I seem to do the same thing to the same veges over and over - BUT - I refuse to make my veges a caloric nightmare by mixing them with gravy or cheese or any other number of things that totally detract from the value of eating veges.
Anyone do anything interesting with vegetables that keep them fresh and healthy?

We can always PM Moon and request a new folder just for veggies too. That's how we were able to get the other folders. Maybe a Vegetarian folder and a "sides" folder... I hate most veggies myself (think I might be a "super taster" they all taste bitter to me, even sweet corn), but my ex-bf cooked carrot slices once with a little butter and some lemon & pepper seasoning salt--it was really good, just microwaved until it was soft.

Yes! A Vegetable/Sides folder and a Vegetarian/Vegan folder! I have a son who is vegan and a nephew who is vegetarian and would love to share recipes. ;D

Yes, more love for the vegetarians/vegans! I recently started roasting cauliflower, holy moly yum! I just drizzle it with some olive oil, cracked pepper, sea salt, and lemon juice, then roast until toasty. Asparagus is roasted with lemon pepper seasoning and olive oil, seven minutes at 425. Tonight we're having snow peas with this sesame and ginger seasoning blend that McCormick makes. It's quite good. As for vegetable entrees, I make a kick ass cauliflower and chickpea curry and chana saag (Indian chickpeas and spinach).

I make a killer jambalaya that my nephews like and my vegan DS just loves. I've got it on the menu next week and will try to get my measurements down so I can post it.

My ex and his grandparents liked sliced cucumber with sliced onion that was soaked in white vinegar.
Take a quart jar and layer in cucumber and onion the pour vinegar and water on and keep in the refrigerator a day or so.
