That's the only way I've seen them made. I've been wanting to try them on my smoker. Ooh! Interesting! We have a smoker. We'll have to try that also. I use that recipe all the time (w/some extra spices in the cream cheese/cheese mix). They are a HUGE hit! par cook the bacon first so it crisps up

that seems so plain, no seasonings? I mix pepper jack and cheddar into the cream cheese along with a lot of chili seasonings. cumin, hatch chile powder, etc, to taste. if there is any leftover breakfast sausage available, I'll dice a link really small and stir that in as well.
to prep, I halve the pepper and gut it. fill with the cheese mix to level ans wrap with half a strip of bacon. the bacon should stick to itself, but you can use toothpicks if need be.
cook at 400 degrees until the bacon is done, usually ~20min.

It's a shame that we can't all be there to test drive the goodies you're experimenting with. I just know that we could provide valuable suggestions. After all, you don't want to be serving just any old appetizers to the guests.

Okay...here are the verdicts:
Yes, feta does go well in jalapeno poppers. I'm not a fan of the sausage being in them. (But it's not my wedding.) I made most of them much bigger than I needed to. (Good to know now rather than day of.) STBSIL did not like the salt-free seasonings.
While we enjoyed all of the seasonings, these are the top choices:
Whiskey barrel black pepper Forward! Garlic Salt
We'll make some with cheddar, some with feta, some with sausage, some without, and some without bacon.
Also, I much prefer stuffed mushrooms, but, as previously noted, it's not my wedding,
