I made this last week and it was wonderful. It's super frugal too because almost everything in it runs on sale throughout the year. Our stores are always running canned tomatoes, BBQ sauce and pork chops on special. Memphis Blues Pork Chop Dinner 1 cup pinto beans, sorted and washed 1 cup navy beans, sorted and washed 1-1/4 lbs boneless pork chops, cut into 3/4" pieces 3 cups cubed sweet potato (about 1 really big tater or two medium) 1-14 oz. can of diced tomatoes with green chiles 1/2 cup spicy barbeque sauce 5 cups water Salt to your taste
Soak sorted and washed beans overnight in water to cover. Next a.m. them in a 5 qt. or larger slow cooker. Layer the chopped pork chops evenly over the beans. Layer the cubed sweet potato evenly over the pork. Sprinkle liberally with brown sugar, onion powder, garlic powder, black pepper, a little cayenne pepper, pretty much anything your little heart loves, maybe some Cajun seasoning? This is the point at which you decide how spicy you want the dish to be. Mix the canned tomatoes, barbeque sauce and water in a bowl and pour over the layered ingredients. DO NOT STIR! Cook on high for 4-1/2 to 5 hours or on low for 8-9 hours. Great on its own and awesome over rice to stretch it farther. This recipe makes 6 good sized servings over rice.

Crockpot Pork roast with cranberries
Prep: 5-minutes Cook: 9 hrs +/-
2-1/2 # Pork boneless shoulder roast (any type of boneless pork roast should do) 1 cup sweetened dried cranberries ½ cup chicken broth 1 teaspoon shredded orange peel ½ cup cranberry juice 2 tablespoons cornstarch
1) Remove fat from pork. Place pork in a 3-1/2 to 4 quart slow cooker. Mix cranberries, broth, orange peel and ¼ cup cranberry juice in small bowl, pour over pork.
2) Cover and cook on low heat setting 7-9 hours or until pork is tender.
3) Remove pork from slow cooker, place on a serving platter, cover to keep warm.
4) Pour juices from slow cooker into 1-1/2 quart saucepan; id necessary skim off any fat. Mix remaining ¼ cup cranberry juice and the cornstarch; gradually stir into juice in saucepan. Cook over medium heat, stirring frequently, unitl bubbly and thickened. Serve with pork. Garnish with additional orange peel if desired. 6 servings.
I obtained this from a Pillsbury cookbook, and it is awesome.

Easy Pork BBQ Sandwiches
1-2 lb pork roast (or whatever size is best for your needs) 3+/- cups water salt, pepper, garlic powder to taste
Place roast in crock pot with water (don't need to cover, but enough to cover half way up). Sprinkle liberally with salt, pepper & garlic powder (will also sometimes throw in some Toney's or Old Bay). Cook on low for aprox 6 hours or until tender. Remove roast from water and set aside to cool slightly. Remove the fat/bones, shred the meat, add bbq sauce of choice to taste.
Serve on hamburger buns and enjoy!
It's a really easy alternative to sloppy joes or hamburgers and YUMMY! I'll make this when we have a lot of people coming over since it can stretch pretty far and can freeze leftovers for later.

I will second that Cheesy's pork roast recipe is awesome. She gave it to me last year. I've made it several times, and it is delish!! I make sauerkraut to go with it. I drain it (but don't rinse it) and then cook it in apple juice. It doesn't taste like apples, but it takes the edge off the sauerkraut.

Pork Chops and Apples
1 lb pork chops (with bone in this could easily be just two) 2-3 baking apples (I used golden delicious 1 teaspoon cinnamon 1teaspoon sugar 1 teaspoon nutmeg Salt & Pepper Season your pork chops with salt and pepper and place in the bottom of the slow cooker. Peel, core and chop your apples and mix them with your cinnamon,sugar and nutmeg. Place apple mixture on top of pork chops. Put lid onto slow cooker and cook on LOW for 6-8 hours.

Carnitas: 1 lb pork roast 1 can tomatoes 2 cloves chopped garlic spice to taste: seasoning salt, chili powder, onion powder, and anything else you like
Cook in crock pot on low while you are at work. When you take it out the roast should be falling into pieces. Use two forks to separate into strips.
Roll inside of tortillas with sour cream, salsa, and cheese.

Here's one I tried just last week. I found it when I was looking for recipes to use up the peaches I canned in 2009.
Pork Chops w/ Soy Sauce & Mushroom Soup
6 pork chops 1/4 brown sugar 5 oz of soy sauce 10.5 oz can of mushroom soup
Rub the brown sugar into the pork chops and place in a shallow dish. Pour soy sauce over pork chops, cover and refrigerate for 1 hour. Pour the mushroom soup in the bottom of the crock pot and place the pork chops on top. Cook on low for 6-8 hours.
Note: I used only 4 boneless chops and added about 1/2 can of water to the mushroom soup. I also had the chops in the fridge longer than an hour since I prepped them before running an errand. Once it was done I served with potatoes and my daughter fixed rice for the little bit leftover the next day. I'm thinking that next time, I'll put the potatoes in the cook with the chops just to see how it turns out.

season flour some thick chops and brown large dice some potatoes and yellow onions add to CP w/ some whole garlic cloves.
add one can of no sodium (drained) mushrooms 1 jar of no fat mushroom gravy and cook on low for about 6 hrs
