change of plans here, too. was planning on Chinese or sushi takeout. ended up with a can of soup, which is entirely fine. tomorrow, though. need to figure out if my preferred spot is actually open. it is in an open mall, so idk if they have to close bc of mall guidelines. if they are open, I'll have sushi and some rice noodles, with leftovers over the weekend. If you want steak or pork fajitas, come on up. I ordered both then shoved them in the fridge. I ate 3 tacos and churros. Just ate a lemon cupcake a little bit ago. thanks. I had planned takeout for either today or tomorrow, and I still have 12lbs of BSCB I bought on stupid sale that I need to break down for the freezer. so I'm okay there. how are you holding up this weekend? tomorrow is just another day off for me. I'm also off for.company shutdown til 1/4. say the word, I'll totally throw the pups in the car for a day trip.

12lbs?!?! That is a LOT of chicken. I have no idea how this weekend is going to play out. I really want to be in a drunken stupor for the whole thing so i don't have to remember it but my bottles have no alcohol. Sobriety can be so overrated😩

My daughter has a cold, so my MIL opted not to come. They were going to make cookies for dessert. My husband screwed up the prime rib (which was delicious), but it was done so early. So, my potatoes didn't get cooked and we ate at an unexpected time. Then my mother showed up while we were eating to drop off gifts, and we abandoned our plates and opened presents with her. Then went back to eating. The whole thing was off. On the plus side, I made my first buche de noel - either from the candy cane forest, or it is just a Swiss Roll. Depends on how strict you are on this stuff. It was great.

I had actually already broken down 5lbs. I IP it for the pups, and shred. so when it goes on deep sale, I fill the cart. 🤷♀️

Turkey breast is in the oven, green beans trimmed and ready. DH will make the mashed potatoes while I make the gravy. No dessert as we are still stuffed from last night's meal and breakfast.

Ribeye roast is in the oven. Costco mashed potatoes are still in fridge. Fresh veggies waiting to be eaten. Cherry and pumpkin pies are on the counter.
DH has wine in fridge and supper in about an hour.

The genoise, raspberry chambord mouse, chocolate ganache cake was heavenly!!
And my tenderloin steaks, salmon and Gambas shrimp turned out great.
Best of all, leftovers for tonight!

I had my Blake's turkey pot pie after work with some french fries. Work did not feed the day shift for Christmas which is a big break in tradition. IDK if it was funding as our census is down, which means income is down in the pandemic. Dinner was provided for the 3 to 11 shift from outside sources. Looked like dairy possibly everywhere, so I only grabbed a very small piece of breaded sauced chicken for my coworker to do her asked for photo op.
I'll feel more like celebrating after I get both vaccine shots, which will likely be the first week in Feb. for the second. So who is going to start the NY and NY eve menu thread? I realize I have very few food traditions for the holidays except bread stuffing & Christmas cookies. My preferred NY's Eve dinner is some kind of Asian food. One of my better NY's Eve dinners was at a local Japanese place where we had left overs to take home and were safely home way before midnight. My best New Year's day memories are from when I used to make pizzas and my sister and I would watch bowl games while making pizza, or we went over to one of our friend/families house for a gathering.

I tried the herb crusted prime rib recipe this year. Nailed it! I bought myself a new digital thermometer with probe and I knew exactly when it was 120 degrees. I was halfway through my plate when I looked up and all my dinner companions had finished theirs! I forgot the horseradish in the frig, but the aujus turned out so good, no one mentioned it. Rib roast was $3.97 a pound before the holiday. I have plenty more aging in my refrigerator. Very happy the first one was so delicious.

My prime rib turned out perfect. I need to thank cktc for the Yorkshire pudding recipe, they turned out perfectly. TD also snapped a pic of them to send to his British/Canadian stepbrother who served hockey pucks for his! We took a plate over to bachelor neighbor, whose meals usually come out of cans. My gravy turned out fabulous. When I cook the roast, I put a melange of carrots, celery, onions, garlic and herbs in the bottom of the pan to act as a rack. Then I add a box of stock into the pan. The drippings and roasted veggies flavor the stock, which I use for the gravy minus the veggies. One year, I tried grinding up the veggies in the blender to act as a thickener, but it turned the gravy orange, and it tasted like veggies, not beef. Trying to decide if I am going to make beef pot pies or Shepard’s pie out of the leftovers.

Just made some stuffing for lunch with canned chicken even though I have turkey in containers in the fridge. I'll try to remember your technique for when I have a bigger kitchen or cook elsewhere. Sounds like a great idea and healthy too.

I've never learned well the art of cooking brisket or ribs. My priest associate (he's 35) got one of those slow cooker grills/smokers where pellets (fuel) are feed in and it can be controlled remotely by his phone. He is in charge of any brisket or ribs and does a wonderful job. Some of you may remember in the first month of the pandemic, I had 2 pigs butchered since we had a house full of seminarians and needed lots of meat. I put my associate in charge of cooking any of the ribs.

My priest associate (he's 35) got one of those slow cooker grills/smokers where pellets (fuel) are feed in and it can be controlled remotely by his phone. He is in charge of any brisket or ribs and does a wonderful job. Some of you may remember in the first month of the pandemic, I had 2 pigs butchered since we had a house full of seminarians and needed lots of meat. I put my associate in charge of cooking any of the ribs. Try baking/roasting your ribs in the oven. Let them roast for most of the time basting occasionally with BBQ sauce. If you want a smokey or charred appearance, throw them on an outside grill for five or ten minutes at the end.

Almost foolproof. www.weber.com/US/en/blog/grilling-inspiration/foil-wrapped-ribs/weber-30710.htmlWe generally make these ahead of a party and keep warm in the crock pot for serving. The foil method gets rid of all the grease before you char the ribs so no flare ups on the grill. You can use the same recipe in the oven if you don't own a grill.

Thanks Tennesseer and bookkeeper, I will add those to my recipe binder. But for now, as long as I have a willing associate to cook them, I'll be lazy and let him do the work!
