Thanksgiving Menu

I'm starting to plan for Turkey day.  I think my parents are coming.

DS will be making timpano again- a layered Italian dish that starts with a pot lined with a sheet of pastry dough then loaded with various layers- hard-boiled eggs, sausage, pasta, marinara sauce... VERY filling. Here's a typical recipe.

He loves cooking. It's a miracle considering that his Dad could grill and that was it, and complained about the smell and the mess whenever I tried to cook anything (even though I got VERY good at cleaning up as I went). We mostly ate stuff from the deli.

Trying to decide what pie wreck to attempt. I try so hard but it's rare I succeed.

The record is when my custard didn't fully set. Found that out when DH got on the interstate. I had them in my lap. I wore the pie to dinner. DH still almost pees every time he tells it.

I did finally find a vegan banana cream pie I had success with. My nephew loved it. It uses coconut milk so it sets easier. I added a couple drops of food coloring to make it look less like paste.

Might try a Butterbeer pie.

Or leave the baking to Gwen. That talent seemed to have skipped a generation.

I will make cheesy corn for DH and will make roasted brussel sprouts for me.

I started shopping today so I wouldn't have an impossibly long list of things to buy the Monday before.  I'm making turkey breast, mashed potatoes and gravy, green bean casserole, dressing, cranberry sauce (canned) and rolls.  I'm thinking about making a chocolate pecan pie even though DH and I don't need it.  We'll do the holidays with just the two of us.

I'm having whatever my BIL puts on the table. I have no desire to cook Thanksgiving for 1 human and however many cats are here that day. I'll go help them eat the 18 pound turkey, for 3 PEOPLE!!!! and bring a bunch home for the furfaces.

Oh I need cranberries. I make my own sauce. I'm pretty much the only one that eats it.

My motivation is the leftovers it's AWESOME over vanilla ice cream.

I'm going to a friend's home for Today.  But I am bringing a spinach and cheese casserole for 18 diners and a brown sugar and pecan bundt cake with caramel frosting.

I was lucky to find and buy all the engredients today for two food items I mentioned above. I figured with supplies possibly low it might be hard to find them next week. The chain food store was packed. I thought everyone there was like me buying early but someone there in the store reminded me the other food store in the town I was shopping was still closed due to the mass shooting there in late September.

Oooh, never thought of that. Now I will have to make cranberry sauce even though I am not cooking at all since I go to friends for dinner

I go every year and buy cranberries fresh out of the bogs. Best ever!

The grocery store was out of potatoes in the 5-10-15lb sizes. Being single I got 5lbs of little red potatoes. I need to figure out roasted potatoes and roasted asparagus since it was on sale. I might oil them then sprinkle with garlic and stuff maybe some fresh rosemary from my plant in the yard for smell.

I don't cook holiday meals, go to my brother this year and eat whatever they make. I will bring chex party mix because they always want me to, I make it better than anyone. Nobody even asks me to bring it, just expect I will show up with it.

I remember the first time Mom made it from the recipe on the back of the cereal box.  My sister and my 3 brothers and I all wanted to taste it- it smelled so good baking- but it was for a dinner party and Mom said we could have the leftovers.

There were no leftovers.

I wouldn't be surprised if there were shortages of the traditional foods this year since we're already seeing it for other foods- it might be a good time to change up the traditional menu rather than go crazy trying to find all the foods you've had EVERY Thanksgiving.

DH and I will be with his parents, not sure what the kids are doing. We took the easy route and ordered Cracker Barrel. Comes with 2 turkey breasts, cornbread stuffing, sweet potato casserole, gravy, cranberry relish, rolls, and pumpkin & pecan pies. Plus 2 sides - we added mashed potatoes and loaded hashbrown casserole (which will be breakfast the next day). One of us will make a green bean casserole for FIL & DH, and probably some glazed carrots.

Nay on noodles on the potatoes. Gotta have the turkey gravy, with noodles on the side. Nay on creamed corn. sub a brussel sprout or whl kernal corn. Gotta have the real whipped cream instead of the chemical concoction.
Love the two choices of dressing. We do that and I eat both.
Gotta have the green bean casserole, either fresh beans or canned is ok for me.We have to have some sort of jello with a fruit added to it with a dab of Miracle whip or mayo on top.
Pumpkin and homemade apple pie and a pecan pie for a few fanatics with real whipped cream (no aerosol cans).
Reisling and a sweet red wine for adults, sparkling grape juice for the young'uns.
Topped off with good coffee.

A former co-worker of mine's family here 'adopted' me 25 years ago so I go to their homes for holiday meals. When it comes to stuffing they make a cornbread style stuffing. I don't care for corn bread.

But one member of the family grew up in Connecticut (I grew up in Massachusetts ) and he makes enough New England stuffing for himself and me.

The first time I was expected to do turkey I remembered a place 40 miles down the road that specialized in smoked turkeys. Tell T1 she has my well wishes in her adventure. Let us know how it turned out. And mama better oohh and aahh  anyway.

She’s way overthinking it. Turkey is one of the easiest things to cook.

I both managed to burn and have a turkey be internally raw at the same time.  DH (then fiance) insisted we could still eat it and wanted to carve it up. We had no electric knife or carver so instead of borrowing from my parents he tried to use a chef's knife and a regular dinner fork to hold a 15 lb turkey in the pan.
That was the best Thanksgiving ever for the dogs.  The gods blessed them with endless Turkey rain!  Scraps of turkey as far as the eye could see as DH tried to hack away.

I haven't cooked a Turkey since.

I don't like making turkey mainly because I don't like dealing with the carcass afterwards, but the few I made turned out ok.  I just always make them in a bag.

You have no idea. She's been showing me different recipes with all these herbs and rubs and infused butters. I told her I don't do any of that. So either the turkey is going to be fabulous or it's going to backfire and not be good. We'll see.

Ah, but the carcass makes wonderful broth!  You just throw it in a pot with chopped celery, onions and water and let it cook for a few hours and remove all the bones and anything else that doesn't look edible (e.g. wing tips).  Of course, that part is messy.  A friend like the soup I made form a turkey carcass so much that when he went to California for Thanksgiving with his family, he brought the turkey carcass back to NJ in his luggage so I could make turkey noodle soup.
