Ingredients: 3.5 cups all-purpose flour 1 tbsp instant yeast 1/4 cup sugar 1.25 tsp salt 1 egg 2 tbsp butter 3/4 to 1 cup of lukewarm water Mix all ingredients in a mixing bowl using a stand mixer, a spoon, or a bread machine. Mix until it incorporates into a nice, soft dough. Form dough into a ball, cover, and let it rise for 1-2 hours, or until it doubles in size. Punch down dough, and cut it into 8 equal pieces. Shape each piece into a round ball, and then flatten to about 3 inches across. Place the buns on a parchment-lined baking sheet, and let rise for an hour, until noticeably puffy. Preheat oven to 375 degrees. Melt 1.5 tbsp of butter and brush the tops of the buns. Bake buns at 375 for 15-18 minutes until golden brown. Remove from oven. Melt another 1.5 tbsp of butter, and brush buns after they come out of oven. This will give the buns a nice, satiny crust. Cool the buns on a rack for 15 minutes. After cooling, cut open and serve. As you can see, I did not cut these into 8 equal pieces because I sometimes struggle with proportion. Crumb shot. Note: Pay attention to humidity when deciding on how much water to use. Use 3/4 a cup when it is more humid, more when it is drier.

Those look great! I tried to make some before and they were too dense. Those look perfect.

Those look great. I expected to see milk, as that seems to be in most recipes for soft rolls.
If you want to be all anal, I use a kitchen scale when I want to make things the same size. I bought it at Target for 30 bucks, or something like that. So worth it...to me. My hubs makes fun of me. 😀

Those look great! I tried to make some before and they were too dense. Those look perfect. Biggest thing is to be flexible on the rising time. If it says 1-2 hours to rise until doubled in size, wait until it rises until it is doubled in size, regardless of the time. If that means you wait longer, you wait longer. I cold tell after the second rise before they went into the oven that they were going to come out right, they were already light and fluffy before baking.
