Rukh O'Rorke I know your DD doesn't live at home anymore, but I'm not sure about your son. I don't cook very often these days but when I do, I make a lot, and I freeze it. Could you do that? That way you could still have a home-cooked vegan meal without having to cook or clean up the kitchen. If you do it once a week and freeze half, in a month you'll have 4 home-cooked meals in the freezer which will probably do you for 2 nights each (depending on if your DS still lives with you). Just a thought. :-)

Not a problem usually, if I don't want to make a mess I'll have microwave popcorn and hot cocoa for dinner. For thxgiving, I always try to pare down, but always want everything for dinner. And boom! just realized I forgot to cook the sweet potatoes!!! And didn't even set out the cranberry sauce I made!!! LOL, always something on thanksgiving. Am half way cleaned up now....waiting for the dishwasher to finish and then will have about 1/2 a load to put in. Going to get some cranberry sauce......yummy!

Instead of a big turkey, and as long as you are not entertaining / feeding a horde of people, why not cook Cornish game hens. Each teen or adult get their own individual game hen. Kids (if there mightvsplit a hen).

The older I get the harder it is to do the whole house cleaning/cooking thing.
I had all DH’s family for THanksgiving, sixteen people. It was wonderful having them, and everyone who came brought something to add to the feast, but it was still a lot of work.
I told DH next holiday we’re hosting at a restaurant….

I cleaned my kitchen 5 times on Thanksgiving. We hadn’t fully cleaned from Wednesday night dinner. We had breakfast. We had lunch. We prepped the meat. I made cake. I made squash. And then, we wrapped all that up to take to my sister’s, and left some dirty cooking pans to deal with later. I was so burned out and we didn’t even host!

I had a simplified version of Thanksgiving at my house. We had more than enough to eat.
Boneless turkey breast roast (delicious, moist) Stuffing (polenta based, with sausage, cranberries, and leeks) Mashed potatoes Creamed corn Green bean casserole Cranberry sauce Gravy
and DDIL made pumpkin pie and apple-cranberry crisp. I whipped some cream to go along with the desserts.
I assembled the stuffing and made the cranberry sauce the day before, the green bean casserole the morning of, dumped the ingredients for creamed corn in the crock pot a few hours before dinner, mashed the potatoes and kept them warm in another crock pot, and managed to have the kitchen all cleaned up before I put the turkey in the oven.
So now I have leftovers. I'm thinking of using the leftover mashed potatoes and the creamed corn, plus some mini potatoes and the remaining leeks, to make a potato soup/chowder. The rest is good for a dish or two of leftovers, and the rest will go into the freezer.
All that leftover cranberry sauce, though! What will I do with that? I guess I'll keep a little in the fridge and freeze the rest. And I see there are recipes that use cranberry sauce as an ingredient.

you could use some in a cranberry aioli for turkey sandwiches, and I think at least the canned stuff freezes decently.
