Last night was chicken pot pie and salad.
Chicken was from rotisserie chicken from Thurs. Crescent roll crust, mixed veggies, not a fan of cream of soups...but used it.
Turned out okay. Not sure of cost. Tonight meatloaf. Not sure what I'll put in it yet. Mashed potatoes, corn, salad. Estimate of cost: $6.50 Monday is leftover night. Tues: Thinking of ordering a pizza. Weds: Tuna casserole. (Everything is in the pantry) Thurs: Turkey and Trimmings. Fri: Not sure.

you can make a gravy pretty easily without using cream of crap. make a quick roux, then whisk in a mix of chicken broth and milk. I think I do about 3:1 broth:milk, just use what you need based on how much filling you need.

LUNCH: stir fry with spinach, pea pods, broccoli and leftover beef sausage.
DINNER: roasted acorn squash, tri-color carrots, Brussels sprouts and lemon-pepper Mahi Mahi.

dinner is ill-advised if you want to be remotely healthy. I'm up waiting on rice to cook and cool for the pups for the am, and still have to package the turkey stock that was still cooling when we left.for the dive bar. when will my.life return to normal....?? #kiddingnotkidding
rather than just go to bed I put together a small bowl of turkey, stuffing and mashed potatoes with a little of the gravy I made later, after deconstructing the carcass (and damn, that's tasty....) with a dinner roll on the side. I want all of the vegetables tomorrow.

Likely have leftover black beans and rice, then some sliced ham. I will fix some mac and cheese for DD to have with her ham. That's one of her favorites, though she likes ham salad better with her mac and cheese.

~Last night: Leftover Mt. Shasta salad (blue cheese, bacon, tomatoes, and a bunch of other goodies). $0.00 ~Tonight: Something easy as it's grocery night. Rotisserie chicken perhaps? $6 ~Tues: Fish and shrimp night, side veggie. $8-ish ~Wed: Meatloaf made with the deer DH harvested. ~Thurs: T-day. I contribute pies just as I do every year. In addition to the usual pumpkin, I'm going to make an apple crisp in the Crock Pot for the first time. I'll use some of the apples a friend gave us from their tree a few months ago. Cost approx $6 for 3 pies. ~Fri: Leftovers. $0.00
~Sat: Smoked sausage (bought on sale) and side veggie. $4.50

holiday eating is never good, lol....
"breakfast" was a couple bites of the uncooked stuffing that was extra from the mushrooms I brought to dinner, and a few more bites of the pumpkin mac and cheese I also brought. I made 2lbs of pasta, saved myself some when I packed it up to travel.
"dinner" was a slice fried turkey, some mashed potatoes, and all of the roasted veggies. my SIL had a big bowl of mixed roasted butternut and Brussels with craisins and pecans....yup. I went back for 2nds and grabbed another scoop of mashed, asparagus and some roasted chicken that came by way of my sister's Brazilian SIL that doesn't like turkey. a couple hours later, I had a slice of the apple crisp topped pumpkin cheesecake I had also brought. it was fucking amazing, pardon my Latin. 😎
I snacked when I got home around 8. a little pumpkin mac and some turkey leftover from last weekend.
next week - vegetables, all of them.

I made a chicken marinade from pickle juice, onions and garlic and then roasted the chicken. Yum. I also roasted some red peppers, yellow peppers, pea pods and served it all on a bed of spinach with a side of garlic fries.

last night, I roasted some cubed butternut and sprouts, tossing with craisins and sliced almonds. tonight, I sauteed chicken tenders leftover from a package that was opened on Sunday. I reheated the leftover roasted veggies in the same pan I used for the chicken, then tossed the lot of it with some shells and parmigiano. this will last the weekend. yum! (pardon the huge mixing bowl)

For lunch I fixed DD and little guy some mini corndogs, fries, apple sections, carrots, and he had half apple juice and water.
I had leftover barbecue and gave the bit left to BJ. Hubs had leftover bean soup. He doesn't generally eat lunch, said he was a
bit lightheaded. I told him likely need to monitor his blood sugar, his weight is up and could be diabetes, he has complained about this several times and has had to eat something. He was like his mom, nothing from dinner to dinner, catching up with him. I made homemade waffles this morning too.
Tonight I'm making spinach lasagna, I think we will all like this.

Last night I made budget bytes unstuffed peppers. I had some sad peppers in the fridge that needed used.
Monday night sauteed pork chops, oven roasted broccoli and mac n cheese.
Tuesday night will be leftovers from Sunday and Monday.
Wednesday I'm not sure about. I'm off all day. I want to make something that gives leftovers for Thursday. We have plans that evening so need something quick.

Last night: DH smoked ribs I bought on sale w/ a coupon last month. Served with veggie made pasta (Birdseye olive oil penne made from cooked lentils) and green beans. Cost $12 for 3 servings. Tonight: Leftover take and bake pizza and bread sticks from Saturday. $21 for 5 servings. Tues: Cod, shrimp, tempura eggplant. $8 Wed: Ground venison chili, side veggie. $? Haven't calculated the cost of DH's hunting license, ammo, etc. vs the amount of pounds he harvested.

I pulled some eggplant "cutlets" from the freezer over the weekend. took two and layered ricotta between the slices. sauced and baked, then enjoyed on a toasted ciabatta roll. on the side, I reheated a half portion of spaghetti squash pie.
