Haven't done it (I like to plan ahead) , my guess would be that it's the less desirable cabins. If the plan is just to sleep in the cabin and spend most waking hours elsewhere, I'd think it could be a bargain.

I would think the biggest would be if you had to fly to get there. Last minute flights could easily get rid of the savings.
But if you're flexible you can get a deal. Earlier this week I could have gotten a balcony for the same price I paid for a studio for a cruise that left in three days.
The only pitfalls is sometimes you miss out on perks but not always. Earlier this year you would have missed out on the ncl perks going last minute but for the cruise mentioned above you got the same perks. You might miss some onboard credit too.
