Recipe for the dinner rolls: 1 cup of warm milk (I just heated it up in the microwave for 45 seconds) 1 tblsp instant yeast 1/2 cup of butter (one stick) 1/4 cup of sugar 2 eggs 3/4 tsp of salt 1 tblsp of Italian seasonings 2 cups all purpose flour 2 cups bread flour In a large bowl (I used stand mixer bowl), pour in warm milk and yeast, whisk, and then let sit for 5-10 minutes until it bubbles and gets frothy, so you know yeast is working. Add butter, sugar, eggs, salt, Italian seasonings, and whisk. Butter will get lumpy, don't worry about it, keep whisking. Add flour and mix with a dough hook on low setting (or use your hands if you don't have a mixer). It will incorporate into a nice dough, slightly tacky. Remove dough from bowl, shape into a ball, and place into a greased bowl (I just put in a tblsp or two of cooking oil or olive oil), being sure to coat all sides of the ball. Cover bowl with a towel or plastic wrap, and set it in a warm place to let it rise for 60-90 minutes. It will double in size. After dough has doubled, uncover. Lightly grease (I use cooking oil here, too, although you could use butter) a 9x13 pan and grab a fistful of the dough. Roll the fistful into a ball, and make 12-14 balls, lining them up in the pan. Cover to let rise for 30 minutes. After they rise, they will almost be touching each other. During that 30 minutes, preheat oven to 350 degrees. Bake for 22-25 minutes until medium golden brown. If you want, lightly brush the top with garlic butter. Serve warm. You can also leave out the Italian seasoning, and they're just plain dinner rolls.

What's the difference between bread flour and all-purpose flour? More gluten.

Beergut, have you made these with non dairy milks or water? I haven't tried making these with non-dairy milk, like coconut milk or silk. My guess would be those would give it a much sweeter taste. I made one set of rolls using water instead of milk some time ago, the difference I noticed was in consistency, they weren't as soft as these rolls.
