Apple's "Apple Pie"
I'm not much of a drinker, but this is yummy!
2 GALS. APPLE JUICE
1 5TH EVERCLEAR
10 EACH WHOLE CLOVES
6 STICKS CINNAMON
1 TSP ALLSPICE
PUT APPLE JUICE IN LARGE POT PUT SPICES IN A SPICE BAG & ADD TO APPLE JUICE BOIL SPICES IN APPLE JUICE FOR 15 MIN. REMOVE FROM HEAT & COOL TO ROOM TEMP. ADD 5TH OF EVERCLEAR CHILL & SERVE
ETA: I couldn't find a spice bag anywhere in town, so I "made" one with a coffee filter. Put the stuff in, gathered the top, folded it a couple times and stapled it shut. Also, Everclear (or Clear Springs) is outlawed in some states, so I think this would work with Vodka just fine. Everclear is 190 proof--pretty strong.

I just sampled my first homebrew beer. It's as much fun to make as it is to drink. I used the Mr. Beer kit and plan to make many more different brews. The kit comes with a West Coast Pale Ale that is pretty smooth compared to many ales. I think I'll probably try a Lager for my next batch. If any of you are experienced home brewers I would appreciate any tips you might have.

LOL... garbage cans, plastic bags, ICE, numerous juices and sodas AND the Everclear. There were quite a few morning afters where I don't recall what happened or why I was where I was... ;D

Sounds like apple's recipe would work well with vanilla vodka...and maybe a little dribble of Hot Damn schnapps for a cinnamon taste/smell. Haven't touched Everclear since the late 70's for various clear and cloudy reasons, i.e. "who are you?, where are we?, we did WHAT!?

Have had this recipe for 3 or 4 years, but never tried it. For your drinking amusement I offer you:
Big Titty Ho on a Motorcycle 1 oz Jose Cuervo® Gold Tequila 1 oz Disaronna Amaretto liqueur 2 1/2 oz Pepsi® Cola 1/2 oz Whisky Sour mix Add about 4 ice cubes to an old fashioned glass. Add the amaretto, tequila, and whiskey sour mix, then Pepsi. Garnish with an umbrella and serve.

Run EVERYTHING (including your hands) through your sterilant solution before use.

I have a question for you homebrew guys, or maybe a next project since I don't homebrew myself. some college friends of mine were very into it, and were good about writing things down so they could recreate the batch later. unfortunately, the best batch they ever made was one that started out without notes. the guys ventured to brew an amber ale. everything about this brew screamed amber ale - the taste, the weight, the hops, everything.....except the color. this beer was as dark as a porter.
we'd all just gone on a brewery tour, and were starting to think like the entrepreneurs we thought we were....had a name, a label printed, and everything. this was to be the "Not So Amber Amber Ale" but it couldn't be duplicated. any ideas? what would make an amber ale so dark?

Color is determined by two things; the steeping grains, and the malt used. I once had the same thing happen. I was trying for an amber, for which I normally use 80 lovibond crystal malt for my steeping grains and amber DME. This time, I used 120 lovibond crystal steeping grains, and it came out a brown. I also used 2 ounces of fuggles bittering hops and 1 ounce saaz flavoring hops, and it was one of the best brews I've ever made.

If you do get a bacteria in your brew, it's usually not dangerous to drink but just foul tasting. If you ever get a batch that has a band-aid taste or smell, it means you have bacteria. Happens to everyone once in a while.
The other piece of advice I can add is that as soon as the wort is done cooking on the stove, cool it as quickly as possible and get it in the carboy. Cooling is the time when the batch is most susceptible to bacteria. The fastest way I have found is to put three quarts each of brew-grade water into two sanitized one gallon zip lock bags. Freeze them, and when it's time to cool the wort just re-sanitize the outside of the bag and toss them in. You can go from boiling to cool in just a few minutes.

equal parts Bacardi Special Dark Rum (or Bacardi Dark Select), Kahlua, Baileys Irish Creme (the "regular" kind)
in a shaker, mix the Rum and the Kahlua over ice, strain into a shot glass, "dollop" the Baileys into the shot glass, "shoot" it before the "cloud" of Baileys dissipates (you have about 30 to 45 seconds).

I don't normally drink, and neither does my mother. While the two of us were in Rome, we decided to stomp all over the ruins in high-heeled shoes. Heaven forbid we be less than fashionable! Thankfully, I've outgrown that thinking, but I haven't outgrown the lovely drink the bartender at the hotel served to two exhausted lady idiots with aching feet. Tia Maria, cream, and a little ice cube. Sooooo good! ;D

Boyfriend and I recently started brewing beers and have a mead that's almost 11 months old now (we started it New Years day). So far the Root Beer has come out the best. Well, to me. I'm not a beer drinker myself. We've also started an Apricot Wine since the apricot tree in the front yard yielded too many fruits to eat (and give away.... we still have 9 lb in the freezer, the wine took well over 15 lb).
My favourite drink will always be a White Russian. 2 oz vodka 1 oz coffee liqueur light cream
Pour vodka and coffee liqueur over ice cubes in an old-fashioned glass. Fill with light cream and serve.

Knockoff Bailey's Irish Cream
1 cup light cream (not heavy cream) 1 14oz can sweetened condensed milk (Eagle works well) 1 & 2/3 cups Irish whiskey (I'm a Jameson fan myself) 2tbsp chocolate syrup (Hershey's or the like) 1tsp instant coffee (generic ass store brand has the most pure coffee flavor) 1tsp vanilla extract 1tsp almond extract
1) Combine all ingredients in a blender on high for 30 seconds. 2) Drink 3) Bottle in a tightly sealed container and refrigerate. Will keep for a couple months if kept cool. Shake bottle before serving.
Notes: If you can't find light cream use half & half or as a last resort whole milk, heavy cream will separate. Makes enough to fill an old Bailey's bottle, so that's what I use to store mine. Feel free to play with it. I've doubled the chocolate, as well as doubling the coffee, both turned out great. I think I'm going to try caramel syrup instead of chocolate on my next batch.

chiver's peach sangria (aka "sanfria" to certain persons, if you find yourself on my FB page....) this recipe is always intended to scale up, do the math for your own pitcher/cooler. 1L pinot grigio (I've decided on Cavit after a lot of "testing") 1 Lemon cut into wedges 1 Orange cut into wedges 1 Lime cut into wedges 1 Peach cut into slices 1 Cup sliced strawberries 1/2 Cup Nantucket Nectars lemonade 1/2 Cup Sugar 2 shots peach brandy 2 Cups Canada Dry ginger ale Squeeze the juice wedges from the lemon, orange and lime into the pitcher/cooler. Toss in half the fruit wedges (leaving out seeds if possible) and add sliced peaches, strawberries, lemonade, sugar and brandy. Add the wine, and chill overnight. Add ginger ale and ice just before serving.

That sounds yummy, Chiver - nice for a summer outdoor party/bbq. Have you tried that with a Sauvignon Blanc?
Even better, might be a White Zinfandel.... it would also add a nice pretty pink hue to the sangria.

thanks SL, it's my summer go-to pitcher recipe! as far as tweaks, I've had friends that had previously declared themselves "wine haters" loving this mix and asking for it at later events. I've tried a few different wines in the blend over the years, and in various ratios - found the original recipe in college - and pretty much settled on what's written out here. if you want to play with the recipe and post back, I'm totally open to feedback. I brought a 5-gal cooler of this as-written to a cookout this summer, and it was GONE in about an hour and a half.
