tonight I'll be frying some turkey breast cutlets and having turkey Milanese with roasted broccolini. there's 5 or 6 cutlets in the package, and I'll make some mashed potatoes tomorrow to have with some of the leftovers. we're expecting measurable snow tomorrow for the first time in 2y here in my corner of the state, so comfort food is definitely welcome haha.
with the 1 BSCB I'll be saving from the family packs, I'll do either chicken piccata or chicken Lombardy later this week. I have what I need for both options. those will go well with either mashed or pasta, as needed.
ETA: nevermind. I'm still nowhere near hungry, and may heat up a can of soup later. I'll do up the cutlets tomorrow when I'm snowbound lol...

I've never seen turkey breast cutlets here - I would love those I think I find them in the poultry case at Walmart, with a Perdue label. that's the only place I've ever seen them pre-cut. 🤷♀️

Tuesday night instant pot beef stroganoff. Good meal for a cold day.
Wednesday I need to see if DH cares about it being Ash Wednesday. Besides that something quick because I have a 5pm appointment.
I got 2 big packs of chicken Friday from Sam's. I need to instant pot some and freeze the rest.

I poked around the fridge and back pantry in a continued effort to utilize things on hand. I'm glad I did because I forgot about last month's block of mozzarella and finding it saved me $9 on this week's grocery shop.
Sunday, we had leftover pan fried noodles, shrimp and veggies with the salmon. Yum. Monday: Air fryer ribs, oven roasted asparagus and zucchini Tuesday: Asada nachos with Fritos (from a party two weeks ago), Velveeta and cotija cheese (bought for the street corn casserole) Wednesday: Air fried chicken tenders on a bed of baby spinach, bacon wrapped asparagus Thursday: Leftovers OR noodles with spam (another back pantry "must use it NOW" find) Friday: Dinner out before a show Saturday: A dinner event Sunday: Grill/smoke something

Today is the last of the broccoli and cheddar quice. I also made up some tuna fish for sandwiches.
Got veggies chopped up for snacking also.

last night was a delicious and super easy dinner, and I've got leftover risotto for weekend eats. win-win!
salmon, seasoned with garlic powder and rosemary, topped with a lemon slice and baked. "Milanese" arugula salad and a spinach/mushroom/pancetta IP risotto as sides.
I have no idea what I'm doing tonight, but it may involve some shredded BSCB as I need to cook a package for the pups. I don't think I want to keep a full breast for myself, so I'll just swipe some after it's cooked.
tomorrow will be a big grocery shop in the morning, if I can make a list at some point today.

I've done a rough outline of this week's meals, subject to change depending on what the plumbers are doing and what access I have to the kitchen Monday - Mini turkey meatloaves, steamed Romanesco Tuesday - Baked boneless pork ribs, Brussels sprouts Wednesday - Bay scallops with lemon, garlic and capers over angel hair pasta Thursday - DH's day ? Friday - Chicken teriyaki and rice Saturday - Shrimp cocktail, crab cakes, potato salad from the deli? Sunday - DH's day ?

It's still f'ing freezing here today, so I decided to make a pot of Acadian chicken soup for the first time this season. I did a half batch, so however much soup you can picture for a pair of chicken leg quarters. I'll have that for dinner tonight, and will be picking from it this week til it runs out. this morning's shopping trip netted some spinach and cremini mushrooms. there will be a pasta dinner with these at some point this week, if the open container of ricotta in the back of the fridge is still good. lol... if not, I'll figure out a substitute for the ricotta. past that, and the rest of Friday's risotto, idk what the week will bring.

For Sunday brunch I made toads in the holes (the egg inside a hole in a slice of bread version) with leftover croissant toast. SO good. 4 remaining slices of bacon and fresh blueberries were served as a side. Last night I ended up cooking the noodles I didn't make Thursday and added a quarter of a bag of frozen veggies, leftover smoked salmon and sweet and sour sauce. On the side were the remaining bag of frozen mini wontons. The noodles are Ka'Me brand, and I do recommend. Tonight: Sheet pan oven roasted beef sausage, broccoli and yellow squash Tues: Cod with zoodles (spiraled zucchini) and mozzarella cheese stuffed portobellos Wed: Leftover beef what-ever-it-is from the freezer in a tortilla for DH and on top of sautéed spinach for me Thurs: Slow cooker teriyaki beef, air fried sweet potato fries Fri: Takeout Sat: Crab leg night w/ the neighbors with green beans and fried okra on the side. We'll see what the kiddos think of the latter. Sun: Grill/smoke something, veggies Yesterday evening instead of just lunch produce, I also prepared the zoodles, broccoli and squash. Efficient, and I can give scraps to the neighbors for their goats, aka Goat Goodies, all at once.

tonight was leftover chicken soup while I cooked off 6lbs of ground beef and chopped kale for the freezer stash of pup food prep.
I did find a package of chicken breast tenders in the freezer yesterday and pulled it out to thaw. it's from a BJs sized family pack, and IIRC, there's 5 or 6 tenders in the vacuum pack. I will say one of these tenders has been earmarked for a chicken cheesesteak this week, as I picked up a D'Angelo's baguette on Sunday. it might be brunch, it might be dinner. 🤷♀️ but, I now have some chicken to go with whatever comes of the spinach and mushrooms this week.

Per my suggestion, Friday DH picked up a dozen tamales from a local supermercado. Instead of grilling something, he had some last night for supper. I was tired from making the lasagna and stuffed shells for the freezer, and full from sampling said pasta, so I didn't eat. This week:
Tonight: John Wayne casserole (I browned the ground beef during yesterday's meal prep, and I'll use almond flour as the base), air fryer eggplant fries Tues: The remaining frozen eggrolls, and the last package of noodles with portobellos and shrimp Wed: Salmon, shrimp cocktail, sauteed zucchini and yellow squash Thurs: Slow cooker English cut beef, veggies Fri: Takeout Sat: Maybe a sleepover with the neighbor kiddos? So, maybe spaghetti and meatballs? We'll see what mood everyone is in. Sun: Grilled/smoked something

yesterday, I cooked a ~4lb pork "picnic roast" in the crockpot with a carnitas dry rub and a little bit of orange juice for the cooking liquid. I shredded that last night and had some tacos for dinner. tonight I'm building this carnitas casserole that's basically a lasagna. I'll have that to pick from this week, lunch or dinner. tomorrow night, M booked a space at a country club restaurant for a bunch of us to get together for mooch's 50th birthday. he has no idea of the surprise, I was talking to him earlier today. past that,

I made the black bean pulled chicken last week. That was about it as I was tired of cooking and gone the earlier part of the week
This week so far Monday night sheet pan dinner with roasted veggies and chicken sausage.
Tuesday taco salads.
After that I don't know. I need to start putting a dent in the dozen roasts in my freezer.

heh, country club restaurant was a concession stand in a building with a liquor license. 😂 I grabbed a couple peanut butter cookies M brought from a local grocery store, and cooked off a black bean burger when I got home. there's a reason I keep these in the freezer. 🤷♀️

Wednesday night I cooked cube steak in the instant pot with mushrooms and onions. I made gravy after the steaks were cooked. I did mashed potatoes and green beans for sides.
The cube steak was a 4 pack so leftovers for Thursday. I made fresh mashed potatoes and broccoli for sides on Thursday.
The roasts are huge and we are leaving for the weekend. And it can't be eaten on Friday because of Lent.
I'm winging it for Friday. Maybe someone will invite us to dinner.

I just saw a package of "cube steak" in the case at Aldi on a pup run. it wasn't cubes. am I missing something? yesterday was strange for grabbing food where I could, and by the time I got home I wasn't terribly hungry. I cut a half portion of carnitas casserole and called it good. I even just nuked it, I was done. I had another small piece this morning under a delicious dippy egg. there's one more solid portion left in the pan. if I get to it, great. if not, that's fine too. tonight, I'm going to toss a package of fresh tri-color tortellini in a cream sauce with peas & pancetta. I'm going to plan out next week as I make my grocery list for tomorrow, and just wing it til Sunday.

Apparently the term cube refers to the pattern left by the meat tenderizer according to wiki.
DH is having salmon and some sides. Likely Mac and cheese.
I'm having the rest of the taco salad stuff.

when I made my grocery list this morning (I'm shopping tomorrow am) there wasn't much on sale for proteins. so I pulled two pork chops from the freezer, that I figure will be thawed out tomorrow night. if not, they can hang out til Monday. I froze them with a lot of time left on the sell-by date.
on my Walmart run this morning, I grabbed a small package of thin-sliced chicken breast. maybe $5? I'm debating making chicken piccata tonight. if not, tomorrow and I'll bake off a store-bought chicken pot pie instead. it's not that I'm tired or lazy, but my kitchen is absolutely spotless right now haha
ETA - I went with the pot pie, and I'll absolutely do this again! there's a local brand that does pot pie, shepherds pie, and they are found in the cold case at stores. well, the basic chicken pie has peas and carrots. the version I prefer has peas, carrots, pearl onions, broccoli florets and I think(?) diced potato. but with all of the veggies, there's fewer peas/carrots and way less waste as I'm picking out the nasty carrots. 🤢
well, tonight, I chopped some broccoli and tiny potatoes and threw them on the sheet pan with the pot pie. poured that into a bowl before lifting the top crust to pick out the nasty carrots. I poured the rest of the pot pie over the top and added the crust. the best thing? I got to add tasty seasonings to the veggies I chopped. made the whole thing WAY better.

We had odds and ends tonight. DD had spaghetti with the leftover meat sauce and mixed cheeses plus a soda.
Hubs had the same but also a couple of cheese stuffed sausages and an avocado. He likes to eat them just out of the peeling with a spoon and a slice of colby cheese. Then he had a glass of grape juice.
I had a sweet potato, slice of pepper loaf, slice of cheese, and grape juice, now some orange juice.
Going to make us some vanilla pudding for a snack, it's easy.
So that cleared out food items from the fridge. I'm pitching the rest of the barbecue, we had it long enough.
Tomorrow night hope to use the rest of the baked turkey roast and make noodles with it and a veggie of some type or mashed potatoes again. Then we will be ready to start cooking some different foods again.
I threw some meat away that had been in the freezer forever, just didn't think it would be very tasty.

Monday - Leftover pork tenderloin from the freezer, with diced rutabaga Tuesday - Shrimp cocktail, crab cakes and green beans Wednesday - Kielbasa and stewed cabbage Thursday - DH's night - baked chicken thighs and polenta Friday - Chicken Italian sausages with pasta Saturday - Baked pork ribs and acorn squash Sunday - DH's night - smoked gouda, salami, Italian bread, hummus and crackers (all left over from last week)

The last few days have been soft tacos. I will plan for that as lunch.
Dinner is going to be HN dogs.
Tomorrow I believe will be a quiche and chicken tortilla soup.
Need to chop some veggies for snacking.

I just came in from shoveling snow. Y'all made me hungry! Last night: Slow cooked English cut locally raised roast, air fryer sweet potato fries Tonight: Cod, shrimp, fried okra Tues: Tacos with locally raised ground beef, riced cauliflower, regular rice, veggies Wed: One pan sliced beef sausage, mixed veggies from the freezer Thurs: The other half of the thawed ground beef for smash burgers, green beans Fri: Leftovers Sat: Dinner and a show with client friends Sun: Unsure Boy, I can tell we are running low on fresh produce, and as far as chicken goes, only canned is on hand. It's going to be a large grocery pickup this month.

snow?! I moved my snowblower back into the shed this weekend. we're gonna see 50s this week, but rainy. that's a bummer, but I think <knocks wood> we're done with winter here at the coast. maybe not inland, but I think I'm clear. not safe enough that I'm gonna start up the snowblower and burn off the last of the gas just yet, but close. last night, the pork chops I pulled to thaw were fully thawed. I also wasn't thrilled about the idea of actively cooking haha. so last night, I crusted the chops with Penzeys Northwoods and seared them in a Dutch oven. paired with roasted broccoli and mashed potatoes. I made a family-sized batch of mashed, that I'll pick from this week. there's no garlic, so I can share wtih the pups when the current rice stash runs out as well. tonight - shortly, actually, it's already dinner for how early my day started today - I'm going to do a skillet of chicken piccata. the package of thin-sliced chicken breast is ~1lb.

chiver78, right? We'd been having a very mild winter until this past Sunday. There were threats of more snow this week, but we'll see. I'm on a new quest which is to incorporate turmeric into meals because of its anti-inflammatory benefits. I'm a low carber (for the most part) and I made this last night. I was skeptical, but they are so tasty and moist which I'm sure had nothing to do with how much butter they contain, LOL. I substituted cinnamon for cardamon because that's what I had on hand. Keto Turmeric Bars
If anyone has any turmeric containing recipes, I'm all ears. (I'm pretty good at converting regular recipes into low carb.)
