beef frank, Birdseye veggie pasta and spinach with a side of leftover diced potatoes and turmeric spaghetti squash. All were topped with the remaining shredded cheddar I'd brought camping. ~Tonight: Eating Well's (EW's) avocado tuna spinach salad using diced avocado from the freezer, with sauteed yellow squash, zucchini and baby spinach on the side. If I remember I'd like to make Elote-Style Pickles as I have cotija cheese to finish. ~Wed: EW's pork tenderloin with cherries using bourbon whiskey cherries leftover from the holiday season. Fried okra will be the side. ~Thurs: Clean out fridge night. ~Fri and Sat: Out ~Sun: Leftover pork tenderloin
