I just browned some stew meat and tossed it into the crock pot. Will add some veggies later on this afternoon. Should be enough for 2-3 meals or more. P
Meat: on clearance was $5.90 1/2 pkg of onion soup mix maybe .50 misc. carrots, onions and red/green pepper mix perhaps $1

My daughter has dance for many hours on Thursday, and I usually take something to her - like a sandwich. But on Thursday I decided to make quiches in a muffin pan. Still finger food. We were all fighting over the last one.

I have a roaster chicken in the crock pot. dinner will be something with that, not sure what just yet. maybe I'll roast the baby potatoes I forgot I had. I bought prosciutto this morning to wrap the asparagus I bought the other day. maybe a few stalks of that?

It will be leftover stew from last night for me.
For tomorrow night I should go take a look in the garage freezer and see what looks appealing. I have however, saved $30 this past week by not going out for dinner after choir practice or today after church. There are some advantages to choir practice being canceled and and ice storm took care of no lunch today.

We were supposed to go out for Thai or Indian tonight, but driving is deadly, with freezing rain. I'll see what I can scare up for dinner from the freezer.

this was a good idea and for the record, the frozen chicken was definitely still good. I'll probably crock pot the other one in another couple weeks. I had been debating making some cornbread stuffing instead of potatoes, but I didn't have any craisins to mix in. garlic roasted baby reds for the win, and broiled asparagus. oh, and a little gravy from the drippings in the crock. yummmm.....

Restaurant leftovers. My friend paid at the restaurant, I got the leftovers. Chicken taco, chocolate mousse cake.

Dinner: a low carb bagel with whipped cream choose and smoked salmon, plus dill pickles. Cooked cabbage, broccoli and great northern white beans rounded out the meal (that's 4 veggies since I'm counting the cucumber pickles).
(And, yes, I did take TWO Beanos!)

So so, having trouble cooking good meals the last few days, just not in the mood. Tonight made meatballs, some sauce with sautéed mushrooms, then fussili sp? macaroni with it, also boiled, seasoned carrots, they were good and cauliflower, old? not so good. Baked a cake and iced it, was ok. I'm having trouble finding good tasting meat, so much just not good.

I finished off the last of the beef stew last night. I know I have another package of something from The Fresh Market in the freezer.....and whatever it is will become dinner for tonight. There are 4 packages of Kraft single serve mac & cheese in the pantry, maybe after tonight it will be 3 packages in the pantry.

More leftovers from Sunday's big dinner tonight. I'm enjoying these nights off from cooking.
Wednesday I will make the cheddar sausages and saute some bell pepper and onion to top them with. If there are enough leftover mashed potatoes those will become potato cakes. Probably serve it with a salad. Dessert will be leftover chocolate lava cake or red velvet sugar cookies.

going to see if the eggplant parmigiano is still okay, if yes, I'll bring some of that to make a sandwich on ciabatta. if not, will prep a chicken and stuffing bowl. I made cornbread stuffing with cranberries yesterday to go with leftover "roasted" crockpot chicken that was cooked Sunday.

Dinner tonight: I mixed the leftover great northern white beans with some chicken and pretended it was chicken chili! I also had cooked greens (chard, kale and spinach), a salad of cucumbers, mushrooms and orange peppers, and some avocado toast. (That's 8 veggies for dinner!)

Ended up having some Scottish eggs AND the ribeye Saturday night. Split the ribeye into 3rds, and DH and I just had the leftovers last night. I also received two types of cakes, some of which are in the freezer. Sunday night: Grazed. Not much energy as I was out until 2:30 AM dancing. Monday night: Leftover buffalo chicken dip, pork rinds and cake. Last night: The ribeye referenced above with veggies. Tonight: Out again with the family. Not sure where we're going. Thursday: Out with Dad for my BD. Fri and Sat: Out with friends. Sunday: IDK yet. Grocery shopping day! Happy Valentine's Day everyone!

No clue tonight. The planned cheddar sausages will be next week. DH decided after weeks of saying it didn't matter about it being Ash Wednesday that it did matter and he wasn't eating meat. I'm not in the mood to scramble up a meat free alternative at the last minute and he doesn't want cheese pizza.

I had a BLT tonight along with some potato salad I picked up while shopping. Add 3 large Queen size stuffed pimento olives and 1/2 glass of cold milk.
Don't have a way to break down the price of each item.

I nuked a Lean Cuisine panini I had in the office freezer, it didn't do the trick but I ate it anyway. I may grab a cup of soup at the dive bar if there's a good one tonight. it's usually clam chowder, but you never know.

Last night I ended up making a salad topped with grilled chicken strips. Maybe $3-4.
Tonight I got take out from Outback. I picked it up on my way to my hotel. Cost $20. We didn't do anything last night and I had a crappy, rushed lunch today that I barely got to inhale.

Dinner: a Poke bowl from Pokiland ~ lettuce, cucumbers, edamame, avocado, shrimp, spicy tuna (raw), regular tuna (raw), fresh lemon, ponzu and garlic miso topped with masago (salmon roe). It's basically a sashimi salad bowl. Since it really didn't have carbs, I didn't take an insulin shot. Now, if I want a snack that has carbs, I'll need to keep the carbs fairly low.

My new favorite "easy" meal. I freeze leftover chicken (from a rotisserie or whatever) and freeze leftover brown rice (I always make a double batch).
If I forget to plan something - straight from the freezer into a fry pan with frozen peas and carrots. Fry it (I use sesame oil for extra flavor.) Soy sauce, scramble an egg and bam, chicken fried rice.

I had a pretty basic chicken Caesar salad at the office earlier, and a slice of cold pizza just now that was from last night. the soups weren't my speed so I grabbed a pizza to go and had a slice last night as well. somehow my tab last night was $18, including that pizza and a handful of drinks over a few hours. idk, I'll take it.
