Schlotzsky's is known for the sourdough bread they bake to make their sandwiches. As someone who loves their sandwiches, but didn't want to make sourdough bread, I think I've found a proper substitute: Italian focaccia bread. Ingredients: 1 lb bread flour 2 tbls yeast 2 tbls sugar in the raw 1 tsp salt 1/2 cup extra virgin olive oil 2 1/2 cups of warm water 1/4 lb sliced ham or turkey 1/4 swiss cheese 1 tomato 1 head of iceberg lettuce Italian seasoning Put flour, yeast, sugar, and salt in mixing bowl. Mix on low with paddle attachment. Slowly pour in 1 tbls olive oil, then 2 cups of warm water. Let dough begin to incorporate. Add in Italian seasoning, 1-3 tablespoons, to taste. Remove paddle, and insert dough hook. Knead dough for 8 minute, until smooth, slightly tacky ball is formed. Remove ball from mixing bowl, cover lightly with olive oil, and put in bowl to rise. Let rise for an hour until it doubles in size. Preheat oven to 400 degrees. Punch down dough, and separate into three balls, shaping into round flat loaves roughly 1 inch thick and 6 inches in diameter. Cover loaves lightly with olive oil, and dimple with your fingers. Put loaves in oven at 400 degrees for 20 minutes. Remove cooked bread from oven, and let cool for 20 minutes. Slice open bread, and place 1/4 lb of sliced ham and swiss on sandwich bottom, and toast open faced in toaster oven until cheese melts. Remove sandwich bottom, and then place sandwich top in toaster oven, and toast until brown. Remove sandwich top from toaster oven, and slather with mustard. Put sliced tomatoes and shredded iceberg lettuce on melted ham and cheese, put sandwich top on, slice, and eat. Other option is 1/4 turkey and swiss, toasted in the same manner. You end up with a delicious sandwich.

I love homemade bread, I'll have to try your focaccia recipe. GF and the 17YO both loved it. The great thing is, the loaves I made are kind of big, about the size of a large Schlotzsky's sandwich, so you can cut them in half, and have lunch for two days. The two loaves I made were enough for four meals spread among three people over two days.

beergut, in your recipe you have is that tablespoons or tbsp ?
